GERMAN-STYLE KIELBASA AND NOODLES

Steps:
- Place coleslaw mix in a colander over a plate; sprinkle with salt and toss. Let stand for 30 minutes. Rinse and drain well., Cook noodles according to package directions. Meanwhile, in a large skillet, saute kielbasa and onion in butter until onion is tender. Add the coleslaw mix, sugar and pepper; cover and cook over medium-low heat for 10-15 minutes or until heated through. Stir in poppy seeds if desired. Drain noodles; serve with cabbage mixture.

- Heat oil on stove and cook onions and garlic on stove until soft.

- STOVETOP ONLY METHOD1. Slice the kielbasa diagonally to create more surface area to sear. Heat a heavy bottomed skillet such as cast iron over medium-high heat. Add the cooking oil and kielbasa and sear until it begins to brown. Remove and set aside. 2. In the same skillet saute the sliced onion and apple for about 3-5 minutes. Deglaze with a bit of the malty beer or hard cider and let most of the liquid simmer away. Add the sauerkraut, brown sugar, bay leaf, cloves, peppercorns, caraway and salt and mix everything well together. Add the rest of the beer or cider and let simmer for 5 minutes. Remove bay leaf and cloves before they leave a hint of bitterness. 3. Add the browned kielbasa back to the skillet, add the stock and mix well. Let simmer for 5-10 minutes until most of the liquid has evaporated. Serve. STOVETOP AND OVEN METHOD1. Preheat the oven to 400 F. (Make sure the skillet you are using is oven safe). 2. Perform steps from 1 and 2 above. Add the kielbasa and stock to the sauerkraut, mix everything and transfer the skillet to the oven. Bake for 5-10 minutes until most of the liquid has evaporated. Serve.

KIELBASA AND POTATOES RECIPE
This easy kielbasa and potatoes recipe is a classic comfort food your family is sure to love.

- Preheat skillet on med-high heat.
- Cut the kielbasa sausage into slices, and drop in the heated pan. Stir while frying.
- As kielbasa is browning, chop the onion and potatoes.
- Once the sausage has browned for approximately 6 minutes, scoop it out and put aside. Much of the fat will have rendered. Make sure to leave grease in the pan.
- Dump the chopped potatoes into the hot skillet with the kielbasa grease. Add the paprika, salt and oregano. Stir to coat in the fat and reduce the burner to medium to medium-low. Cover.
- Brown the potatoes for 13 minutes, stirring regularly.
- Add the onions and garlic. Cook for about 12 minutes. Covered, but stirring regularly.
- Once the potatoes have softened and onions are cooked add the kielbasa back into the pan mix in and all cook for 4 minutes.
