GERMAN DUMPLINGS (SPAETZLE OR KNIFFLES) FOR SOUP OR SAUTE

German Dumplings (Spaetzle or Kniffles) for Soup or Saute image

When our church decided to host a "German Reformation Night" dinner, I went hunting for authentic German recipes. Here is one that fits the bill. There are two ways to make the dumplings (explained below). Serving ideas suggested below too. Gushundheit--!

Provided by Debber

Categories     German

Time 20m

Yield 3 cups???, 5-7 serving(s)

Number Of Ingredients 4

2 eggs
1 1/2 teaspoons water
1/8 teaspoon salt
3/4 cup flour

Steps:

  • Mix these together until sticky.
  • Drop into bubbling soup or stew, broth or water. (see below for ideas).
  • Dumplings will rise to the surface as they cook; remove from liquid with a slotted spoon (if sautéing in another pan); set aside in a bowl (keep warm).
  • MAKE THE DUMPLINGS #1: This method results in very small, stringy-ish dumplings and is great for soups or stews. Spoon several tablespoons of batter into a colander, then with the back of the spoon--press the batter through the holes into the bubbling liquid.
  • METHOD #2: This method forms larger dumpling pieces (dime & quarter size) and is great for soups or stews, too -- but especially good if you want to saute the dumplings afterwards (more on that in a minute). Using a teaspoon and butter knife, scoop up a spoonful of batter, then use the knife to cut off little dibs and dabs, using the knife to also push the dibs into the hot liquid. If the knife or spoon gets messy, just dip into the hot liquid.
  • SERVING IDEAS: We love these in chicken-dumpling soup (use your regular chicken soup recipe -- skip the egg noodles and make these dumplings instead). OR scoop out the larger dumplings (Method #2), and saute in butter or olive oil along with kielbasa or other sausage and LOTS of onion ring slices. OR saute some fresh veggies, then add the dumplings -- heaven!
  • VARIATIONS: Add several pinches of your favorite herbs along with the flour to enhance the soup, stew or saute dish.
  • Chef's Note: Altho' this is kind of putzy, it is well worth the effort and SO different from regular pasta-noodles.

ZWETSCHGENDATSCHI (GERMAN PLUM SHEET CAKE)

Zwetschgendatschi (German Plum Sheet Cake) image

Zwetschgendatschi is a classic German plum sheet cake from Bavaria - a short crust pastry, topped with Italian plums. It is traditionally served with vanilla sugar-sweetened whipped cream.

Provided by barbara

Categories     World Cuisine Recipes     European     German

Time 2h

Yield 16

Number Of Ingredients 12

4 ¾ cups all-purpose flour
4 teaspoons baking powder
1 cup white sugar
2 teaspoons vanilla sugar
2 pinches salt
1 ⅓ cups unsalted butter, room temperature and cut into chunks
2 eggs
2 ¼ pounds Italian prune plums, halved and pitted
2 tablespoons white sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter, room temperature and cut into chunks
1 tablespoon sliced almonds

Steps:

  • Combine flour and baking powder in a large bowl. Mix in 1 cup sugar, vanilla sugar, and salt. Add 1 1/3 cups butter and eggs. Knead everything into a smooth dough. Shape dough into a ball, press flat, cover, and chill in the refrigerator 1 hour to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet with butter.
  • Cut halved plums in half again, without cutting all the way through, so they fan out.
  • Roll pastry dough out on a lightly floured work surface. Line the bottom and sides of the prepared baking sheet with dough. Mix 2 tablespoons sugar and cinnamon together in a bowl.
  • Arrange plums side by side on the pastry dough; very small plums should overlap. Dot plums with 2 tablespoons butter and sprinkle with cinnamon sugar and almonds.
  • Bake in the preheated oven until pastry crust is lightly browned, 30 to 40 minutes. Remove from oven. Allow plum cake to cool, then cut into squares. Serve lukewarm or at room temperature.

  • Simple Baked Fish With Apple. Catholics commonly eat fish on Ash Wednesday and throughout the Lent season, but this basic fish with apples tastes great all year round.
  • Zurich Ragout (Zurcher Geschnetzelter) While the may sound like a mouthful, the traditional veal stew Zurich ragout sure tastes wonderful. Consisting of veal, pork loin, or chicken, and mushrooms smothered in a creamy white sauce with parsley and lemon zest, it makes a lovely supper alongside a German white wine.
  • German-Style Mustard Pork Chops. These German-style mustard pork chops highlight one of Germany's favorite condiments. Dredged in seasoned flour then fried before covered in a wine and mustard sauce, this hearty one-pan meal packs a punch without taking a lot of time or complicated work.
  • Milchreis (German Rice Pudding) Many countries in the world have their own take on rice pudding and Germany is no exception. For a satisfying and hearty dessert, combine short-grain rice, vanilla, milk, and sugar into a creamy, satisfying sweet.
  • Alsatian Apple Cake. The Alsatian apple cake has a shortbread-like crust filled with apple slices and vanilla cream for a rich and creamy fall treat. It also doesn't require any fancy ingredients, so you may even have the goods in your kitchen already.
  • German Christmas Cardamom Cookies. With its spicy, slightly medicinal taste, cardamom first appeared in folk remedies in the Middle Ages. Today, bakers use it to flavor desserts like these distinctly floral rolled German cookies that you may enjoy as part of a Christmas platter or anytime you want a unique pick-me-up.
