GHETTO NACHOS
Don't let the name fool you, these nachos are actually quite good. My old roommate and I invented this recipe as a result of boredom, hunger and economic reasons (which is where the name comes from). Steps:
- In a microwave safe dish (bowl preferred), place a thin layer of the chips.
- Add a layer of the black beans and some cheese.
- Repeat steps 1 and 2 again.
- Top with extra cheese.
- Pop in microwave on highest power setting for about a minute and a half.
- If your microwave doesn't have a rotating plate in it, rotate bowl by hand every 45 seconds and increase cooking time to 2.5 minutes.
- Top with your favorite salsa and sour cream.

Not like the other Ghetto Nachos posted here, these are made with Ruffles Potato chips! I know it sounds odd, but they really are good. You have to use Ruffles though, not generics or the Lay's equivalent. I got this recipe from a friend of mine.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking dish.
- Place the chicken on a microwave-safe plate, cover with a paper towel, and place in a microwave oven. Cook on high power until the chicken is no longer pink and cooked through, about 10 minutes. Cool, and use a knife to shred the chicken. Set aside.
- Place the refried beans in a saucepan over medium heat. Stir until thoroughly heated.
- Layer half the chips, 1/2 cup cheese, and green onions on the bottom of prepared baking dish. Spoon the refried beans over the chip mixture. Sprinkle with another 1/2 cup cheese, and spread with the sour cream. Arrange the shredded chicken over the sour cream layer. Top with the remaining chips and 1/2 cup cheese.
- Bake in preheated oven until the cheese melts throughout, 15 to 18 minutes.

- In 12-inch skillet, heat oil over high heat. Add bell pepper and zucchini; cook and stir about 2 minutes or until vegetables are crisp-tender. Stir in 1/2 cup of the salsa and the beans; cook until hot. Remove mixture from skillet.
- Wipe skillet clean. Arrange tortilla chips in single layer in skillet. Spoon vegetable mixture onto chips. Sprinkle with cheese.
- Cover and cook over medium-high heat about 5 minutes or until cheese is melted. Sprinkle with olives. Serve with remaining 1/2 cup salsa.
