Steps:
- Wash the peanuts and place them in a pot. Add salt and water. Bring the water to a boil.
- Let the water boil for 3 hours.
- Taste the peanuts, if they are not salty enough for your taste add more salt. If you would like the peanuts to be softer, return the water to boil and cook until they reach the consistency you desire.

BOILED PEANUTS

- Wash the peanuts in cool water until the water runs clear. Soak in cool water for 30 minutes to loosen any remaining dirt.
- Drain and rinse the peanuts. Add the peanuts to a 12-quart pot along with the salt and 3 gallons of water. Stir well. Cover and cook on high for 4 hours. Check the texture of the peanut at this point for doneness. When done, boiled peanuts should have a similar texture to a cooked dry bean. It should hold its shape, but not crunch when bitten. Add more water throughout the cooking process, if needed. If necessary, continue cooking for 3 to 4 hours longer.
- Drain the peanuts and store in a covered container in the refrigerator for up to 1 week.
- *Cook's note: The cooking time can vary greatly depending on how fresh the peanuts are. The fresher the peanut, the less time it will take to cook.
GEORGIA BOILED PEANUTS

- 1. Throw your "raw" peanuts into a stock pot. Fill with water enough to cover peanuts. Stir in salt. The peanuts must be raw! If they're saltier then you like just add some water to tune that down some
- 2. That's it y'all! Bring your water to a boil. Once it's boiling turn to simmer and let it go for the rest of the day. I will replenish water periodically and bring back to a boil and simmer again.
- 3. It's best to start them early in the morning because to get them where they need to be you're gonna need some time! They are ideal when they are just firmer than cooked beans.
- 4. You can crack them open with your fingers or with your teeth. Suck that juice out and enjoy that peanut! Throw the shells out of course! ENJOY YALL!

Steps:
- Place the raw peanuts in a sink of water and swirl them around to remove any dust and dirt.
- Place in a colander, rinse again and let drain.
- Fill a large stockpot about 3/4's full of water.
- Add the washed raw peanuts.
- Place stockpot on stove and turn the heat to Medium-High, let come to a rolling boil.
- Cover the pot, reduce the heat to Medium and let boil for about 3 hours.
- Add the salt, stir. You can also add hot water if needed at this point.
- Taste the peanuts about every 30 minutes from here on until cooked to desired doneness.
- Remove from heat and let cool.
- Serve warm and enjoy.

- "Green" peanuts are not green; they are just young, raw peanuts. These peanuts are usually dug by hand several weeks before the farmer moves through the field with the machines that dig the peanuts. Here in eastern North Carolina, these green peanuts are ready late August or early September.
- Wash the peanuts, still in the shells, several times until the water has no grit in it. Pick over and remove any bad peanuts and discard.
- Put the peanuts still in shells into a large cooking pot. Cover with water at least 2 inches above the peanuts. Add the salt and stir.
- Bring to a boil. Lower heat and boil slowly for 1-3 hours, depending on how mature or old the peanuts are. If the nuts are really young and pink, it will only take about 1 hour of cooking. If they are older, it can take up to 3 hours. You might also have to add water to keep the water level above the peanuts. Keep cooking until the peanuts are soft inside. Cooking time varies according to how old the peanuts are.
