FRIKADELLEN RECIPE - MEAT BALLS (GERMAN)

Steps:
- Cut the onion into very small cubes. Heat a pan on medium and fry the onions with some oil until they are cooked through and slightly brown.
- Place the roll in a small bowl with water and let soak.
- Meanwhile put the ground beef in a larger bowl, add salt, spices, herbs, mustard, tomato paste and if it matches with the rest of the menu also some garlic. Make sure you use enough salt, it tends to disappear during the cooking process!
- Take the soaked roll and squeeze in our hands to remove most of the water. Then add to the bowl with the ground beef.
- The onions should be ready be now, add them to the bowl.
- Next add the egg.
- Mix everything very well - works best with hands!
- Heat some oil in a large pan.
- Form about 8 Frikadellen / meat balls in about the size of your palm, don't make them flat like a UFO but also not to round.
- Add the Frikadellen / meat balls to the pan and reduce the heat to medium so they won't burn.
- Let fry from both sides for about 10 minutes, test on one Frikadelle / meat ball if it is cooked through.
- Remove the Frikadellen / meat balls from the pan and keep them warm if you plan to make a gravy: Add some beef broth to the empty pan and bring to a boil. The residue in the pan will give a lot of taste. Take some sour cream and add to the pan, decrease the heat and stir. Add salt and pepper to taste
- If you don't feel confident about making the gravy, try "Rahm Soße"! You can buy it i.e. at online German Deli and makes a delicious gravy with just the right consistency.
GERMAN MEATBALLS (FLEISCHKUECHLE)
The German Meatball is not actually a ball - it looks more like a disk. It is one of my favorite childhood foods and I keep on making these for private dinners, big brunches, a party gift, picnicks,... you get the idea: easy to prepare, store, and take around, hot or cold, goes with almost anything. A taste of Germany - enjoy!

Steps:
- Start by soaking the dry bread with some lukewarm milk (takes around 20 min). When done, quench the milk out of the bread.
- Meanwhile, finely chop onions and sauté with some oil or butter in a pan until they are transparent. Shred the carrot and sauté with the onions until soft. Let cool.
- Add all ingredients into a bowl and mix thoroughly with your hands.
- Add spices to taste. Remember: add a little more salt than you think you should. The frying will take off some salt, so it prevents the meatballs from tasting boring.
- Now heat margarine or butter in a non-stick pan, form disks from the meat dough (approx 10 cm diameter, 2-3 cm high) and fry thoroughly from both sides.
- Serving suggestion: with mashed potatoes and baby carrots with peas.

KUMMEL KLOPS (GERMAN MEATBALLS)
October reminds me of "Oktoberfest" which reminds me of this recipe. Years ago, when my oldest son was in high school, his German class had a celebration and each student was to bring a "German dish" to share with the class. My son surfed the net and chose this one. He made it for his class (with my help, of course) and everyone enjoyed it with some of the students actually asking him for the recipe. I am not sure of its authenticity but we liked it and still make it today when he comes home on leave for a visit.

Steps:
- Mix together ground beef, salt and pepper, poultry seasoning, dill, breadcrumbs, milk, parsley and egg. Shape into 24 meatballs.
- Brown slowly, in a large skillet, turning frequently. Add broth, mushrooms and onions. Cover, and simmer for 30 minutes.
- Take out the meatballs. Blend together the sour cream and flour. Stir into the broth. Add back the meatballs and stir, bringing just to a boil and cook for 5 minutes more.
- Serve over German dumplings, noodles or mashed potatoes.

GERMAN MEAT BALLS WITH BELL PEPPER SAUCE - HACKFLEISCH KUECHLE
These are "Hackfleisch Kuechle" translating roughly into Ground Beef Meat Balls... Its a great versatile dish that can be served with mashed potatoes rice or even french fries.. Left over meat balls are great cold, sliced in half in a Kaiser Roll!!!

Steps:
- Dice bell pepper and onion and set aside.
- Mix ground beef with egg, bread crumbs, mustard and 1/2 of your diced onions.
- form roughly 6 meatballs (each meat ball should fit into your cupped hand and roll in some bread crumbs and pad lightly on both sides to flatten them on 2 sides.
- Heat oil in a deep pan and brown meatballs harshly on both sides until nice dark and firm crust has formed (approximately 5 min on each side), take care to only turn them once
- Remove the meatballs from the pan an set aside.
- brown remainder of your onions together with the bell pepper in the left over oil/browning juices.
- Ad water in small steps to loosen all the browned particles from the pan to create a nice dark gravy. Finish the gravy with some cream and the tablespoon of gravy mix to thicken it.
- Place the meatballs back into the gravy and let all simmer for 5 more minutes.
- Serve with your choice of sides.
