BEER BREAD

Beer Bread image

Per Google.com, the #1 recipe for Beer Bread in the world! There are a few recipes for beer bread out there, but none as simple (and tasty!) as this one. You can even mix it in the baking pan for easy cleanup. This is sensational when served with soups or just as a snack, but don't expect it to be around very long when your family gets a taste of it! Be sure to use a sheet pan on the shelf below the pan to catch any excess butter that may drip during cooking.

Provided by Gerald Norman

Categories     Quick Breads

Time 1h3m

Yield 6-8 serving(s)

Number Of Ingredients 6

3 cups flour (sifted)
3 teaspoons baking powder (omit if using Self-Rising Flour)
1 teaspoon salt (omit if using Self-Rising Flour)
1/4 cup sugar
1 (12 ounce) can beer
1/2 cup melted butter (1/4 cup will do just fine)

Steps:

  • Preheat oven to 375 degrees.
  • Mix dry ingredients and beer.
  • Pour into a greased loaf pan.
  • Pour melted butter over mixture.
  • Bake 1 hour, remove from pan and cool for at least 15 minutes.
  • UPDATED NOTES: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.
  • Sifting flour for bread recipes is a must-do. Most people just scoop the 1 cup measure in the flour canister and level it off. That compacts the flour and will turn your bread into a "hard biscuit" as some have described. That's because they aren't sifting their flour! If you do not have a sifter, use a spoon to spoon the flour into the 1 cup measure. Try it once the "correct" way and you will see an amazing difference in the end product.
  • I have had many email from you kind folks about using non-alcoholic beverages instead of beer. That is fine to do but I highly recommend adding a packet of Dry Active Yeast or 2 teaspoons of Bread (Machine) Yeast so that you get a proper rise.
  • The final result should be a thick, hearty and very tasteful bread, NOT A BRICK! ;).
  • Thank you all for the incredibly nice comments and those of you who left a bad review - learn to sift sift SIFT! You will be amazed at the results you get.

AUTHENTIC GERMAN BREAD (BAUERNBROT)

Authentic German Bread (Bauernbrot) image

Here is a great recipe for authentic German Sourdough Bread. This bread tastes almost exactly like the bread we buy back home in Bavaria, Germany. There, to this day, they bake their bread in a very old stone oven in the middle of a small village, once every 2 weeks. They bake a whole bunch at once, and then you can buy it and freeze extras until the next baking day. It's the best German bread I know!

Time P2DT5h

Yield 20

Number Of Ingredients 8

1 ½ ounces compressed fresh yeast
1 quart warm water
2 tablespoons white sugar
8 cups all-purpose flour, divided
8 cups white rye flour
2 tablespoons salt
1 teaspoon white sugar
2 cups warm water

Steps:

  • First, make the sourdough starter. Crumble the yeast into a large bowl. Whisk in 1 quart of warm water and 2 tablespoons of sugar until dissolved. The water should be just slightly warmer than body temperature. Gradually whisk in 4 cups of flour, continuing to mix until all lumps are gone. Cover with a dish towel, and let sit for 24 hours at room temperature.
  • After 24 hours, stir well, cover, and let stand another 24 hours. It will be a thin, light-colored sourdough which is then ready to use.
  • In a large bowl, stir together the rye flour, remaining 4 cups of all-purpose flour, salt and sugar. Mix in the sourdough starter using a wooden spoon, then stir in 2 cups of warm water. I transfer the dough to a heavy-duty stand mixer to mix the first couple of minutes, then it can't handle the heavy dough and I start using my hands by turning the dough out onto a floured surface. A clean countertop works best. Knead the dough, adding a few tablespoons of water at a time if it is too stiff. Fold the dough over, pull it apart, whatever you can do to get it kneaded up good. Total kneading time should be 15 to 20 minutes to get a smooth dough. Place the dough in a large bowl, cover, and let rise until doubled, 1 to 2 hours.
  • When the dough has risen, scrape it out of the bowl and back onto a floured surface. Knead for about 5 minutes. This is important to activate the gluten. Shape into 1 or 2 long loaves. Place on baking sheets, and let rise for about 1 hour, or until your finger leaves an impression when you poke the bread gently.
  • Preheat the oven to 425 degrees F (220 degrees C). Bake the bread for about 45 minutes for 2 loaves, 1 1/2 hours if you made one big loaf. Don't worry if the crust is dark. The bread will be delicious and so will the crust. Cool completely before cutting. I always freeze half.

EASY BEER BREAD

Easy Beer Bread image

No yeast beer bread is one of those easy bread recipes that's almost too good to be true. Five ingredients, in one bowl, it takes about a minute to make!

Provided by Sue Moran

Categories     bread

Number Of Ingredients 5

3 cups all purpose flour
1/4 cup brown sugar
1 Tbsp baking powder
1 tsp salt
12 ounce bottle of beer

Steps:

  • Preheat oven to 375F. Spray a 9x5 loaf pan lightly and line with a piece of parchment paper.
  • When the oven has come to temperature, measure the flour, sugar, baking powder and salt into a mixing bowl and whisk well to combine. Break up any lumps in your brown sugar.
  • Add the beer to the bowl and whisk or stir to combine. Mix just enough to combine everything and there is no dry flour left. Don't worry about lumps.
  • Turn the batter into your loaf pan and spread out the top so the batter is even from end to end.
  • Bake for 45 minutes, or until a toothpick inserted in the center comes out without wet batter on it (moist crumbs are fine.)
  • Let cool for 10 minutes in the pan, then remove to a rack to cool.
  • I like to slice the bread while it is still warm, but don't slice it until you are ready to eat.

  • Combine all of the dry ingredients in the bowl of a stand mixer. (You can do this by hand if you prefer.) Then add the yeast mixture along with the buttermilk and beer. Attach the dough hook and knead on the bread setting (#2) for 10 minutes. Scoop the batter into a large non-reactive bowl, cover loosely with plastic wrap, and let it sit at room temperature for at least 8 hours, preferably longer, up to 24 hours (the longer the better for the whole grain berries to soften and for heightened sourdough properties. Also the longer it ferments the more liquid will be absorbed so less chances of a moist center after baking.)
  • Scoop the batter (it will be thick and gooey but not like regular bread dough) into a generously buttered 13x4x4 Pullman loaf pan and smooth the top to even it out. Sprinkle with oats. (Note: Baking this bread in a Pullman loaf pan yields those nice small, square slices of bread. But it also helps ensure that the center of the bread is fully cooked.) I always bake this without the lid on.

10 GERMAN BREAD RECIPES YOU CAN MAKE AT HOME

  • German Bauernbrot – Farmer's Bread. This bread's flavor is enhanced by the addition of 1/4 cup sourdough culture to the baker's yeast which is used to help it rise.
  • German Vollkornbrot – Whole Rye Bread. This bread is surprisingly easy to bake at home. It is made with 100 percent rye flour and rye berries with some sunflower seeds and fermented with sourdough.
  • German Seeded Bread. If you are looking for a dense, whole-grain loaf, this one is about the closest it comes to tasting like a German bakery bread. Based on Peter Reinhart's Whole Grain Bread book, it uses 100 percent whole grains, along with pumpkin, sunflower, and sesame seeds for a dense, moist loaf.
  • German Roggenbrot – Sourdough Rye Bread. This weizenmischbrot or light rye bread is made with 45 percent rye flour and 55 percent white flour with an overnight sponge and sourdough starter.
  • German Fladenbrot – Turkish Flatbread. Although this is not a German bread, it is found in Turkish stores and kiosks all over Germany. Fladenbrot is a flat white bread, covered with nigella seeds, and has a particular taste not found elsewhere.
  • German Brezeln – Soft Pretzels. Now you can have authentic brezeln or pretzels outside of Germany with this recipe. The dough is easy to make and the only tricky step is the lye bath, using food-grade lye.
  • German Schwarzwaelder Kruste – Black Forest Bread. This bread is a 20 percent rye mischbrot, or mixed-flour, sourdough bread, very common in southern Germany.
  • German Sweet Breads and Rolls. Sweet fillings like jams and fruit are very common in German sweetbreads, and most are flavored with vanilla and lemon zest.
  • German Brotchen and Other Rolls and Buns. For breakfast or brunch, there's no treat like fresh German hard rolls known as brotchen. Also known as wecke or semmel, they are to Germany what croissants are to France.
  • German Haferflockenbrot – Oatmeal Bread Two Ways. If you are a fan of oatmeal bread, this is the recipe for you. You can enjoy it made with white flour combined with whole-wheat flour or with 100 percent whole-wheat flour.
