GERMAN APPLE PANCAKE

I love this pancake! Good apples to use would be Granny Smith, Jonagold or McIntosh. If you have access to heirloom apples, choose some that have some tartness to them. This recipe is adapted from "The Pancake Handbook".

GERMAN BAKED APPLE PANCAKE

German Baked Apple Pancake image

This is a pancake-just one-you bake, and it's ready all at once for everyone, instead of a serving at a time. It can be a special-day breakfast for two or three people, a light, late supper, or a beautiful, warm dessert for four to six people. You might like it more than apple pie.

Provided by Olha7397

Categories     Breakfast

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 13

3 large eggs
3/4 cup milk
3/4 cup white flour
1/2 teaspoon salt
1 1/2 tablespoons butter (unsalted preferred)
1/2 cup thin sliced apple (optional)
1 lb tart fresh apple (Pippin are great)
1/4 cup melted butter
1/4 cup sugar
ground cinnamon, and
nutmeg
2 tablespoons melted butter (optional)
powdered sugar

Steps:

  • Preheat the oven to 450 degrees. Beat together the eggs, milk, flour, and salt until very smooth. Add some very thinly sliced apples if desired. In a heavy 12-inch skillet, melt about 1 1/2 Tablespoons butter. As soon as it is quite hot, pour in the batter and put the skillet in the oven. After 15 minutes, lower the oven temperature to 350 degrees and continue baking for another 10 minutes. The pancake should be light brown and crisp.
  • During the first 10 to 15 minutes of baking, the pancake may puff up in large bubbles. If it does, pierce it thoroughly with a fork or skewer.
  • While the pancake is baking, prepare the apple filling. Peel and thinly slice a pound of apples. Saute them lightly in 1/4 cup butter and add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. The apples should be just tender, not too soft. About 8 to 10 minutes of cooking over a medium flame should be plenty. (The filling can be prepared ahead and re-heated just before serving.).
  • When the pancake is ready, slide it onto an oval platter, pour the apple filling over one side, and fold the other side over. A little melted butter can be poured on it you choose, and the whole thing carefully sprinkled with powdered sugar through a sieve. Serve it at once, slicing pieces off crosswise.

GERMAN APPLE PANCAKES

Sweet, simple, rustic, puffy oven baked German Apple Pancakes. Apples and a simple batter transform into a magical breakfast treat.

Provided by Amanda

Categories     Breakfast

Time 35m

Number Of Ingredients 10

4 apples (I use 4 medium/large apples. Use 5 if your apples are on the smaller side.)
1/2 cup 1 stick - softened butter - divided
1/2 cup - brown sugar - packed
1 teaspoon - cinnamon
1 cup - all purpose flour
6 eggs
1 cup - milk
1/2 teaspoon - vanilla
3 tablespoon - sugar
Powdered Sugar (optional)

Steps:

  • Preheat oven to 425°. Grease/spray a 13x9 baking dish.
  • Core, peel and slice apples.
  • In a medium bowl combine apple slices, 1/4 cup butter (half the stick), brown sugar and cinnamon. In the microwave, heat on high for 3-5 minutes till apples are tender - stirring twice during cook time. Alternately you can do this stovetop in a skillet .
  • Mix apple mixture well and spoon evenly into baking dish.
  • In a medium/large bowl - combine remaining ingredients. Mix until well blended. Pour or spoon evenly over apple mixture.
  • Bake for 25 - 28 minutes. The middle should be set and the pancake should be puffed up and edges nicely browned.
  • Let sit for a few minutes before cutting. I think this pancake is perfect served as is - but you could sprinkle with a bit of powdered sugar. Enjoy : )

GERMAN APPLE PANCAKE

German Apple Pancake image

Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.
