Rustic German Apple Cake with Marzipan, Cranberries and Advocaat Liqueur image

This rustic German Apple Cake with Marzipan, Cranberries and Advocaat Liqueur is a cherished family recipe and my absolute favourite apple cake for all seasons! Try this easy German Cake with your favourite kind of apple!

1 kg apples (of your choice)
125 g butter (at room temperature)
4 eggs
175 g flour
1 tsp baking powder
175 g sugar + 2 tbsp
200 g cranberries (thickened from a can)
250 g marzipan
200 g full-fat sour cream
1 lemon (juiced and zested)
4 tbsps advocaat liqueur
1 tsp vanilla extract
15 g cornstarch
100 g slivered almonds

Steps:

  • Preheat the oven to 150 Celsius and line a 9-inch springform pan with parchment paper
  • Peel, core and cut the apples into quarters, then half the quarters lengthwise. Mix the apples with the lemon juice and set aside.
  • Rub the lemon zest into the sugar with your fingertips and cream it with the butter until white and fluffy. Add 2 eggs and stir to incorporate.
  • Mix the flour, baking powder and a pinch of salt and fold into the wet dough, stirring as little as possible.
  • Pour the dough into our baking pan, and cover with apples and dollops of cranberries. Push the apple slices into the dough ever so gently.
  • Bake the cake for about 20 minutes.
  • Meanwhile, grate the marzipan, and mix with the sour cream and the remaining 2 tbsp of sugar. Add the remaining 2 eggs, the cornstarch, vanilla and the advocaat. Whisk until smooth and pour onto the prebaked apple cake. Sprinkle the slivered almonds on top of the cake followed by 2 tbsp of sugar and 2 tbsp of grated butter.
  • Bake the German Apple Cake for 45 to 50 minutes until golden brown. If the cake browns too quickly you can cover it with some aluminum foil.
  • Serve the German apple cake with a dusting of powdered sugar and whipped cream!

1 teaspoon white sugar
1 teaspoon ground cinnamon
2 teaspoons raisins
1 teaspoon crushed toffee candy
4 large Red Delicious apples, cored

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
  • In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
  • Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.

100g marzipan
100g fresh or frozen cranberries
2 tbsp flaked almonds
2 tbsp clear honey
4 cooking apples (Bramley's are best)
6 tbsp water
custard or clotted cream to serve

Steps:

  • Chop marzipan into small chunks and mix with the cranberries, flaked almonds and honey.
  • Core apples and mark a line around the circumference of each using a sharp knife. Set the apples in a shallow ovenproof dish that fits them snugly and stuff the cavities with the cranberry mix.
  • Pour the water into the dish. Bake at fan 170C/conventional 190C/gas 5 for 30-40 minutes until the apples are tender. Cool for 10 minutes before serving with custard or clotted cream.

4 large firm tart apples (such as Jonagold, McIntosh, or Granny Smith)
3 tablespoons red currant jelly
1/4 cup fresh cranberries, halved
1 teaspoon ground cinnamon, divided
1/4 teaspoon ground nutmeg
1/4 cup german marzipan (chopped or grated)
1 (4 ounce) container sour cream
2 tablespoons confectioners' sugar

Steps:

  • Using an apple corer, remove each apple's core.
  • Use the corer to carve out a wider hole.
  • Using the tip of a paring knife, score around the middle of each apple (this will help them keep their shape while baking).
  • Preheat oven to 325°F Place currant jelly in a saucepan, and cook on low heat, letting it thin to a syrupy consistency.
  • Stir in cranberries, letting them barely cook for a minute or so.
  • Stir in 1/2 teaspoon cinnamon and nutmeg.
  • Let mixture cool and become firm.
  • Press a bit of marzipan into each apple cavity.
  • Spoon in some cranberry mixture.
  • Add more marzipan, then more cranberry mixture and so on until cavities are filled, letting cranberry mixture be on top.
  • Bake 45 minutes to 1 hour, basting every 15 minutes with pan juices, until skins are lightly wrinkled and flesh is soft.
  • Stir together sour cream, confectioners' sugar and remaining cinnamon; serve this mixture alongside apples.

1 tablespoon orange marmalade
2 tablespoons unsalted butter, cut into small pieces

This is from "Bavarian Cooking". I haven't made it yet. For the wine, the German Forum recommends chardonnay, followed by pinot grigio. Riesling might be too sweet.

6 -8 apples (uniform size)
2 ounces marzipan
1 ounce confectioners' sugar
1 tablespoon rum (or Arrack)
2 tablespoons candied ginger, chopped
2 tablespoons sliced almonds (sliced)
1 -1 1/2 cup white wine
1 ounce butter

Steps:

  • Wash the apples; core with apple corer. Remove stem, crown and core, but not the bottom.
  • Knead marzipan with sugar and Arrack (or rum) until it crumbles. Add the ginger. Mix.
  • Fill apples with the mixture. Place in ovenproof dish. Pour wine around apples. Sprinkle apples with almond flakes and dot with little pieces of butter.
  • Cover with foil. Bake at 420 for about 1/2 hour (time depends on kind of apple use).
