Time 45m

Number Of Ingredients 19

1 bread roll/bun, 1-2 days old
1 onion (medium size), diced
1 tbsp cooking oil (for softening diced onion)
3 tbsp finely chopped fresh parsley
10 oz ground pork
10 oz ground beef
1 tbsp German mustard
1 egg
1 tsp salt
1/2 tsp pepper
1/2 tbsp paprika
2 tsp dried marjoram
1 cup cooking oil for frying (or as needed)
1/2 loaf German Farmer's bread or sourdough bread, sliced for sandwiches
1-2 bunch chives, chopped very fine
2-3 tbsp softened butter
1 daikon radish
1 bunch red radishes
1 tsp chopped chives

Steps:

  • In a bowl of water soak the bread roll/bun.
  • In about 20 minutes squeeze out all the water and crumble in a mixing bowl.
  • While the bread is soaking heat the 1 tbsp cooking oil in a pan over medium heat and saute the onions until they soften. Set aside to cool them down.
  • Add the chopped parsley to the crumbled roll, add the cooled softened onions, add the ground meat, the egg, the mustard, salt and pepper, paprika and marjoram and mix well.
  • Shape into large patties or smaller bite-sized meatballs.
  • Heat the cooking oil in a cast iron skillet or frying pan over medium-high heat. Add the patties or meatballs and quickly turn them, then reduce the heat to medium and fry until cooked, turning once. For larger patties allow 4-5 minutes per side, for smaller meatballs about 2-3 minutes per side, depending on their size.
  • Serve with the radishes, mustard and Schnitlauchbrot.
  • Butter the slices of bread.
  • On a plate spread the finely chopped chives and press each buttered bread slice onto them, face down, so that the chives stick to the buttered surface.
  • You now have small open-faced chives sandwiches. Carefully slice in half and serve.
  • Clean the red radishes thoroughly and slice thin.
  • Peel the daikon and using a spiralizer or a potato peeler create thin spirals or shavings. Flavor with a few grains of sea salt and sprinkle with chives.

FRIKADELLEN: GERMAN HAMBURGERS

Frikadellen: German Hamburgers image

These are the BEST Frikadellen or Buletten as they're also called are German style meat patties that are pan fried and often served on a bun. Frikadellen are American hamburger imposters, but they're not like the American hamburger at all.

Categories     Lunch     Snack

Time 45m

Number Of Ingredients 12

500 grams mixed ground meat (half pork and half beef)
1 yellow onion
1 hard roll (you can use whatever leftover bread you have!)
1 egg
1 teaspoon sea salt
1 teaspoon German mustard (or any other mustard of your choice)
1 teaspoon dried marjoram
1 teaspoon paprika powder
1 teaspoon chili powder
3 Tablespoons fresh parsley (chopped)
3 garlic cloves (minced)
oil for frying (sunflower seed or avocado oil)

Steps:

  • Soak the roll in water for about 10 minutes, then squeeze out all the water. Peel and fine dice the onion, sauté until translucent and lightly browned, then put into a bowl.
  • Add ground meat, spices, chopped parsley, garlic, and egg to the bowl and knead until combined (best to use your hands, but you can also use a fork).
  • Add the drained roll to the meat mixture and knead until combined.
  • Shape your Frikadellen patties and lay them onto a floured surface, so they won't stick. Heat some oil in a pan or on a griddle over medium-high, then add in enough Frikadellen to cover the pan (see note about Test Frikadelle).
  • Fry for a few minutes without turning until thoroughly browned, turn and repeat, then reduce heat to medium low and continue frying for 10 more minutes or until cooked through. Transfer Frikadellen to a plate lined with paper towel to rest for a few minutes before serving (see note about Leftovers).

GERMAN HAMBURGERS (FRIKADELLEN)

German Hamburgers (Frikadellen) image

The original hamburger, these are served like a flattened meatball with some steamed string beans and salad. I also like to use this recipe to make Swedish meatballs (but omit the paprika). My Aunt in Hamburg, Germany taught me this recipe and I've been making them ever since. Serve with steamed string beans and tossed salad. Or serve on a Kaiser roll with lettuce, tomato, pickled cucumbers, finely sliced deep fried onions and curry ketchup.

Categories     Burgers

Time 55m

Number Of Ingredients 9

1 lb ground beef
3 slice frenchbread
1 large egg
1/2 finely chopped onion
pinch salt and pepper
1 tsp maggie seasoning or worchester sauce
2 Tbsp olive oil, extra virgin
2 Tbsp chopped fresh parsley
plain bread crumbs

Steps:

  • 1. Soak Bread slices in warm water for about 5 minutes. Chop onion & parsley while bread is soaking When bread is soft squeeze water out of bread ( this will help bind the meat)
  • 2. Place all ingredient into large mixing bowl. ( I use both hands, just like Mom & Oma did) Mix all ingredients together until a sticky-dough like consistency is obtained.
  • 3. Heat Olive Oil in skillet on medium heat. Form small burgers and place carefully into hot oil. ( if mixture is too sticky, add some breadcrumbs) Let each side cook about 8 minutes or until well done.
  • 4. The Frikadellen can be served on a Hardroll with Ketchup and some thinly sliced onion, to taste. or the can be served with Fried Potatoes and green Salad.

  • Break the bread up into small pieces, place them in a small bowl and pour water/milk over them and let them soak for 15 minutes while you're preparing the other ingredients. Squeeze out any excess liquid.
  • Heat some oil or butter in a frying and saute the onions until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.
  • Place all of the ingredients (except for the olive oil and butter) in a large bowl along with the onion mixture and the soaked bread. Use your hands to thoroughly knead the mixture until well blended and the meat is smooth. The more you knead it, the better the results. Form the meat mixture into balls according to desired size and slightly flatten them. Cover and chill the patties in the fridge for at least 30 minutes.
  • Heat the olive oil and butter in a frying pan. Once hot add the Frikadellen / Frikadeller and fry on both sides on higher heat until nicely browned, then lower the heat and continue to fry over medium heat until cooked through according to desired doneness. Traditionally served with potato salad or a crusty bread roll slathered with mustard. See blog post for other serving ideas.
