Provided by Julia Foerster

Categories     Dessert

Time 1h15m

Number Of Ingredients 11

4 cups all-purpose flour (divided )
1 1/2 cups butter (divided)
1/3 cup granulated sugar
1/2 tsp vanilla extract
1 large egg
5 apples
1 1/3 cup applesauce (sweet or unsweetened)
1 tsp lemon zest (freshly grated)
1 tbsp lemon juice
1/2 tsp cinnamon
1/2 cup granulated or brown sugar

Steps:

  • Lightly grease a 9x13-inch baking pan and preheat your oven to 350F (180C).
  • In the bowl of a stand mixer fitted with the paddle attachment, add 3/4 cup (1.5 sticks) butter, 1/3 cup sugar, vanilla extract, 2 cups all-purpose flour and egg. Beat until everything is incorporated. Spread the dough onto the baking sheet. Put the baking sheet in the fridge while you make the apple and crumble layer.
  • Leave the remaining 3/4 cup (1.5 sticks) butter on the kitchen counter to get to room temperature.
  • Peel and core the apples and chop them into small chunks. Mix the apple chunks with the lemon zest, lemon juice, cinnamon and apple sauce. Set aside.
  • For the crumb topping: In the bowl of a stand mixer fitted with the paddle attachment mix the remaining soft 3/4 cup (1.5 sticks) butter with 2 cups of flour and 1/2 cup sugar (see Note 4). The mixture will be crumbly.
  • To assemble the cake, spread the apple mixture onto the dough layer. Then use your fingers to crumble the crumbs on top. Press some crumbs together to form bigger crumbs, you don't want the crumbs to be too fine.
  • Bake for 45 minutes until the crumbs are lightly golden.
  • Let the cake cool off completely. It will be a little bit soft while hot.
  • Serve with whipped cream or vanilla ice cream!

1 pinch ground cinnamon
7 ounces unsalted butter, at room temperature
1 cup white sugar
3 teaspoons vanilla sugar
1 egg
2 cups all-purpose flour
3 ½ teaspoons baking powder

Time 1h5m

Number Of Ingredients 11

500 g (17.6 oz/ 4 2/3 cups) plain flour (all purpose flour)
200 g (7 oz) butter ( room temperature)
100 g (3.5 oz/ ½ cup) sugar
2 teaspoons baking powder
2 medium eggs Germany, large US
1 teaspoon vanilla extract ((SEE NOTES))

1 teaspoon lemon juice (freshly squeezed)
50 g (1.8 oz/ ¼ cup) sugar
50 g (1.8 oz) raisins (SEE NOTES)

  • Start off by lining a 26 cm (10 inch) spring-form (or cake tin with removable base) with a parchment paper at the bottom and grease the sides with butter and dust them with breadcrumbs.
  • In a bowl combine flour and baking powder and mix well using a spoon. Add the eggs, sugar, butter and vanilla extract. Using your hands mix all the ingredients together to form a firm dough.
  • Divide the cake base into 2 doughs: 2/3 and 1/3. Place the 2/3 dough into the prepared cake tin. Using your hands press it nicely such that the bottom of the cake tin is covered. Make the dough a bit high on the sides as well. Keep the remaining dough for later.

  • Pour the filling into the cake base. Crumble the remaining dough all over the top of the apples and bake for 50 minutes.
  • Remove the cake from the oven and let it cool for a few minutes. Remove the cake from the cake tin and enjoy.

GERMAN APPLE CRUMBLE

German Apple Crumble image

Got this from my mother-in-law in Germany. I had to convert it from German so I took some liberties. I was confused at first - I wasn't sure if the ingredients would combine correctly, but I just had to work it out. :-) Still, it came out so good! Give it a try PS You can use plums instead of apples too.

GERMAN APPLE CAKE (APFELKUCHEN)

German Apple Cake (Apfelkuchen) image

With a hint of sweet and delicious crumble on top, this German Apple Cake is the perfect dessert. Made from just a few simple ingredients like apples and cinnamon, this fancy looking crumble cake is actually fairly easy to make!

Provided by Recipes From Europe

Categories     Desserts

Time 1h10m

Number Of Ingredients 13

1/2 cup butter (at room temperature)
2/3 cup sugar
1 teaspoon vanilla extract
1 medium-sized egg
2 cups all-purpose flour
2 teaspoons baking powder
a pinch of salt
5 medium-sized apples
1 1/2 teaspoons cinnamon
1/2 cup butter (at room temperature)
2/3 cup sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease and flour a 9.5-inch cake springform pan. You can also line the bottom with parchment paper.
  • Beat the butter, sugar, and vanilla extract with your hand mixer in a large bowl. Add the egg and beat again.
  • In a separate bowl, combine the flour, baking powder, and a pinch of salt. Add the mixture to the liquid ingredients in small increments while using your hand mixer (and later your hands) on a low setting to avoid the flour from making a mess. You'll have to stop using your mixer about halfway through since the dough will become quite sticky. Just use your hands for the last bit and make sure not to overmix! Stop once everything is well combined and there are no lumps.
  • Take the dough and roll it out with a rolling pin until it is slightly bigger than your springform pan (you'll need it for the edge/crust!). Make sure to put some flour on the surface and on the rolling pin first to avoid unnecessary sticking. Alternatively, you can also flatten the dough with your hands, then place it directly in the springform pan and form it to the bottom of the pan and up the sides (for crust). Make sure the dough has an even thickness and also make sure you have an approximately 1.5 inches high edge along the removable ring part of the springform pan (this is the crust).
  • Peel the apples, remove the cores, and cut them into approx. 1/4-1/2 inch-sized cubes. Place the apple cubes into a bowl, add the cinnamon and mix well. Now evenly place the apple cubes over the cake base.
  • For the crumbles, mix butter, sugar, vanilla extract, and flour using your hands (not your mixer!). The dough should be quite crumbly but the flour should be fully mixed in with the other ingredients (there should not be a lot of white flour spots). This might take a couple of minutes. If your dough feels too soft/sticky, add slightly more flour until it reaches the desired consistency (this shouldn't happen though). Rip the dough into small pieces and place it on top of the apples.
  • Bake the cake for approximately 50 - 60 minutes. Since every oven is different, your baking time might vary slightly. Once the cake is done baking, remove it from the oven and let it cool in the springform pan. Remove the cake from the pan once it has cooled sufficiently.

  • Whisk the flour, salt, sugar, and dry yeast together in a large bowl (you can also use the bowl of a stand mixer).
  • While waiting, make the crumble topping. In a bowl, mix the flour, sugar, cinnamon, and cold vegan butter pieces using your hands. Mix them together until crumbles form. Store in the refrigerator until ready to use so it won’t soften.
  • De-core the apples and cut them into thin slices. Place them in a bowl and drizzle with lemon juice so they won’t get brown. Set aside and preheat the oven to 392°F (200°C).
  • Once the dough has risen, tip onto a work surface and divide it into 8 pieces (or less/more, depending on your preferred sizes). Sprinkle flour lightly in the surface and roll out each piece into a round or oval-shaped flatbread. Place them on a baking tray lined with parchment paper, leaving enough space between each piece.

  • Preheat the oven to 390°F / 200°C and grease a Ø 24 cm round springform pan with butter and line the bottom with parchment paper.NOTE: You can also use the oven’s fan-force at 360°F / 180°C as it will make a more crispy and caramelized crumble topping. Keep an eye on it though to make sure it doesn’t brown too much.
  • In a large, deep skillet, melt 1/2 tablespoon butter over medium-high heat. Add the apples and stir, then add a splash of apple juice (not too much otherwise the base will be soggy later). Sauté for a few minutes; stirring occasionally. Remove from heat and set aside to cool.
  • Whisk the flour, sugar, and baking powder together in a large mixing bowl until combined. Cut the butter into dry mixture until it resembles coarse crumbs.TIP: I like to pop the butter in the freezer until it’s hard and then grate the frozen butter through the large holes of a box grater directly into the dry ingredients and then let my fingertips do the rest of the work. Alternatively, use two knives (or a pastry blender) to cut the butter into the flour until you have little tiny bits of butter. Then take over and crumb the mixture by rubbing it together with your fingers.
  • Sprinkle about 1/2 of the crumble mixture over the bottom of the prepared spring form pan. Press it down and up the sides of the pan. Transfer to the preheated oven and bake for about 5-6 minutes (pre-baking is optional, but helps avoid a soggy base. IMPORTANT: keep an eye on it, as it browns quite quickly).
