GERMAN OMELET (BAUERNFRUHSTUCK)
This is a traditional German breakfast. The name means German farmer's breakfast. I think it works well for breakfast or dinner!

- 1. Melt the butter in a 10 inch skillet; add potato and onion. Cook over medium heat, stirring occasionally, 20 minutes or until the vegetables are tender and golden brown. Add ham (or bacon), and cook 5 minutes, stirring frequently. Sprinkle with parsley.
- 2. Combine eggs, salt, pepper, and half-and-half in a large bowl, beating with a wire whisk until blended. Pour the egg mixture over the potato mixture. Cover and cook over low heat 10 minutes or until almost set.
- 3. Gently lift the edges of the omelet with a spatula, and tilt pan so that the uncooked portion flows underneath. Sprinkle with cheese; cover and cook until cheese melts. To serve, cut omelet into wedges.

- In a large skillet, cook potatoes in 2 tablespoons butter for 15 minutes or until browned and tender. Sprinkle with onions; set aside and keep warm. , In a large nonstick skillet, melt remaining butter over medium-high heat. Whisk the eggs and milk. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, spoon potato mixture on one side; fold other side over filling. Invert omelet onto a plate to serve. Cut into wedges and season as desired.

- In a medium bowl, whisk eggs togeether well.
- Add salt and pepper and whisk again.
- Pour a little oil in a cast-iron pan and saute onion, bacon and potato.
- Add the butter and allow it to melt before pouring in the egg.
- Allow it to cook on low heat and, when golden-brown, garnish with chopped herbs (if desired).
- Serve hot.

BRATKARTOFFELN (GERMAN COTTAGE POTATOES WITH BACON)
Steps:
- Gather the ingredients.
- Scrub whole potatoes of the same size and cook in salted boiling water until easily pierced with a fork. Cool slightly; peel while still warm.
- Chop bacon (or bauchspeck) into small pieces and cook in a large frying pan (11 or 12 inches) over medium heat until limp.
- Remove from the pan but keep the grease in the pan. Add the butter and melt, but don't brown.
- Slice the cold potatoes into 1/4-inch slices and place a single layer in the hot fat. Place any extra potatoes on top of the first layer.
- Sprinkle the potatoes with the onions and bacon and let them cook over medium heat for 10 to 15 minutes until golden brown.
- Flip them when they become golden brown on the underside, but don't stir them.
- Sprinkle with marjoram, caraway, salt, and pepper and cook for 5 to 10 more minutes. Add more butter if necessary, to facilitate browning.
- Serve and enjoy!

- Peel and chop the onion into very small cubes. Also cut the pancetta bacon into small pieces if it is not cut small enough already. Peel the potato and chop it into fine, small pieces (optional) and also grate the cheese.
- Place the pancetta bacon in a medium-sized frying pan and fry it on medium heat until the fatty parts become slightly translucent. Add the onions and fry until they are translucent and the bacon is slightly crispy. Add the potato pieces and fry them for 1-2 minutes as well.
- In a small bowl, crack the eggs and whisk them with a fork until uniform in color. Add salt and pepper to taste - but remember that the pancetta bacon can be quite salty already.
- Reduce the heat slightly and pour the egg mixture over the ingredients in the pan. Do not move the contents of the pan around! Fry the egg on low heat for about 4 minutes without moving it. Sprinkle the cheese on top, place a lid on top of the pan, and let the omelette sit for approx. 3 more minutes until the cheese has melted and the egg is fully cooked.

- Using a medium-size heavy-based non-stick frying pan, fry the bacon in a tablespoon oil until crisp. Remove and drain on a paper towel.
- Halve the sausage lengthwise. Slice thickly on the diagonal. Fry the slices until lightly colored and crisp. Remove and drain.
