HOMEMADE PEACH TEA
This delicious peach iced tea tastes eerily similar to a famous Italian chain restaurant's peach tea. Serve tea over ice and garnish with peach slices, if desired.

Steps:
- Mix 1 cup water, sugar, and peach slices together in a saucepan; bring to a boil. Reduce heat to medium and simmer, crushing peach slices as you stir, until sugar is dissolved, about 5 minutes. Remove saucepan from heat, cover, and allow peaches to infuse syrup, about 30 minutes. Strain to remove peach slices.
- Bring 6 cups remaining water to a boil in a separate pot. Remove from heat, add tea bags, cover, and steep for about 5 minutes.
- Remove tea bags from the pot, pour in peach syrup, and cool to room temperature. Refrigerate until ready to serve.

- In a medium pot, boil the water, add the Lipton Tea bags, and allow to steep for about 5-7 minutes. Remove from heat
- In a large pitcher, pour the homemade peach simple syrup, ice, and a few peach slices (optional)
- Pour the brewed tea in the large pitcher and stir.
- Pour over ice and garnish with a peach slice!
- Enjoy!

- Boil one quart of water in a large pot. Add tea bags and steep for 3-5 minutes. Remove tea bags and discard.
- While tea is steeping, prepare simple syrup: in a separate small saucepan, combine one cup of water and one cup of sugar and bring to a boil. Stir until sugar is dissolved. Remove from heat and allow to cool.
- Pour simple syrup into pot with tea and stir. In a heat-safe pitcher, combine the tea with pureed peaches, and one quart of cold water. Refrigerate until ready to use.
- Serve tea over ice and peach slices and ENJOY!

HOMEMADE PEACH ICED TEA

- Bring 3 cups (750ml) water and the sugar to a boil in a pot. Add the peaches and vanilla bean (including the seeds). Simmer over medium heat for about 30 minutes.
- Discard the vanilla bean. Pour the peaches and syrup into a blender and puree until smooth. Strain the peach puree through a sieve into a pitcher.
- Bring 4 cups (1 liter) water to a boil in a small saucepan. Remove from the heat, add the tea and steep according to the package directions. Strain to remove the tea leaves, then add the tea to the pitcher with the peach puree. Stir to combine. Refrigerate until cold.
- The pulp from the fruit may have separated from the tea during chilling, so be sure to stir it before serving. Pour over ice cubes in tall glasses and garnish with vanilla beans.
- Cook's Note: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

- In a large saucepan, add peaches, water and sugar. Bring to a simmer and cover until peaches are soft, about 15 minutes. Mash the peaches as they soften to extract more flavor, about 10 minutes longer.
- Using a mesh strainer placed over a large pot, strain the peach mixture. Discard all that’s left in the strainer. Set the peach mixture to the side while you make the tea.
- To make the tea, bring 4 cups of water to a boil in a large pot then turn off the heat. Place the tea bags in the water and steep for 15 minutes.
- Add the tea to a large pitcher and stir in the peach syrup. Taste the tea. If it is too sweet, add another 2-4 cups one cup at a time, tasting between each addition to get the right flavor. I usually add about 2 cups, but you may want it less or more sweet. If you are going to be putting ice in the pitcher, add less water to account for the ice melting. Stir well and refrigerate for at least an hour or until cold.
