GRANDMOTHER often prepared her fresh green beans this way, and we much preferred them to plain buttered beans. This recipe goes back to before the 1920s and was a favorite dish of our family when I was growing up. -Lois Gelzer, Standish, Maine

1-1/2 pounds fresh green beans, cut into 1-inch pieces
6 bacon strips
1 large onion, chopped
Salt and pepper to taste

Steps:

  • Place beans in a saucepan and cover with water; bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Meanwhile, in a skillet, cook bacon until crisp. Remove bacon and set aside. Saute onion in drippings until tender; remove with a slotted spoon. Drain beans; return to pan. Add onion, 1 tablespoon drippings, salt and pepper; heat through. Crumble the bacon; add to the beans and toss. Serve immediately.

Number Of Ingredients 9

1 pound fresh green beans, cut into 2-inch pieces
3 bacon strips, diced
1 medium onion, quartered and sliced
2 teaspoons cornstarch
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup water
1 tablespoon brown sugar
1 tablespoon cider vinegar

Steps:

  • Place beans in a saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 1 tablespoon drippings. In the same skillet, saute onion in drippings until tender., In a small bowl, combine the cornstarch, salt, mustard and water until smooth. Stir into onion. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in brown sugar and vinegar. Add the beans; heat thought. Sprinkle with bacon.

This is another simple but tasty dish that I found in one of my grandmother's old recipe files. My family loves it, and it makes a nice alternative for the traditional holiday green bean casserole. It's good all year long, but especially when the weather turns cool.

4 slices bacon
1/2 cup chopped onions or 2 tablespoons dried onion flakes
2 tablespoons flour
4 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup vinegar (cider, if possible)
2 (14 1/2 ounce) cans green beans (reserve 1/2 cups liquid from canned beans or water if using fresh) or 2 1/2 lbs fresh green beans, washed and cut (reserve 1/2 cups liquid from canned beans or water if using fresh)
1/4 cup bacon bits (Bacos)

Steps:

  • Fry the bacon in a large cast-iron skillet until crisp, then drain on paper towels, leaving the fat in the pan.
  • Add the onion and cook until light golden and tender, then add the flour and stir, cooking for about 1 minute.
  • Add the sugar, salt, pepper, bean liquid or water, and vinegar, stir, and bring to a rolling boil; Allow to boil for about 3 minutes to thicken the sauce. Add the bacon bits at this time.
  • Add the green beans and cook until heated through, about 7--8 minutes.
  • Transfer the beans and sauce to a serving bowl and top with crumbled bacon.

Sweet and Sour German Green Beans with Bacon and Onions image

German green beans feature crisp-tender green beans warmed in a sweet and sour sauce with bacon, onions, cider vinegar and brown sugar. Healthy & delicious.

1 pound green beans, washed and trimmed
4 slices bacon, diced
1/4 cup onion, finely chopped
2 tsbp apple cider vinegar
2 tbsp water
1 tbsp Low carb brown sugar ((or brown sugar for not low carb))
1/4 tsp salt
1 tsp whole grain mustard

Steps:

  • Cook the green beans until tender. I steam mine in the microwave, but use your favorite method. Drain well once cooked.
  • While the beans cook, put the bacon in a medium-large pan over medium heat. Let the bacon cook for 4 minutes until almost crispy. Add the onions and saute until they begin to soften.
  • Add the cider vinegar, water and Sukrin Gold (or brown sugar if not low carb) to the bacon and onions and stir. Reduce slightly. Measure the whole grain mustard into the pan.
  • Lastly, add the green beans and stir to coat and heat through. Season to taste with salt and pepper. I like lots of pepper because it brings out a nice savory flavor. Serve hot.

These Bavarian green beans are such a delicious vegetable side dish, even your pickiest eater will love them!

20 oz frozen cut green beans (see NOTES)
2 tsp salt
1/2 cup finely chopped onion
1 tsp fresh minced thyme (or fresh minced summer savory - see NOTES)
2 tbs butter
2 tbs flour
1 chicken bullion cube (like Herb-Ox)
1 cup reserved cooking water from the beans

Steps:

  • Place frozen beans in a large saucepan. Cover the beans with water and add the salt.
  • Bring beans to a boil then cook for 4-8 minutes, depending on desired doneness.
  • Drain beans and reserve the water. Wipe saucepan dry with a paper towel. Measure out 1 cup of the reserved water and add the stock cube. Stir so the cube dissolves and set aside.
  • Melt butter in the same saucepan then add the onion and the thyme-or-summer savory. Saute until the onions are translucent.
  • Sprinkle the flour on top of the onion mixture and stir till smooth. Let it bubble and cook for 1 minute. Slowly add the cup of reserved water mixture, stirring so there are no lumps. Stir constantly until the liquid thickens; cook for 1 minute.
  • Add the beans back to the saucepan and simmer for about 2-3 minutes to heat the beans.

  • Cook the green beans as you would normally - I'd suggest either steam them for a few minutes, boil or cook in the microwave with a little water. Whichever way, it will only take a couple minutes and you want them tender but only just so they don't become mushy and keep their nice green color. Drain and set aside.
  • While the beans are cooking, melt the butter in a small-medium skillet. Finely dice the onion and add it to the pan. Cook for a minute while you finely slice and dice the speck or bacon. Add the speck/bacon to the pan and cook for a couple minutes until it is starting to crisp. Add the cooked beans, cook a minute, stirring regularly, then serve.
