German Chocolate Pecan Truffles image

My sister-in-law, Jennifer, loves German chocolate. With her in mind, I experimented in the kitchen and came up with nutty truffles. They make a fun gift packed in a festive box or tin.

Number Of Ingredients 7

8 ounces German sweet chocolate, chopped
1/2 cup plus 2 tablespoons heavy whipping cream
1 tablespoon light corn syrup
1 cup sweetened shredded coconut, toasted, divided
1 cup finely chopped toasted pecans, divided
1/4 teaspoon coconut extract
1/8 teaspoon salt

Steps:

  • Place chocolate in a small bowl. In a small saucepan, bring cream and corn syrup just to a boil. Pour over chocolate; let stand for 5 minutes (do not stir). Whisk chocolate mixture until smooth. Stir in 1/4 cup coconut, 1/4 cup pecans, extract and salt. Cover and refrigerate for at least 1 hour or until firm., Shape chocolate mixture into 1-in. balls; roll in remaining coconut and pecans. Store in an airtight container in the refrigerator.

Whether you call these truffles of cake balls, they're easy to make and fun to dip. I made them for a party at work and everyone lovd them.

1 pkg (18 oz ) german chocolate cake mix
1 ( 16 oz ) contained milk chocolate ready to spread frosting
2 c toasted coconuts ( divited )
1 1/2 c toasted finely chopped pecans, (divited )
2 pkg (12 oz ) chocolate chips for dipping

Steps:

  • 1. Prepare and bake the cake according to package directions in a lightly greased 13x9" pan. Let cool combpetely in pan ( about 30 minutes )
  • 2. Crumble the cake into a large bowl. Scoop frosting over the cake crumbs. Sprinkle with 1 cup each coconuts, and pecans, stir gently , just until thoroughly blended. Using a small cookie scoop, scoop cake mixture into 1 1/4" balls, roll in your hands , then place balls on wax paper-lined baking sheet. cover and chill 1 hour.
  • 3. meanwhile, combine remaining 1 cup coconut, and 3/4 cup pecans, stir well. Melt chocolate for dipping, 1 package at a time. Dip chilled balls using a fork, and allow excess chocolate to drip off. Place coated truffles on wax paper-lined baking sheet . Sprinkle tops with coconut-pecan mixture; chill for 30 minutes. or until set. Place truffles in baking cups.

  • Start by preheating the oven to 350 degrees. Prepare your cake mix as directed on the back of the box. Mix and pour into a 9x13 pan and bake, and allow to cool.
  • While the cake is baking you will grab a small saucepan and add in your butter, condensed milk, and egg yolks. Mix on medium heat until the mixture thickens. Make sure to stir continuously. This takes around 5-10 minutes.
  • Once the frosting is thickened, remove it from heat, pour in the vanilla, coconut, and pecans. Stir and then allow it to cool for 30 minutes.
  • Next, you will take your cooled cake and crumble it up. Then fold in the cooled German chocolate frosting. Mix well until combined.
