GREEN BEANS GERMAN STYLE
My mother-in-law introduced me to this quick down-home dish almost 50 years ago when I was a new bride. The tender green beans are topped with diced bacon and a classic sweet-sour glaze. Guests always ask for the recipe. -Vivian Steers, Central Islip, New York

Steps:
- Place beans in a saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 1 tablespoon drippings. In the same skillet, saute onion in drippings until tender., In a small bowl, combine the cornstarch, salt, mustard and water until smooth. Stir into onion. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in brown sugar and vinegar. Add the beans; heat thought. Sprinkle with bacon.

When winter is in full swing, the only thing I crave is a good soup. One that is easy-to-make but also satisfying. Traditional German Green Bean Soup is all that and more.

Steps:
- Wash the meat and pat it dry.
- Cut into bigger chunks. Up to 5cm long.
- Take a large pot and heat up the oil. As soon as the oil is hot (check it with a wooden spoon if you are not sure), add the beef chunks and fry them for about 5 minutes or until lightly browned.
- Add frozen vegetables and water.
- Cook for at least 1,5 hours.
GREEN BEAN SOUP
This is my grandmother's recipe. She was a Transylvanian Saxon! This is a great soup and worth the experiment!

- In a large pot over medium heat, combine green beans, garlic, parsley, salt and water to cover and cook until beans are tender.
- Fry bacon until crisp, set aside. Add onion and flour to bacon grease, stirring until smooth and brown. Add some water from the beans, stirring slowly and constantly to prevent lumps.
- Cook to thicken a bit, then add it to the bean soup and bring to a boil. Stir crisp bacon, sour cream and vinegar.

- Wash the beans and cut into approximately 3 cm/1 inch lengths.
- Peel and dice the potatoes, onion, celery root and carrots.
- Wash, trim and quarter the leek and cut into small pieces.
- Heat the oil in a pan and saute all the vegetables. Then add the broth and the savory and simmer for 20-30 minutes.
- Season with salt and pepper, add herbs and cream to taste and serve.

Steps:
- Drain the soaked beans, then put in a kettle with 8 cups of water and the bacon.
- Bring to a boil over medium heat, then reduce heat, cover, and simmer for an hour.
- Add the green beans, celery root cubes, carrots, leeks, onion, parsley root (or parsley), potatoes, marjoram, thyme, and bay leaves.
- Bring back to a boil, reduce heat, and simmer for another hour.
- While the soup is cooking, melt the butter over low heat in a saucepan.
- Stir in the flour and let it brown very very slowly, stirring occasionally,this could take an hour, if you keep the heat low enough.
- When ready, stir in a little of the soup stock, whisk for a minute, then stir into the soup kettle.
- Season with salt and pepper and cook uncovered, stirring from time to time, for 10 minutes.
- When ready to serve, stir in the parsley, remove the bay leaves, adjust the seasoning, then ladle into soup bowls and serve immediately.

Great in summer and winter, quick and tasty, a german kitchen staple. Serve with a dense rye bread and butter.

- Put beans into a Dutch oven type pot.
- Add enough water to just cover.
- Bring to a boil.
- Peel potatoes and dice.
- Add potatoes and savory.

- Wash the beans, cut off the ends, and then cut them into halves or thirds depending on the size of them.
- Peel the potatoes, carrots, and celery root. Cut everything into small cubes.
- Peel the onion and finely chop it.
- Wash the leek really well (it can be quite dirty) and cut it into rings.
- Heat one teaspoon of oil in a large pot. Add the pancetta bacon and fry it for a few minutes until the fatty pieces appear cooked. Then add the onions and sauté them until the onions are translucent and the pancetta bacon is slightly brown.
- Add the vegetables (potatoes, carrots, celery root, green beans, and leek) and sauté them for around 2 minutes as well.
- Now add enough vegetable broth so that it just covers the contents of the pot. In our case, this is usually around 8 cups of vegetable broth - but it might be more or less in your case depending on the size of your pot and your vegetables.
- Add the chopped parsley and savory. Give everything a stir.
- Add the lid to the pot and bring the vegetable broth to a boil. Then turn down the heat and let the soup simmer for around 20-25 minutes until the vegetables are soft.
- Add salt and pepper to taste. Serve and enjoy!

- Peel and cut potatoes into 1/8s. Boil either on your stove or in the microwave until tender. Drain water and slightly mash. Set aside.
- Steam green beans until slightly tender. Set aside.

- Chop the onion into small cubes and set aside.
- Wash the green beans, trim off the ends and cut the beans into 1 inch long pieces. Set aside.
- Heat oil in a large pot and add the onions. Sauté the onions on medium heat until they become translucent.
- Add the green beans to the pot, then add 2 cups of broth. The mixture of onions and beans should just be covered.
- Add the paprika, reduce the heat, and let everything simmer for around 30 minutes (or until the beans are tender - but not mushy).

- In a large pot, cook bacon over medium heat until crisp. Remove from pan, drain,and set aside; discard all but 1 tablespoon of the drippings. - Rinse the meat, pat dry with paper towels and cut it into bite-sized pieces. Cut bacon into small pieces. Then peel and cut the onion and garlic cloves into smaller pieces. In a large pot heat the oil over medium - high and brown the meat chunks. Add bacon and brown for another minute. Then add onions, followed by garlic and sauté for 3 minutes, stirring continuously. Stir in 200 ml (1 cup) water, then bring to a boil and reduce the heat. Let simmer for 30 minutes. In the meanwhile peel and cut potatoes into small pieces and soak in water. Cut off the ends of fresh greens, then cut in the middle and soak them in water.
- After 30 minutes, remove the potatoes and beans from the water and add to the pot. Stir in the remaining 400 ml (1 ½ cups) water. Bring to a boil and let simmer for 15 minutes. Season with salt, pepper, chili and cook for another 5 minutes. Garnish with fresh parsley, if desired and serve.
