TRADITIONAL GERMAN GREEN BEAN SOUP



Traditional German Green Bean Soup image

When winter is in full swing, the only thing I crave is a good soup. One that is easy-to-make but also satisfying. Traditional German Green Bean Soup is all that and more.

2 tbsp oil for frying (sunflower)
1 kg beef (short ribs, flanksteak, beef shank, brisket, oxtail)
750 g soup vegetables (I used frozen)
750 g green beans (I used frozen)
1,7 l water
salt
pepper
sugar
nutmeg

Steps:

  • Wash the meat and pat it dry.
  • Cut into bigger chunks. Up to 5cm long.
  • Take a large pot and heat up the oil. As soon as the oil is hot (check it with a wooden spoon if you are not sure), add the beef chunks and fry them for about 5 minutes or until lightly browned.
  • Add frozen vegetables and water.
  • Cook for at least 1,5 hours.

2 pounds fresh green beans
1 clove garlic, minced
1 sprig fresh parsley
1 pinch salt
2 slices bacon
3 tablespoons all-purpose flour
1 onion, chopped
1 cup sour cream
3 tablespoons vinegar

Steps:

  • In a large pot over medium heat, combine green beans, garlic, parsley, salt and water to cover and cook until beans are tender.
  • Fry bacon until crisp, set aside. Add onion and flour to bacon grease, stirring until smooth and brown. Add some water from the beans, stirring slowly and constantly to prevent lumps.
  • Cook to thicken a bit, then add it to the bean soup and bring to a boil. Stir crisp bacon, sour cream and vinegar.

CREAM OF GREEN BEAN SOUP

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

1 1/2 pounds green beans
1 pound potatoes (approximately 4 medium-sized potatoes)
1 large yellow onion
1 small celery root
1 leek
2 medium-sized carrots
5 ounces pancetta bacon (more or less to taste)
1 teaspoon oil
8 cups vegetable broth (approximately)
1/4 cup parsley (chopped)
1 tablespoon savory (chopped)
salt to taste
pepper to taste

Steps:

  • Wash the beans, cut off the ends, and then cut them into halves or thirds depending on the size of them.
  • Peel the potatoes, carrots, and celery root. Cut everything into small cubes.
  • Peel the onion and finely chop it.
  • Wash the leek really well (it can be quite dirty) and cut it into rings.
  • Heat one teaspoon of oil in a large pot. Add the pancetta bacon and fry it for a few minutes until the fatty pieces appear cooked. Then add the onions and sauté them until the onions are translucent and the pancetta bacon is slightly brown.
  • Add the vegetables (potatoes, carrots, celery root, green beans, and leek) and sauté them for around 2 minutes as well.
  • Now add enough vegetable broth so that it just covers the contents of the pot. In our case, this is usually around 8 cups of vegetable broth - but it might be more or less in your case depending on the size of your pot and your vegetables.
  • Add the chopped parsley and savory. Give everything a stir.
  • Add the lid to the pot and bring the vegetable broth to a boil. Then turn down the heat and let the soup simmer for around 20-25 minutes until the vegetables are soft.
  • Add salt and pepper to taste. Serve and enjoy!

1/4 cup water
1 cup sour cream

Steps:

  • Gather the ingredients.
  • In a large skillet, place the green beans and cover with water; add 1 teaspoon salt and bring to a boil. Reduce heat to simmer and cook until crisp-tender, about 5 minutes.
  • Remove green beans to a colander, reserving cooking liquid.
  • Meanwhile in a medium skillet, make a roux (known as rantas in Hungarian) by melting the butter, adding the flour, and cooking, stirring constantly, until it is a light amber color.
  • Add pepper, paprika, and 1/4 cup water to the skillet, stirring until smooth.
  • Temper the sour cream with a few ladles of the hot green bean cooking liquid.
  • Add the sour cream mixture to the pan along with green beans; whisk the mixture until smooth. Simmer until the broth thickens, 5 to 8 minutes, but do not let it boil.
  • Serve hot or chilled.

Steps:

  • Place the water, ham, green beans, potatoes, and onions into a large saucepan or soup pot, bring to a boil, and reduce heat to medium-low. 3.5 cups Vegetable broth

Steps:

  • Wash the beans and cut into approximately 3 cm/1 inch lengths.
  • Peel and dice the potatoes, onion, celery root and carrots.
  • Wash, trim and quarter the leek and cut into small pieces.
  • Heat the oil in a pan and saute all the vegetables. Then add the broth and the savory and simmer for 20-30 minutes.

1 pound bacon
1 tablespoon all purpose flour

2 stalks of celery chopped

4-5 tablespoons tomato sauce or 2 medium chopped tomatoes
2-3 tablespoons vinegar or to your taste
8 cups water
sour cream for serving

Steps:

  • Chop the bacon, place it in a soup pot on medium heat and brown it.
  • Add the chopped onions and cook until translucent.
  • Add the flour and paprika and mix well, while adding cold water to dissolve the flour. Make sure you get rid of the lumps.
  • Add more water and let it simmer for a while.
  • Chop celery and carrots and add them to the soup.
  • When the vegetables are halfway cooked(10-15 mins), add the cleaned and trimmed green beans.
  • Simmer the soup until the beans are tender.(another 10 mins)
  • Add chopped garlic and taste for salt and pepper.

  • Add crushed tomatoes or tomato sauce and simmer the soup for another 5 mins.

My son & daughter-in-law raved about this German soup but it just didn't sound like something I would like. One evening my little granddaughter asked my husband and I to stay for dinner and we accepted without knowing what was cooking. Needeless to say, we had our first taste of the infamous Greenbean Dumpling Soup ....and fell in love with it! I prefer my dumplings more like spaetzle than the regular biscuit type-dumplings. Also, either French-cut or regular green beans can be used. I do not use the roue - I thicken in the soup liquid. Be aware that it does make a lot, so adjustments for serving size may be needed.

1 pound bacon, cut into small pieces
1 medium onion, chopped
4 medium sized potatoes, peeled and 1/8'd

2 cups 2% milk

Steps:

  • Peel and cut potatoes into 1/8s. Boil either on your stove or in the microwave until tender. Drain water and slightly mash. Set aside.
  • Steam green beans until slightly tender. Set aside.
  • n your dutch oven, cook bacon pieces until slightly crispy, remove bacon with a slotted spoon, drain excess fat, but don't wipe the bottom clean.
  • Add onion to dutch oven and sauté in drippings until soft.
  • Add bacon back in, add green beans, mashed potatoes, and cover with milk and cream.
  • Warm for a bit until heated through, taking care not to boil.
