German Chocolate Cake Ice Cream image

What's better than German chocolate cake? German Chocolate Cake Ice Cream! This decadent German chocolate ice cream with homemade German chocolate cake frosting folded in is everything you love about cake without having to bake one.

Provided by Carla Cardello

Categories     Ice Cream + Frozen

Time 5h50m

Number Of Ingredients 9

1 cup heavy whipping cream (do not substitute)
1 tablespoon cocoa powder
4 ounces German chocolate, chopped (can also substitute semisweet)
1/2 cup whole milk (do not substitute)
1/3 cup granulated sugar
Pinch of salt
2 egg yolks
1/4 teaspoon vanilla
1 cup German Chocolate Frosting (get recipe here)

Steps:

  • In a large saucepan over medium heat, bring 1/2 cup cream and cocoa powder to a boil, whisking often to blend the cocoa. Reduce the heat and simmer for another 30 seconds, whisking constantly.
  • Remove from the heat and stir in the chocolate until smooth. Stir in the remaining 1/2 cup cream. Pour the mixture into a large bowl, scraping the pan as much as possible. Place a mesh strainer on top of the bowl.
  • In the same saucepan over medium heat (no need to clean it), warm the milk, sugar, and salt.
  • In a separate small bowl, beat the egg yolk. Slowly pour some of the warm milk into the yolk, whisking constantly, then scrape it all back into the saucepan.
  • Continue cooking over medium heat, stirring often, until the mixture thickens and coats the back of a spatula or spoon (170F on a thermometer).
  • Remove from the heat and pour through the mesh strainer into the chocolate mixture. Stir in the vanilla. Place the bowl in an ice bath and cool until room temperature. When cool, refrigerate for at least 1 hour or until cold.
  • While the ice cream base is chilling, make German Chocolate Frosting (get the instructions here).
  • Once the ice cream mixture is cold, freeze it in your ice cream maker according to the manufacturer's instructions. Once it's churned, fold in spoonfuls of the frosting. Freeze in an airtight container until firm, roughly 4 hours or overnight.

RICHER THAN RICH GERMAN CHOCOLATE ICE CREAM

Richer Than Rich German Chocolate Ice Cream image

Coconut, toasted pecans, Baker's® sweet German chocolate, and whipping cream--enough said. To die for! I have made this many, many times--everyone loves it (unless they don't like coconut).

Categories     Desserts     Frozen Dessert Recipes     100+ Ice Cream Recipes     Chocolate Ice Cream Recipes

Time 4h50m

Yield 10

Number Of Ingredients 10

3 cups milk
6 ounces German sweet chocolate
1 ½ cups white sugar
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
2 large eggs, beaten
1 ½ cups heavy cream
1 teaspoon vanilla extract
½ cup shredded sweetened coconut
1 cup chopped pecans, toasted

Steps:

  • Heat milk, chocolate, sugar, flour, and salt in a saucepan over low heat. Cook until the chocolate melts, stirring occasionally. Stir about 1/2 cup of the hot chocolate mixture into the eggs, then stir the egg mixture into the saucepan. Increase heat to medium and continue cooking and stirring until the mixture is thickened, about 5 minutes. Pour chocolate egg mixture into a bowl. Cover and refrigerate until chilled, at least 2 hours. Stir in the heavy cream and vanilla extract.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Stir in the coconut and pecans. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

  • Lightly grease an 8″ square metal baking pan. Line the pan with two pieces of narrow parchment paper that are long enough to create handles. You’ll need the handles later to lift the cake out of the pan. One sheet of parchment should run north to south and the other will overlap going east to west. The parchment should cover a good bit of the bottom and sides of the pan, if there are any areas of the pan not covered by the parchment it will be okay because the pan is greased.

  • Black Forest Cake. Take a look at this delicious German recipe and imagine putting it down on the table for your next party. Made with a ton of cherries and chocolate cake and frosting, this cake is packed with flavor and made to go down with a glass of milk.
  • German Plum Dumplings. If you’ve never had a German plum dumpling then you are missing out. The delectable treats are made with a sweet dough wrapped around a filling of stewed plums and apricots,
  • Stollen. Stollen is a classic German Christmas food and, lucky for you, you can have it any time of the year. It has all the classic winter holiday flavors, like dried fruit, nuts, and spices.
  • Bee Sting Cake. This cake isn’t quite like others that you’ve had before because the dough is actually made from pastry cream. The cake has a soft, gooey inside with a crusty outside and a crunchy almond topping that adds a nice texture.
  • Peach Kuchen. A kuchen is a kind of cake that’s made with bread instead. The German version of this is called the peach kuchen which is perfect for summertime because of the fruit on top.
  • Blushing Maid. The blushing maid is an old recipe with pumpernickel bread and a lot of other ingredients that give this dessert a nice rounded flavor.
  • Vegan German Chocolate Cupcakes. Instead of going for a huge German chocolate cake, try serving up these vegan German chocolate cupcakes instead. These cupcakes are made with dark chocolate, cocoa powder, and coconut cream to give them a rich and fudgy flavor.
  • Kirschmichel Cherry Dessert. This used to be a way that Germans could use up their old bread and it’s the perfect dessert to cook for the family. Made with stale bread, cooked cherries, and then doused in kirsch syrup, the kirschmichel is as delicious as it sounds.
  • Strawberry Rhubarb Trifle. This strawberry rhubarb trifle is best served with fresh rhubarb instead of getting some that is in the can. The freshness is what makes this recipe so good and gives the dessert a nice tart flavor with a ton of sweetness from the strawberries.
  • German Apple Pancakes. The German pancake isn’t quite like the American version. It has a creamier consistency and is cooked in a skillet with apples or other fruit.
