- Cook spinach according to package directions. Drain well and set aside. Saute onion and garlic in butter in a large skillet until tender. Stir in the spinach, bacon, nutmeg, salt and pepper; heat through.

SPICY SWISS CHARD OR SPINACH
From Food Network's Big Daddy's House with Aaron McCarty(winner of The Next Food Network Star), this is yummy and pairs well with Lemon Pepper Orzo and Blackened Salmon with Blue Cheese Sauce.

Steps:
- In a large skillet over high heat, add oil, red pepper flakes and garlic and toast the garlic until golden brown(watch carefully, don't let it burn!).
- Add the chard or spinach and toss quickly.
- Stir in a splash of white wine.
- Cook and toss until liquid evaporates and greens are wilted.
- Add the sugar, season with salt and serve. Enjoy!

One of those handwritten things, which has been in my folder forever. Since we have a bumper crop of swiss chard, it is appearing regularly on the table. Not German, but I frequently add Feta Cheese when served.

SAUTEED SWISS CHARD

Steps:
- Wash and dry the chard leaves. Remove the stems and roughly chop the chard (follow the instructions in How to Cut Kale). If you'd like, thinly slice the tender part of the stems and add that to the mix (discard the large tough parts of the stems; or you can discard the stems entirely).
- Smash and peel the garlic cloves.
- Add the olive oil to a large skillet and heat it over medium-high heat. Add the smashed garlic and chard and cook for 4 minutes, stirring frequently until wilted and bright green.
- Remove from the heat and add the kosher salt, red pepper flakes. and several grinds of fresh ground pepper.
- Discard the garlic cloves and serve immediately. If desired, serve with shredded Parmesan and toasted pine nuts.

- In a large saucepan of salted boiling water, cook the Swiss chard until bright green and tender, 1 minute. With a slotted spoon, transfer the chard to a colander to drain. Repeat with the spinach. When the greens are cool enough to handle, gently squeeze out the excess water, then coarsely chop them.
- In a bowl, combine the soy sauce, fish sauce and sesame oil. In a large skillet, melt the butter and remove from the heat. Add 3 tablespoons of the soy mixture and the greens to the skillet and toss to coat. Transfer the greens to a large plate to cool slightly.
- Form the greens into 8 mounds on a platter. Spoon the remaining soy mixture over the mounds, garnish with the toasted sesame seeds and bonito flakes and serve.

- Preheat the oven to 400 degrees. Carefully break the eggs into small bowls so that the yolks stay intact. Set aside.
- In a large skillet, heat the olive oil over medium-high heat until it begins to shimmer. Add the garlic and cook for a minute or two, until just beginning to brown. Add the spinach and the Swiss chard to the skillet, and cook, stirring occasionally until the greens begin to wilt and cook down but are still bright green, about 2-3 minutes.
- Remove the greens from the heat and divide into 2 oven-safe ramekins or small, shallow baking dishes. Top each with two eggs. Drizzle each dish with the cream, then top with a sprinkling of Parmesan and a pinch of salt and pepper.
- Bake for 10-15 minutes until the cream begins to bubble and the eggs are cooked to your desired doneness. Serve immediately.

- Set a large saucepan over moderately high heat. Add large handfuls of the spinach, tossing constantly with tongs until the leaves are partially wilted before adding the next handful. Drain the spinach and let cool, then squeeze out as much liquid as possible. Coarsely chop the spinach and transfer to a large bowl. Return the saucepan to moderately high heat and repeat with the chard leaves, squeezing them dry.

Spread 1 sheet of phyllo dough on a work surface and brush with the butter mixture. Cover with a second sheet of phyllo and brush again. Continue until you have a stack of 8 buttered phyllo sheets. Repeat to form a second stack of 8 buttered phyllo sheets. Line the baking dish with a phyllo stack. Spread the spinach filling evenly on top. Cover with the second phyllo stack; trim the top layer of phyllo flush with that of the bottom layer. Roll the phyllo edges inward to form a border. Using a sharp knife, lightly score the top stack of phyllo to divide the pie into 8 even servings. Brush any remaining butter over the top.
- Bake the pie in the bottom of the oven for 1 1/2 hours, or until the phyllo is golden and crisp. Let stand for at least 10 minutes before serving.
