Pizza meets the best flavors of Oktoberfest in this creative and easy Oktoberfest pizza that uses kielbasa, smoked Gouda and green apples on a pretzel-like crust. Bring something new to fall weeknights with an Oktoberfest pizza recipe your family will love. One taste and you'll be hooked-trust us.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
6 oz fully cooked Polska-kielbasa sausage, cut into 1/2-inch diagonal slices
1 medium shallot, thinly sliced (about 1/3 cup)
2 tablespoons spicy brown mustard
8 oz smoked Gouda cheese, shredded
1/2 Granny Smith apple, cored and cut into 1/4-inch slices
1 egg, beaten
Kosher salt
1 cup arugula, if desired

Steps:

  • Heat oven to 425°F. Lightly sprinkle 18x13-inch sheet pan or large cookie sheet with flour.
  • Unroll pizza dough onto pan; press dough into 17x12-inch rectangle, forming thicker dough edges. Bake 6 to 8 minutes or until just starting to brown.
  • Meanwhile, in 10-inch nonstick skillet, cook sausage over medium heat 4 to 6 minutes, stirring occasionally, until browned. Remove from skillet to plate; set aside.
  • In same skillet, cook shallot over medium heat 1 to 2 minutes, stirring frequently, until crisp-tender. Remove from heat.
  • Evenly spread mustard over partially baked pizza crust to within 1/2 inch from edges. Sprinkle half of the cheese onto pizza crust. Top with sausage, apple slices, shallot and remaining cheese.
  • Brush edges of crust with beaten egg; sprinkle lightly with salt.
  • Bake 6 to 8 minutes or until cheese is melted. To serve, top with arugula; cut into 8 slices.

1 tube (13.8 ounces) refrigerated pizza crust
1 pound smoked kielbasa or Polish sausage, cut into 1/4-in. slices
2 teaspoons butter
2 cups leftover or refrigerated mashed potatoes
1 cup sauerkraut, rinsed and well drained
1 cup shredded cheddar cheese
1 teaspoon caraway seeds

Steps:

  • Unroll dough into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until lightly golden brown. , Meanwhile, in a large skillet, saute kielbasa in butter until browned. Spread mashed potatoes over crust. Layer with sauerkraut, kielbasa, cheese and caraway seeds. Bake for 10-15 minutes or until golden brown.

This recipe combines all of the great elements of traditional Oktoberfest dishes into one loaded pizza! I added the spicy brown mustard to the original recipe for some extra kick and we also wound up topping the pizza with Thousand Island dressing. Also, the original recipe called to prebake the crust for 8-10 minutes before adding the toppings but I would suggest baking for no longer than 5 minutes. Mine got a little too crispy after the second round of baking when I prebaked it for the full time. (October/November issue of Taste of Home)

1 (13 7/8 ounce) container refrigerated prepared pizza crust
1 lb smoked kielbasa, cut into 1/4-inch slices (You can also use Polish sausage)
2 teaspoons butter
2 cups mashed potatoes
1/8 cup spicy brown mustard (more or less to taste) (optional)
1 cup sauerkraut, rinsed and drained well
1 cup shredded cheddar cheese
1 teaspoon caraway seed

Steps:

  • Unroll dough into a greased 15x10x1" baking pan; flatten dough and build up edges slightly.
  • Bake at 425 for 5 minutes or until very lightly golden brown.
  • Meanwhile, in a large skillet, saute kielbasa in butter until browned. (You can omit the butter to save your waistline. I did and we didn't miss it).
  • Spread mashed potatoes over crust.
  • Spread spicy brown mustard over potatoes.
  • Top with sauerkraut, kielbasa, cheese and caraway seeds.
  • Bake for 10-15 minutes or until golden brown. Broil for a few minutes if you need to brown the cheese.
