This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

3 tablespoons butter
2 medium apples, peeled and shredded
1 tablespoon lemon juice
1 can (8 ounces) sauerkraut, rinsed and well drained
1/2 cup unsweetened apple juice
1 teaspoon caraway seeds
1/2 teaspoon fennel seed, crushed
1 package (16 ounces) smoked Polish sausage

Steps:

  • In a large skillet, saute onion in butter for 15 minutes or until lightly browned. , In a large bowl, toss apples with lemon juice. Add the apples, sauerkraut, apple juice, caraway and fennel to the onion. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Meanwhile, heat sausage according to package directions; cut into slices. Serve with sauerkraut.

1 to 2 tablespoons vegetable oil
12 links assorted fully cooked German sausages
1 large white onion, thinly sliced
2 crisp red apples, such as Gala or Braeburn, cored and cut into 1/2-inch slices
1/4 cup apple cider
1 pound sauerkraut
3 large sour pickles, quartered, for serving
1 Kirby cucumber, peeled and sliced lengthwise into eighths, for serving
Assorted mustards, for serving

Steps:

  • Heat a 12-inch skillet over medium heat, and add 1 tablespoon oil. Halve sausages lengthwise if desired. Cook until browned and heated through, about 3 minutes per side. Transfer to a plate, and cover to keep warm.
  • Add remaining tablespoon of oil to skillet if necessary. Add onion, and cook for 3 minutes. Add apples, stir, and cook until softened, 6 to 7 minutes. Stir in cider, and cook for 1 minute. Add sauerkraut, and heat until warmed through, about 2 minutes.
  • Transfer sauerkraut to a warm serving platter, and top with the sausages. Serve with pickles, cucumber, and mustards. (Sausages and sauerkraut can be kept warm, covered, in a 250-degree oven for up to an hour.)

1 teaspoon caraway seeds
1 teaspoon fennel seeds
1 tablespoon Wondra flour
1/2 teaspoon ground black pepper
4 cups sauerkraut (preferably fresh), rinsed, drained, squeezed dry (from one 32-ounce jar)
1 large onion (about 1 pound), halved lengthwise, thinly sliced crosswise
3 large Golden Delicious apples (about 1 1/2 pounds total), peeled, cored, thinly sliced
6 whole smoked bratwurst (about 1 pound), pierced all over with skewer
4 bay leaves
1 cup beef broth
2 tablespoons dry vermouth
2 tablespoons ketchup
1 1/2 tablespoons butter, melted
Pumpernickel bread or whole grain

Steps:

  • Position rack in center of oven; preheat to 400°F. Place caraway seeds and fennel seeds in small resealable plastic bag. Crush seeds with mallet. Add flour and pepper to bag; shake to blend. Spread sauerkraut over bottom of 13x9x2-inch glass or ceramic baking dish. Sprinkle 1/3 of flour mixture over. Arrange onion slices over; sprinkle with half of remaining flour mixture, then lightly with salt. Spread half of apple slices over, then sprinkle with remaining flour mixture. Place bratwurst over apples, then arrange remaining apple slices around bratwurst. Tuck in bay leaves. Mix broth, vermouth, and ketchup in measuring cup. Pour broth mixture evenly over. Cover tightly with foil.
  • Roast bratwurst 45 minutes. Uncover; brush with melted butter. Roast uncovered until edges of apples and sausages begin to brown, about 25 minutes longer. Serve with bread.

1 lb kielbasa sausage (or similar smoked sausage)
1 tbsp cooking oil
1 onion, medium (yellow, red or white), thinly sliced
1 apple, medium*, peeled and cut in thin sticks
1/2 cup malty dark beer or hard cider (to deglaze)**
3 cups sauerkraut***
1 tbsp brown sugar
1 bay leaf (optional)
1/2 tsp caraway seeds
2 whole cloves (optional)
1/2 tsp peppercorns (green or black)
1/2 cup stock (vegetable or beef)****
1 tsp kosher salt

Steps:

  • STOVETOP ONLY METHOD1. Slice the kielbasa diagonally to create more surface area to sear. Heat a heavy bottomed skillet such as cast iron over medium-high heat. Add the cooking oil and kielbasa and sear until it begins to brown. Remove and set aside. 2. In the same skillet saute the sliced onion and apple for about 3-5 minutes. Deglaze with a bit of the malty beer or hard cider and let most of the liquid simmer away. Add the sauerkraut, brown sugar, bay leaf, cloves, peppercorns, caraway and salt and mix everything well together. Add the rest of the beer or cider and let simmer for 5 minutes. Remove bay leaf and cloves before they leave a hint of bitterness. 3. Add the browned kielbasa back to the skillet, add the stock and mix well. Let simmer for 5-10 minutes until most of the liquid has evaporated. Serve. STOVETOP AND OVEN METHOD1. Preheat the oven to 400 F. (Make sure the skillet you are using is oven safe). 2. Perform steps from 1 and 2 above. Add the kielbasa and stock to the sauerkraut, mix everything and transfer the skillet to the oven. Bake for 5-10 minutes until most of the liquid has evaporated. Serve.

1 large onion, quartered and sliced
2 pounds smoked sausage , such as andouille, kielbasa, knackwurst, or chicken apple sausage, sliced
2 large apples, peeled, cored, and diced
2 cups apple juice
1 tablespoon vinegar
1/4 cup light brown sugar
2 pounds cold-pack sauerkraut, rinsed and well-drained
1/4 teaspoon ground black pepper
Optional: 1 teaspoon caraway seeds, or to taste

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • In a large ovenproof saute pan or Dutch oven over medium heat, heat the vegetable oil. Add the onion and sliced sausages and saute until the onion is golden and the sausage is lightly browned, 5 to 7 minutes.
  • Add the apples and saute for 1 minute longer.
  • Add the apple juice, vinegar, brown sugar, sauerkraut, and pepper.
  • Add the caraway seeds, if using.
  • Cover and bake for 1 hour.
  • Serve with crusty rolls or biscuits and a tossed salad. Enjoy.
