CARAMELIZED HAZELNUT PRALINE CHOCOLATE MOUSSE

Caramelized Hazelnut Praline Chocolate Mousse image

Provided by Dini from Giramuk's Kitchen

Number Of Ingredients 6

2.5 oz / 70 g toasted
3.5 oz/ 100 g sugar (plus 2 tbsp of sugar separated)
7 oz/ 200 g bittersweet chocolate (or a dairy-free dark chocolate, finely chopped)
4 eggs (separated, at room temperature (egg whites in a clean dry bowl))
1/4 cup of cream or coconut cream (dairy-free option)
1/2 tsp salt flakes (add 1 tsp if you'd like this to be a salted chocolate mousse - It tastes FANTASTIC!)

Steps:

  • In a large pan, sprinkle the 3.5 oz/ 100 g sugar evenly on the bottom of the pan.
  • Heat the pan on low-medium heat until the sugar around the edges starts to melt. Use a silicone or rubber spatula to move the sugar around (the sugar will start to clump and that is okay)
  • When the sugar has mostly melted, add the roasted hazelnuts and keep stirring the caramel to make sure the sugar caramelizes evenly, while also coating the hazelnuts.
  • Continue to cook while stirring the sugar/nuts until the sugar turns a dark amber colour (that is just before the caramel burns - so DO NOT move away from the stove because this can happen quickly, and PLEASE be careful as the sugar is very very hot)
  • Remove from heat immediately and pour the sugar and nuts onto a parchment paper and let it cool completely. When the sugar has cooled down, break the caramel into smaller pieces so that they can be chopped in the food processor.
  • In the food processor, process the praline mix in pulses first until you crush the nuts. Then process the sugar/nuts on high until you get a paste (you may have to stop and scrape the bowl a couple of times)
  • In a heat proof bowl place the praline paste and egg yolks and mix them well with a whisk or hand mixer for a few minutes, until well combined.
  • Add the chopped chocolate and melt the chocolate, egg yolk and praline paste together over a saucepan of simmering water, until the chocolate is melted and is smooth.
  • Let this cool for about 10 - 15 minutes and stir in the cream/coconut cream. With a beater, whisk until the chocolate mix is lighter in colour and a little thicker.
  • In a clean metal bowl (free of any residue), place the egg whites and 2 tbsp of white sugar. To make the egg white food-safe, whisk the egg whites over a saucepan of simmering water, and whisk on high until you form stiff peaks (with a clean, dry beater).
  • Fold in 1/4 of the egg white into the chocolate mix. Add the rest of the egg whites and fold it in until just combined.
  • Pour into individual serving glasses and chill for a few hours until set. Serve as is, or with a dollop of fresh cream or creme fraiche.

CHOCOLATE CARAMEL MOUSSE

Chocolate Caramel Mousse image

You can look at this as chocolate mousse stiffened by caramel or as a perfect caramel enriched by chocolate. Either way it is so rich, thick, gooey and creamy, so childish in a way, that it almost requires something completely sophisticated to offset it. Orange confit perhaps. Of course it can be eaten by itself, too.

Provided by Mark Bittman

Categories     custards and puddings, dessert

Time 4h45m

Yield 16 servings

Number Of Ingredients 4

1 cup sugar
5 tablespoons butter, cut into bits
3 cups heavy cream
8 ounces high quality unsweetened or bittersweet chocolate chips or chunks, about 1 1/2 cups

Steps:

  • Put sugar in a heavy pan, and turn heat to medium. When sugar warms and begins to liquefy, add 1/2 cup water. Cook, stirring occasionally with a wooden spoon, until mixture bubbles, then becomes foamy, then dry again. Keep cooking until it liquefies again, stirring often and breaking up any chunks that form. When it is all dissolved and brown, remove from heat, and stir in butter a bit at a time. Standing back to avoid spattering, add 1 cup cream, then stir until blended. Let sit until cool enough to touch.
  • Meanwhile beat remaining cream until it holds soft peaks; refrigerate. Melt chocolate over very low heat or in a double boiler or microwave.
  • Mix melted chocolate into caramel. Add 1/3 of the whipped cream to caramel, and stir to combine. Add remaining whipped cream and gently fold, just until combined. Pour into a bowl and refrigerate until set, about 4 hours.
  • Scoop mousse with a spoon dipped in a hot water. Serve alongside a piece of orange confit.

Genoise Torte with Chocolate- and Praline-Caramel Mousses image

For a decadent chocolate torte, bake genoise in a sheet pan and quarter it -- then layer the pieces with two kinds of mousse and top with chocolate shards.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 10

1 1/2 teaspoons unflavored gelatin
1 1/4 cups sugar
2 1/4 cups heavy cream
1/4 cup (1/2 stick) unsalted butter, cut into 4 pieces
2 ounces unsweetened chocolate, finely chopped
Almond Praline for Genoise Torte
3 tablespoons cognac or brandy
Simple Syrup
Genoise(12-by-16-inch cake), cut crosswise into 4 rectangles
3/4 pound bittersweet chocolate, scraped with a large knife (about 1 cup)

Steps:

  • Sprinkle 1 teaspoon gelatin over 2 tablespoons water in a heatproof bowl. Sprinkle remaining 1/2 teaspoon gelatin over 1 tablespoon water in another heatproof bowl. Let soften about 3 minutes.
  • Bring sugar and 1/2 cup water to a boil in a medium saucepan over high heat. Swirl pan to dissolve sugar. Wash down sides of pan with a wet pastry brush to prevent crystals from forming. Boil until sugar turns dark amber, about 10 minutes. Remove from heat. Slowly add 1 cup cream and the butter, stirring until butter has melted. Put 2/3 cup caramel into a medium bowl; set aside. Stir remaining caramel and the unsweetened chocolate in another medium bowl; set aside.
  • Set 1 bowl of softened gelatin over a pan of simmering water, and stir until gelatin has melted. Repeat with remaining bowl of gelatin. Pour larger batch of gelatin into plain caramel. Pour smaller batch of gelatin into chocolate caramel. Let cool completely, stirring occasionally, 10 to 12 minutes.
  • Whisk remaining 1 1/4 cups cream in a medium bowl until stiff peaks form. Fold one-third of the whipped cream into plain caramel mixture; fold remaining whipped cream into chocolate-caramel mixture. Refrigerate the mousses until slightly firm, about 10 minutes. Stir almond praline into plain caramel mousse.
  • Stir Cognac and simple syrup in a small bowl. Assemble torte: Place 1 cake rectangle on a platter; brush with one-quarter of the Cognac syrup. Spread with half the chocolate-caramel mousse. Top with another cake rectangle; brush with one-quarter of the syrup. Spread with praline-caramel mousse. Refrigerate 10 minutes to set. Top with another cake rectangle; brush with one-quarter of the syrup. Spread with remaining chocolate-caramel mousse. Top with remaining cake rectangle; brush with remaining syrup. Clean edges with an offset spatula. Refrigerate until firm, about 30 minutes. Sprinkle with bittersweet chocolate shavings.

DOUBLE CHOCOLATE MOUSSE TORTE

Double Chocolate Mousse Torte image

Provided by Mel

Categories     Desserts

Time 7h10m

Number Of Ingredients 19

8 ounces bittersweet or semisweet chocolate (chopped (see note))
1 cup salted butter
1 cup granulated sugar
5 large eggs
1 tablespoon vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour
2 tablespoons unsweetened natural or Dutch-process cocoa powder
5 tablespoons hot water
8 ounces bittersweet or semisweet chocolate (chopped fine)
1 tablespoon salted butter
1 1/2 cups cold heavy cream
1 to 4 tablespoons granulated sugar (depending on desired sweetness)
1/2 teaspoon vanilla extract
pinch of table salt
3/4 cup cold heavy cream
2 tablespoons powdered sugar
Grated chocolate (for garnish (optional))
2 cups fresh raspberries (or other fresh fruit)

Steps:

  • For the cake, preheat the oven to 325°F.
  • Lightly grease a 9- or 10-inch springform pan; dust with sugar (optional).
  • Combine the chocolate and butter in a saucepan or in a microwave-safe bowl. Melt over low heat (on the stovetop) or on 50% power in the microwave at 1-minute increments, stirring in between.
  • Cool the mixture to lukewarm. Whisk in the sugar to combine.
  • Add the eggs one at a time, blending well after each addition. Mix in the vanilla and salt. Add the flour and mix until just combined.
  • Pour the batter into the springform pan. Bake until the cake just rises in center (a tester inserted into center will not come out clean) and springs back lightly to the touch, 30-35 minutes.
  • Cool completely in the pan (the center of the cake may fall slightly). Cover and chill while making mousse.
  • For the mousse, whisk together the cocoa powder and hot water in a small bowl; set aside.
  • Melt the chocolate and butter together in a microwave-safe bowl on 50% power, stirring often, until smooth (don't overheat!). Whisk the cocoa/water mixture into the melted chocolate until smooth (if there are little lumps, you can press the mixture through a fine mesh strainer into a clean bowl). Let it cool to room temperature (just slightly lukewarm is fine, too, as long as it isn't warm or hot).
  • In a medium bowl with an electric mixer, whip the cream, granulated sugar, vanilla, and salt at medium speed until the mixture begins to thicken, about 30 seconds. Increase the speed to high and whip until soft peaks form when beaters are lifted (I often use my Blendtec blender to whip cream - only takes a few seconds).
  • Using a rubber spatula, fold 1/3 of the whipped cream into chocolate mixture to lighten. Fold in the remaining whipped cream until no white streaks remain.
  • Spoon the mousse over the cooled cake. Cover and refrigerate for at least 6 hours or up to 1 day.
  • Run a sharp knife around the edge of the pan to loosen the torte if it hasn't pulled away from the sides of the pan while cooling.
  • Release the springform pan sides. Transfer the torte to a platter, if desired (often, I just leave it on the base of the springform pan).
  • For the whipped cream topping, using an electric mixer, beat the cream and powdered sugar in a medium bowl until soft peaks form. Spread the whipped cream over the torte. Dust with grated chocolate, if desired.
  • Top with raspberries. Chill for up to an hour or serve immediately.

MILK CHOCOLATE MOUSSE CAKE WITH HAZELNUT CRUNCH CRUST

Milk Chocolate Mousse Cake with Hazelnut Crunch Crust image

Categories     Cake     Milk/Cream     Mixer     Chocolate     Nut     Dessert     Bake     Christmas     Vanilla     Frangelico     Winter     Hazelnut     Double Boiler     Bon Appétit     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 12 servings

Number Of Ingredients 19

Cake
1/4 cup (1/2 stick) unsalted butter
1 teaspoon vanilla extract
1/3 cup sifted all purpose flour (sifted, then measured)
1/3 cup sifted unsweetened cocoa powder (preferably Dutch-process; sifted, then measured)
4 large eggs
2/3 cup sugar
Hazelnut crunch
5 ounces imported gianduja bars (hazelnut-flavored milk chocolate, such as Callebaut), chopped
1 cup crisp rice cereal
1/3 cup hazelnuts, toasted, husked, finely chopped*
Mousse
10 ounces imported gianduja bars (hazelnut-flavored milk chocolate, such as Callebaut), chopped
1 1/4 cups chilled heavy whipping cream
1/8 teaspoon (scant) salt
3 tablespoons water
3 tablespoons Tuaca (sweet citrus-flavored liqueur) or Frangelico (hazelnut-flavored liqueur)
Additional unsweetened cocoa powder
Powdered sugar

Steps:

  • For cake:
  • Position rack in bottom third of oven and preheat to 350°F. Line bottom of 9-inch-diameter cake pan with 2-inch-high sides with parchment paper. Melt butter in saucepan over medium heat. Remove from heat. Spoon off foam from top of butter and discard. Spoon clear yellow butter into small metal bowl, leaving water and milk solids in bottom of pan. Add vanilla to butter in bowl; set clarified butter aside.
  • Sift flour and cocoa powder together 3 times into medium bowl. Whisk eggs and sugar in large metal bowl to blend. Place bowl with egg mixture in large skillet of barely simmering water; whisk constantly until egg mixture is lukewarm (105°F), about 2 minutes. Remove bowl from water. Place bowl with clarified butter in hot water in same skillet over low heat to keep warm.
  • Using electric mixer, beat egg mixture until cool and tripled in volume, about 5 minutes. Sift 1/3 of flour-cocoa mixture over egg mixture and gently fold in with rubber spatula. Fold in remaining flour-cocoa mixture in 2 more additions. Fold 1 cup of cake batter into warm clarified butter until incorporated. Using rubber spatula, gently fold butter-cake batter mixture into remaining cake batter.
  • Transfer batter to prepared pan. Bake until tester inserted into center of cake comes out clean and top springs back slightly when gently pressed, about 30 minutes. Cool completely in pan on rack. (Can be made 1 day ahead. Cover; store at room temperature.)
  • Run knife between pan sides and cake to loosen. Invert cake onto rack; remove parchment. Using long serrated knife, trim top of cake horizontally, forming 3/4-inch-high cake layer. Using bottom of 8-inch-diameter springform pan as guide, trim around sides of cake to form 8-inch round cake. Set cake aside.
  • For hazelnut crunch:
  • Line bottom of 8-inch-diameter springform pan with parchment paper. Pour enough water into large skillet to reach depth of 1 inch; bring to simmer. Remove skillet from heat. Place gianduja in medium metal bowl; set bowl in hot water in skillet. Stir until gianduja is melted and smooth. Stir in cereal and nuts. Spread crunch evenly over parchment in pan. Place cake atop crunch layer, pressing to adhere. Chill until crunch is firm, about 1 hour.
  • For mousse:
  • Place gianduja in metal bowl. Pour enough water into large skillet to reach depth of 1 inch; bring to simmer. Remove from heat; place bowl with gianduja in hot water in skillet. Stir until gianduja is smooth. Remove bowl from water; cool gianduja to lukewarm.
  • Using electric mixer, beat cream and salt in another bowl until very soft peaks form (when bowl is tilted, cream should be fluffy but still pourable and flow to one side). Mix 3 tablespoons water into melted gianduja. Pour whipped cream over and fold into gianduja just until incorporated (mousse will be very soft).
  • Brush top of chilled cake with liqueur. Spread mousse over cake in pan. Cover and chill overnight. (Can be prepared 2 days ahead. Keep chilled.)
  • Run knife between cake and pan sides to loosen. Soak kitchen towel in hot water; wring out water. Wrap hot wet towel around pan sides and hold 30 seconds. Carefully remove pan sides from cake; smooth mousse with knife if necessary. Place cake on pan bottom on rack set over baking sheet. Sift cocoa powder lightly over top of cake. Using stencils such as snowflakes or stars, sift powdered sugar over top of cake. Transfer to platter and serve.
  • *Many supermarkets sell pre-husked hazelnuts. if you can't find them, here's how to husk whole hazelnuts: Scatter nuts on rimmed baking sheet and toast at 350°F until skins darken, 12 to 15 minutes. Wrap warm hazelnuts in kitchen towel and rub together to remove skins.
