GRAMPA'S GERMAN-STYLE POT ROAST



Grampa's German-Style Pot Roast image

Grampa was of German heritage and loved the Old-World recipes given to him by his mother. I made a few changes so I could prepare this dish in the slow cooker and give it a slightly updated flavor. -Nancy Heishman, Las Vegas, Nevada

4 thick-sliced bacon strips
1 pound baby Yukon Gold potatoes
4 medium carrots, sliced
1 can (14 ounces) sauerkraut, rinsed and well drained
3/4 cup chopped dill pickles
1 teaspoon smoked paprika
1 teaspoon ground allspice
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 boneless beef chuck roast (3 pounds)
2 packages (14.4 ounces each) frozen pearl onions, thawed
4 garlic cloves, minced
1/2 cup stout beer or beef broth
1/3 cup Dusseldorf mustard
1/2 cup sour cream
1/2 cup minced fresh parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Meanwhile, place potatoes, carrots, sauerkraut and pickles in a 7-qt. slow cooker. Mix paprika, allspice, salt and pepper; rub over roast. Brown roast in drippings over medium heat. Transfer to slow cooker. Add onions and garlic to drippings; cook and stir 1 minute. Stir in beer and mustard; pour over meat. Crumble bacon; add to slow cooker., Cook, covered, on low until meat and vegetables are tender, 6-8 hours. Remove roast; let stand 10 minutes before slicing. Strain cooking juices. Reserve vegetables and juices; skim fat. Return reserved vegetables and cooking juices to slow cooker. Stir in sour cream; heat through. Serve with roast; sprinkle with parsley.

3 -4 lbs chuck roast
3 tablespoons fat (I used Crisco)
1 1/2 cups water
1 medium onion, sliced
2 stalks celery, chopped
salt and pepper
2 cups flour
1 teaspoon oil
salt
1 teaspoon sugar
water

Steps:

  • Brown meat in hot fat.
  • Season meat with salt and pepper, and add water, onions, and celery.
  • Cook slowly on top of stove until meat is tender, about 3-4 hours.
  • If liquid cooks away, add more water.
  • This needs plenty of broth.
  • Mix flour, oil, salt, sugar, and enough water sufficient to form a nice ball of dough.
  • Roll out 1/4 inch thick; cut in squares and drop into boiling broth.
  • Cook about 15-20 minutes.

Sausage and Kraut seemed to go well with today's chilly weather . Being part German, we ate a lot of dishes like this, growing up. Gram made something very similar, I just added my own touch to it. Love the smell of this stewing on the stove top. I serve it with yummy sour dough bread, to sop up the yummy juices. This dish is even better heated up the next day. I always make it ahead so it has time for the flavors to merry. Enjoy!

1 - apple, cored and cubed
1 pound(s) smokes sausage or kielbasa, sliced
2 clove(s) garlic, minced
1 - onion, rough chopped
1 - 24 ounce(s) german sauerkraut in jar
12 ounce(s) apple juice - divided
salt - & pepper to taste
1/2 cup(s) chicken stock
1 tablespoon(s) caraway seeds - or to taste
4 - 5 medium cooked and cubed potatoes
2 - 3 tablespoon(s) brown sugar - or to taste
2 tablespoon(s) flour

Steps:

  • In a stock pot, over medium heat, add about 1 tablespoon oil, and saute onion, garlic, apple and sausage, until apple and onion are softening and sausage is browning. Stirring occasionally.
  • Add 1 cup apple juice, kraut, sugar, chicken stock, caraway seeds, salt & pepper. Bring to a boil, then simmer for 30 minutes.
  • Carefully stir in the potatoes. Mix flour with remaining apple juice. Stir into mixture and continue simmering for another 5 minutes. Plate and enjoy with your favorite bread, to sop up any juices.
