Ghee's Old Fashioned Apple Pie image

With super scrumptious crunchy topping, this wonderful apple pie is a dessert standout. The gala apples are a terrific choice.

Provided by Patti Smith

Categories     Pies

Time 35m

Number Of Ingredients 11

1 deep dish pie crust, baked (to save time, use frozen pie crust)
1/2 c walnuts, chopped
1/2 c plain flour
1/2 c light brown sugar, packed
4 Tbsp melted margarine
1 egg, white only
1/4 c sugar
2 Tbsp corn starch
1 tsp cinnamon
3 lb gala apples
1 Tbsp lemon juice

Steps:

  • 1. Prick bottom and sides of crust with a fork. Bake at 375 degrees for 12 to 15 minutes or until lightly golden. Immediately brush the bottom and sides of the hot crust with a light coating of egg white. Reset oven to 425 degrees.
  • 2. While crust is baking, mix pecans, flour, and brown sugar in a bowl. Work in butter with fingertips until the mixture resembles coarse crumbs. Set aside.
  • 3. Meanwhile, in a large bowl, combine sugar, corn starch, and cinnamon. Toss in apples and lemon juice. Cover with waxed paper and microwave on high 12 minutes, stirring halfway through. Spoon filling into crust. Sprinkle pecan topping over the filling. Bake pie 10 to 12 minutes or until topping is golden. Cool on wire rack.

OLD-FASHIONED APPLE PIE

Old-Fashioned Apple Pie image

This old-fashoned apple pie recipe is just like Grandma used to make. Our tried-and-true Better Homes and Gardens apple pie is filled with pleasantly tart apples and and warm spices for the perfect bite. Give your apple pie some vintage (and delicious) flair by adding shredded cheddar cheese. Don't forget the ice cream!

Provided by BHG Test Kitchen

Time 3h15m

Number Of Ingredients 15

6 cup thinly sliced peeled tart apples
1 tablespoon lemon juice
0.5 cup granulated sugar
0.25 cup all-purpose flour
0.25 cup packed brown sugar
0.5 teaspoon ground cinnamon
0.25 teaspoon ground nutmeg
ground cloves
1 tablespoon butter or margarine
shredded cheddar cheese (optional)
milk (optional)
2.25 cup all-purpose flour
0.75 teaspoon salt
0.667 cup shortening
6 tablespoon cold water

Steps:

  • In a large mixing bowl toss apples with lemon juice. Combine granulated sugar, flour, brown sugar, cinnamon, nutmeg, and cloves. Add to apples and toss until apples are coated. Set apple mixture aside.
  • Prepare Pastry for Double-Crust Pie. Divide dough in half. Form each half into a ball. On a lightly floured surface, roll out 1 ball of dough into a 12-inch circle. Ease pastry into a 9-inch pie plate.
  • Transfer apple mixture to pastry-lined pie plate. Dot with butter or margarine. Trim pastry even with pie plate. For top crust, roll out remaining dough. Cut slits in top crust. Place top crust on the filling. Seal and flute the edge. Brush with milk, if desired.
  • To prevent overbrowning, cover the edge of the pie with foil. Bake in a 375 degree F oven for 25 minutes. Remove foil; bake for 20 to 25 minutes more or until the top is golden brown and apples are tender. Serve warm with cheddar cheese, if desired. Makes 6 to 8 servings. Pastry for Double-Crust Pie
  • Stir together all-purpose flour and salt. Using a pastry blender, cut in shortening until pieces are pea size. Sprinkle 1 tablespoon cold water over part of the mixture; gently toss with a fork. Push moistened dough to the side of the bowl. Repeat, using 1 tablespoon cold water at a time, until all the dough is moistened.

OLD-FASHIONED APPLE PIE

Old-Fashioned Apple Pie image

The words "apple pie" conjure warmth, aroma, taste, and togetherness. This apple pie recipe is filled with Granny Smith apples and is tucked into a buttery pie crust. To make this apple pie recipe even sweeter, serve it with a scoop of vanilla ice cream.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Number Of Ingredients 10

2 tablespoons all-purpose flour, plus more for dusting
Pate Brisee (Pie Dough)
12 Granny Smith apples, peeled, cored, and sliced
3/4 cup sugar, plus additional for pie top
Zest and juice of 1 lemon
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch ground cloves
2 tablespoons unsalted butter
1 large egg, beaten

  • Heat oven to 375 degrees. On a lightly floured surface, roll out pate brisee into two 1/8-inch-thick circles to a diameter slightly larger than that of an 11-inch plate. Press one pastry circle into the pie plate. Place the other circle on waxed paper, and cover with plastic wrap. Chill all pastry until firm, about 30 minutes.
  • In a large bowl, combine apples, sugar, lemon zest and juice, spices, and flour. Toss well. Spoon apples into pie pan. Dot with butter, and cover with remaining pastry circle. Cut several steam vents across top. Seal by crimping edges as desired. Brush with beaten egg, and sprinkle with additional sugar.
  • Bake until crust is brown and juices are bubbling, about 1 hour. Let cool on wire rack before serving.

Provided by Laureen King

Categories     Dessert

Time 2h

Number Of Ingredients 13

For Filling
8-10 apples peeled and sliced
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp cinnamon
2 tbsp Minute tapioca
For Pie Crust
2 1/2 cups all purpose flour
1 tsp salt
1 1/2 tsp sugar
1/2 cup butter (chilled)
1/2 cup lard (chilled)
5-7 tbsp ice cold water

Steps:

  • For the Pie Crust
  • Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
  • Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
  • Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.

  • Divide in half, cover with plastic wrap and chill for 30 minutes.
  • While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
  • Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
  • Place one in bottom of pie plate.
  • Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
  • Sprinkle top with white sugar and cinnamon.
  • Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

  • Adjust oven rack to lowest position and heat rimmed baking sheet and oven to 500°F. Remove one piece of dough from refrigerator (if refrigerated longer than 1 hour, let stand at room temperature until malleable).
  • Roll dough on lightly floured work surface or between two large sheets of plastic wrap to 12-inch disk. Transfer dough to pie plate by rolling dough around rolling pin and unrolling over 9 1/2-inch pie plate or by folding dough in quarters, then placing dough point in center of pie plate and unfolding. Working around circumference of pie plate, ease dough into pan corners by gently lifting dough edges with one hand while pressing around pan bottom with other hand. Leave dough that overhangs lip of plate in place; refrigerate dough-lined pie plate.
  • Peel, core and cut apples in half, and in half again width-wise; cut quarters into 1/4-inch slices and toss with lemon juice. In a medium bowl, mix 3/4 cup sugar, flour, salt and spices. Toss dry ingredients with apples. Turn fruit mixture, including juices, into chilled pie shell and mound slightly in center.
  • Roll out second piece of dough to 12-inch disk and place over filling. Trim top and bottom edges to 1/2-inch beyond pan lip. Tuck this rim of dough underneath itself so that folded edge is flush with pan lip. Flute edging or press with fork tines to seal. Cut four slits on dough top. If pie dough is very soft, place in freezer for 10 minutes. Brush egg white onto top of crust and sprinkle evenly with remaining 1 tablespoon sugar.
