Steps:
- Sprinkle quail with salt and pepper.
- Brown quail on both sides in butter in a large skillet over medium heat.
- Dissolve bouillon cube in boiling water; add to skillet.
- Cover, reduce heat and simmer for 40 minutes or until tender.
- Remove quail from skillet and set aside.
- Measure pan drippings; add water, if necessary to measure one cup.
- Combine flour and 2 Tbsp water; gradually add pan drippings.
- Cook over low heat, stirring constantly, until thickened and bubbly.
- Return quail to skillet; heat thoroughly.
- Remove quail to a serving platter, and serve with gravy.

- Prepare the dredge: In a medium bowl combine flour and seasonings together. In a separate bowl beat one egg, mix together with buttermilk and water.
- Dredge each quail piece in the flour mixture, then coat in buttermilk mixture , then dredge once more in the flour mixture. Set the dredged quail pieces aside and allow to come to room temperature, about 25 minutes.
- In a medium skillet add vegetable oil for frying. I added about 1/2″ of oil to my cast iron skillet. Heat the oil over medium heat until oil is hot for frying.
- Add the quail pieces in batches to avoid over crowding the pan. Fry on each side about four minutes until golden brown. Remove cooked pieces and set on a paper towel lined pan or plate to allow excess oil to drain.
