Grampa's German-Style Pot Roast image

Grampa was of German heritage and loved the Old-World recipes given to him by his mother. I made a few changes so I could prepare this dish in the slow cooker and give it a slightly updated flavor. -Nancy Heishman, Las Vegas, Nevada

4 thick-sliced bacon strips
1 pound baby Yukon Gold potatoes
4 medium carrots, sliced
1 can (14 ounces) sauerkraut, rinsed and well drained
3/4 cup chopped dill pickles
1 teaspoon smoked paprika
1 teaspoon ground allspice
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 boneless beef chuck roast (3 pounds)
2 packages (14.4 ounces each) frozen pearl onions, thawed
4 garlic cloves, minced
1/2 cup stout beer or beef broth
1/3 cup Dusseldorf mustard
1/2 cup sour cream
1/2 cup minced fresh parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Meanwhile, place potatoes, carrots, sauerkraut and pickles in a 7-qt. slow cooker. Mix paprika, allspice, salt and pepper; rub over roast. Brown roast in drippings over medium heat. Transfer to slow cooker. Add onions and garlic to drippings; cook and stir 1 minute. Stir in beer and mustard; pour over meat. Crumble bacon; add to slow cooker., Cook, covered, on low until meat and vegetables are tender, 6-8 hours. Remove roast; let stand 10 minutes before slicing. Strain cooking juices. Reserve vegetables and juices; skim fat. Return reserved vegetables and cooking juices to slow cooker. Stir in sour cream; heat through. Serve with roast; sprinkle with parsley.

1,2 kg Beef Roast (i.e. from shoulder or roundroast)
1 Carrot
¼ Root Celery
2 cloves Garlic
½ Leek
1 Onion (large)
2 Cloves
2 Bay Leafs
5 Juniper Berries
10 Pepper Corns
2 Allspice Berries
some Salt
some Pepper
400 ml Red Wine
200 ml Red Wine Vinegar
2 tbsp. Oil for frying
1 Onion (large)
2 tbsp. Honey
200 ml Beef Stock / Beef Broth
4 tbsp. Raisins
100 g Ginger Snaps (optional)

Steps:

  • Chop the vegetables.
  • Add roast, vegetables, and spices into a fitting pot.
  • Spice with salt and pepper if needed.
  • Cover with wine and red wine vinegar.
  • Close the lid, place the pot into the fridge and marinade for 5 to 7 days.
  • After marinating the roast, take the meat out of the pot and pad it dry from all sides.
  • Strain the marinade through a sieve, keeping the liquid and discarding the vegetables.
  • In a large pot, heat the oil.
  • Add the meat and roast it from all sides.
  • Add the chopped onions and sauté for a bit.
  • Now pour the marinade and beef stock over the roast and bring to a boil.
  • Add the honey.
  • Let the roast simmer for 2hours, flip the meat every 30 minutes.
  • After 2 hours, remove the roast from the pot, cover, and let rest while making the gravy.
  • Put the Ginger Snaps into the gravy and let soak for a few minutes. Then blend with an immersion blender until smooth.
  • Add honey and spices if needed, optional smoothen with a little cream if the gravy has too much acid.
  • Add the raisins.
  • Cut the roast into slices, serve with the gravy and potato dumplings or spätzle or potatoes and red cabbage or carrots.

1 teaspoon pepper
1 large onion, thinly sliced
1 bottle (12 ounces) beer or nonalcoholic beer
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup cold water

Steps:

  • Cut roast in half; sprinkle with pepper. Place onion and roast in a 5-qt. slow cooker. In a small bowl, combine the beer, ketchup and brown sugar; pour over top. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. , Combine flour and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast.

2 tablespoons olive oil
1 (4 -5 lb) beef eye round
2 tablespoons tomato paste
2 garlic cloves, finely chopped
4 cups beef stock or 4 cups broth
2 cups red wine
2 bay leaves
7 tablespoons lightly-salted butter, divided
6 medium carrots, diced
6 medium celery ribs, diced
2 medium onions, diced
6 tablespoons all-purpose flour
salt and pepper

Steps:

  • In a Dutch oven or a large, heavy saucepot, heat the oil over medium high heat. Add the meat and brown on all sides. Add the tomato paste and garlic and cook until the garlic is lightly browned. Add the beef stock, wine, and bay leaves. Over high heat, bring the mixture to a boil. Reduce the heat to low, cover the pan tightly, and simmer (DO NOT BOIL) for about 2 hours.
  • While the meat is cooking, in a large skillet, heat 1 Tablespoon of the butter over medium high heat. Add the carrots, celery, and onions and cook for 5 to 10 minutes, or until softened slightly. Add the vegetable mixture to the Dutch oven after the meat has cooked for 2 hours. Cover and continue cooking 30 to 60 minutes longer, or until the meat is tender.
  • Transfer the meat and vegetables to a serving platter. Pour the cooking liquid into a large bowl and reserve. Discard the bay leaves.
  • In the Dutch oven over medium heat, melt the remaining 6 Tablespoons of butter. Whisk or stir in the flour until smooth and bubbly. Continue cooking, stirring constantly, for 2 to 3 minutes. Gradually whisk in the reserved beef stock, blending completely after each addition. Cook, stirring constantly, until the mixture boils and thickens. Season the sauce with salt and pepper.
  • Slice the roast and serve with the vegetables and the sauce. Makes 8 to 10 servings.

1 1/4 ounces dry onion soup mix (or use an onion mushroom or mushroom variety to suit your taste)
3/4 cup water
1 1/2 cups beer
1 teaspoon brown sugar
1/2 teaspoon caraway seed

  • In dutch overm brown roast over medium heat.
  • Blend soup mix with water and beer.

Red wine vinegar, apple cider and sweet pickling spices bring robust flavor to beef roast. Slow crock pot cooking achieves rich traditional flavor in a few hours without having to spend days marinating the roast prior to cooking.

4 pound chuck roast or eye of round roast
salt and pepper, to taste
2 tablespoons vegetable oil
1 large onion, medium dice
4 cloves garlic, chopped
2 bay leaves
1 cup unsalted beef stock
1 cup apple cider
3/4 cup red wine vinegar
1 (6 ounces) can tomato paste
1 tablespoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
1/4 cup water
1/4 cup corn starch

Steps:

  • Sprinkle the roast liberally with salt and pepper; rub into roast. Heat a braiser or deep frying pan over medium high heat. Add oil and swirl pan to coat bottom with oil. Brown the roast on both sides. Note: When browning, the roast will naturally release from the bottom of the pan when it has browned enough. If the roast sticks to the pan when attempting to turn it over, then it is not yet ready to be turned.
  • While the roast is browning, place garlic and onions in bottom of crock pot. Place browned roast on top of onions and garlic. Place bay leaves around roast.
  • Deglaze braiser or frying pan with 1/2 cup beef stock. Add remaining beef stock, apple cider, red wine vinegar, tomato paste, ginger, cinnamon, cloves and allspice. Stir or whisk until ingredients are well mixed. Pour over roast in crock.
  • Cover crock pot and cook on high for 4-5 hours, until roast is tender.
  • Remove roast to platter and set aside. Mix together water and corn starch until smooth. Add just enough slurry to liquid in crock pot to thicken to desired consistency. It may not take all of the cornstarch slurry. Allow to cook in crock on high until of desired consistency.

  • COVER and cook on Low 8 to 10 hours or High 4 to 6 hours or until meat is very tender. Remove meat from slow cooker and keep warm.
  • COMBINE flour with 1/4 cup water and stir into slow cooker. Cover and cook on High 15 minutes or until thickened. Slice roast and serve with gravy.

  • Put all the marinade ingredients into a large non-reactive pot such as cast iron (make sure it's big enough to hold the marinade and meat.) Bring to a boil, then let cool to room temperature.
  • Submerge the chuck roast into the marinade, and cover tightly. Refrigerate for up to 3 days. If your meat is not fully covered in liquid, plan to give it a turn every day so it marinates evenly. You can also do this in a very large heavy duty zip lock bag.
  • Remove the meat from the marinade (it will be beautifully pink from the wine) and pat it dry, removing any stray bits of veggie as well. Remove the marinade to a bowl and wipe out the pot. Lightly coat the bottom of the pot with oil and heat until quite hot but not smoking. Brown the meat on all sides.
  • Add the marinade back into the pot with the meat and bring to a boil. Scrape up any browned bits from the bottom as you heat. Now you have a choice: either turn the heat down, cover, and let gently simmer on the stove for 2 1/2 to 3 hours, or you can cover and put the pot into a 325F oven for the same amount of time. Note: whichever method you choose, you want the pot to be a gentle simmer, not a rolling boil, so adjust heat accordingly. I check it a few times during cooking to make sure.

  • In a 2 to 3 quart saucepan, combine the wine, vinegar, water, sliced onion, crushed peppercorns and juniper berries, and the bay leaves. Bring this marinade to a boil over high heat, then remove it from the heat and let it cool to room temperature. Place the beef in a deep crock or a deep stainless steel or enameled pot (avoid plastic, aluminum and cast iron) just large enough to hold it comfortably and pour the marinade over it.   • In a heavy 5 quart flameproof casserole, add the peanut oil over moderate heat until it begins to sputter. Add the meat and brown it on all sides, turning it frequently and regulating the heat so that it browns deeply and evenly without burning. This should take about 15-20 minutes. Transfer the meat to a platter, and pour off and discard all but about 4 tablespoons of the fat from the casserole.
