Grandma's spinach dish is flavored with her Austrian heritage. It's tasty and always looks so pretty on the plate. We children never had to be told to eat our spinach at Grandma's house! -Joan Hutter, Warwick, Rhode Island

2 packages (10 ounces each) frozen chopped spinach
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons butter
6 bacon strips, cooked and crumbled
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Pepper to taste

Steps:

  • Cook spinach according to package directions. Drain well and set aside. Saute onion and garlic in butter in a large skillet until tender. Stir in the spinach, bacon, nutmeg, salt and pepper; heat through.

SPICY SWISS CHARD OR SPINACH



Spicy Swiss Chard or Spinach image

From Food Network's Big Daddy's House with Aaron McCarty(winner of The Next Food Network Star), this is yummy and pairs well with Lemon Pepper Orzo and Blackened Salmon with Blue Cheese Sauce.

2 tablespoons extra virgin olive oil
1 pinch red pepper flakes
2 garlic cloves, minced
1 bunch swiss chard, stems removed and leaves chopped into thin strips (or 2 bunches spinach)
splash white wine (or wine vinegar)
1 tablespoon sugar
salt

Steps:

  • In a large skillet over high heat, add oil, red pepper flakes and garlic and toast the garlic until golden brown(watch carefully, don't let it burn!).
  • Add the chard or spinach and toss quickly.
  • Stir in a splash of white wine.
  • Cook and toss until liquid evaporates and greens are wilted.
  • Add the sugar, season with salt and serve. Enjoy!

Make chard taste incredible with this Swiss chard recipe! Amp the flavors in this easy side dish by adding pine nuts and Parmesan.

1 bunch (12 ounces) Swiss chard or rainbow chard
2 garlic cloves
2 tablespoons olive oil
1/4 teaspoon kosher salt
1 pinch red pepper flakes
Fresh ground black pepper
2 tablespoons shredded Parmesan cheese (optional)
2 tablespoons toasted pine nuts (optional)

Steps:

  • Wash and dry the chard leaves. Remove the stems and roughly chop the chard (follow the instructions in How to Cut Kale). If you'd like, thinly slice the tender part of the stems and add that to the mix (discard the large tough parts of the stems; or you can discard the stems entirely).
  • Smash and peel the garlic cloves.
  • Add the olive oil to a large skillet and heat it over medium-high heat. Add the smashed garlic and chard and cook for 4 minutes, stirring frequently until wilted and bright green.
  • Remove from the heat and add the kosher salt, red pepper flakes. and several grinds of fresh ground pepper.
  • Discard the garlic cloves and serve immediately. If desired, serve with shredded Parmesan and toasted pine nuts.

  • In a bowl, combine the soy sauce, fish sauce and sesame oil. In a large skillet, melt the butter and remove from the heat. Add 3 tablespoons of the soy mixture and the greens to the skillet and toss to coat. Transfer the greens to a large plate to cool slightly.
  • Form the greens into 8 mounds on a platter. Spoon the remaining soy mixture over the mounds, garnish with the toasted sesame seeds and bonito flakes and serve.
