Categories     World Cuisine Recipes     European     Italian

Time 3h

Yield 4

Number Of Ingredients 4

2 cups milk
1 cup heavy cream
4 egg yolks
½ cup sugar

Steps:

  • In a medium saucepan, mix milk and cream. Warm until foam forms around the edges. Remove from heat.
  • In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolks, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.
  • Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight.
  • Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency.

CLASSIC GELATO

Classic Gelato image

Gelato, Italian ice cream, is easy to make at home and you don't need an ice cream machine. This vanilla recipe is a good starting point.

Provided by Elaine Lemm

Categories     Dessert

Time 3h25m

Number Of Ingredients 5

2 1/2 cups/20 ounces whole milk
1 tablespoon vanilla extract , divided
1/3 cup/3 ounces fine sugar , divided
1/4 cup/2 ounces skimmed milk powder
4 egg yolks

Steps:

  • Gather the ingredients.
  • Warm the milk in a large saucepan with 1 teaspoon of the vanilla extract, 2 teaspoons of the sugar, and the milk powder. Stir well to ensure everything is incorporated.
  • Lower the heat and simmer for 5 minutes. Remove from the heat and leave to infuse while preparing the remaining ingredients.
  • Place the egg yolks into the bowl of a stand mixer with the remaining vanilla extract and sugar. Whisk for at least 10 minutes until the eggs are light, fluffy, and increased in volume.
  • Put a mixing bowl large enough to hold the custard into the freezer or chill the bowl with ice cubes.
  • Gently reheat the milk mixture until warm but not hot or boiling to avoid curdling the custard.
  • Pour the liquid slowly over the beaten eggs with the mixer running on medium speed; take care and do not rush this process.
  • Return the custard to the pan and place over low heat. Stir continuously and cook slowly and gently until the mixture has thickened enough to coat the back of a metal spoon.
  • Pour the custard into the chilled bowl and continue to stir until the custard is cold.
  • Pour the gelato into a plastic tub with a well-fitting lid. Put into the freezer for 30 minutes.
  • Take the custard out and beat with either a fork, hand whisk, or electric hand mixer to break down the custard into a smooth consistency. Do this 3 or 4 times every 30 minutes.
  • Store the gelato in a plastic tub with a well-fitting lid.
  • Remove the gelato from the refrigerator 10 minutes before serving.
  • Cut a circle of greaseproof paper and lay this on the surface of the custard (this prevents a skin forming). Put the custard into the fridge for 3 to 4 hours or even overnight.
  • Churn in ice cream machine following the manufacturer's instructions.

Time 3h

Yield 4 servings

Number Of Ingredients 11

2 cups Chocolate-Hazelnut Gelato, recipe follows
1/2 cup coffee-flavored liqueur (recommended: Kahlua), or coffee
4 cups crushed ice
1/4 cup chopped chocolate-covered coffee beans, plus more for garnish, optional
2 cups whole milk
1 cup heavy cream
1/2 cup sugar, plus 1/4 cup
4 egg yolks
1/2 teaspoon vanilla extract
1/2 cup chocolate-hazelnut spread (recommended: Nutella)
1/2 cup toasted hazelnuts, crushed, for garnish

Steps:

  • Combine all the ingredients in a blender and process until smooth. Pour into glasses, sprinkle with chocolate covered coffee beans, and serve with a straw.
  • In a saucepan combine the milk, cream, and 1/2 cup sugar over medium heat. Cook until the sugar dissolves, about 5 minutes.
  • Meanwhile, in a medium bowl whip the egg yolks with the remaining sugar using an electric mixer until the eggs have become thick and pale yellow, about 4 minutes. Pour 1/2 cup of the warm milk and cream mixture into the egg mixture and stir. Add this mixture back into the saucepan. Cook over very low heat, stirring constantly, until the mixture becomes thick enough to coat the back of a wooden spoon, about 7 to 10 minutes.
  • Place a strainer over a medium bowl and pour the warm custard mixture through the strainer. Stir in the vanilla and hazelnut spread until it dissolves. Chill mixture completely before pouring into an ice cream maker and follow manufacturer's instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.

GELATO BAR

Time 40m

Yield 8 serving

Number Of Ingredients 8

1/2 cup whipping cream
1/3 cup honey
1 (11.5-ounce) bag milk chocolate chips
1 1/2 cups whipping cream, chilled
3 tablespoons powdered sugar
1 (1/2-gallon) vanilla, mint chip, or coffee gelato
1 (1/2-gallon) Neapolitan ice cream
Assorted toppings (coarsely crumbled chocolate sandwich cookies, almond biscotti, amaretti cookies, chopped toasted almonds, sliced fresh strawberries, rainbow decors, chocolate sprinkles, mini candy-coated chocolates, and maraschino cherries)

Steps:

  • To make the milk chocolate sauce: Combine the cream and honey in a small heavy saucepan and bring to a simmer over medium heat. Remove from the heat and add the chocolate. Let stand until the chocolate melts, about 2 minutes, then whisk to combine. Cool the sauce slightly, then pour into a clear glass serving bowl or small pitcher. (The sauce can be made 1 week ahead. Cool completely, then cover and refrigerate.) Re-warm the sauce in the microwave, if necessary.
  • To make the whipped cream: Using an electric mixer, beat the cream and sugar in a large bowl until soft peaks form. Transfer the whipped cream to a serving bowl. (The whipped cream can be made 2 hours ahead. Cover and refrigerate.)
  • For the sundaes: Place each topping in a separate serving bowl. Scoop the gelato or ice cream into dessert bowls and drizzle with the milk chocolate sauce. Allow guests to sprinkle their desired toppings over their sundaes. Top with the whipped cream and cherries, if desired.

CHOCOLATE GELATO

Chocolate Gelato image

This is a super-chocolaty Italian-style ice cream - gelato; use the best ingredients possible, because it really makes a difference. I use 70% chocolate for it.

Provided by Ivy

Categories     World Cuisine Recipes     European     Italian

Time 9h50m

Yield 8

Number Of Ingredients 6

2 ¼ cups whole milk
⅝ cup white sugar, divided
⅓ cup heavy cream
⅓ cup unsweetened cocoa powder
⅔ cup chopped dark chocolate
4 egg yolks

Steps:

  • Heat milk, 1/2 the sugar, and cream in a heavy saucepan until simmering and sugar is dissolved, about 5 minutes, being careful not to scorch the milk. Remove milk from heat and whisk in cocoa powder and dark chocolate. Allow to cool slightly.
  • Meanwhile, beat egg yolks and remaining sugar in a large bowl using a whisk or electric beater until thick and pale yellow. Add about 1 cup of the slightly cooled chocolate mixture in a slow stream to avoid cooking eggs, whisking constantly until well combined. Add the rest of the chocolate mixture and return to the saucepan over medium-low heat. Stir constantly until thickened enough to coat the back of a spoon, about 5 minutes more.
  • Strain custard through a sieve into a bowl and cover with plastic wrap touching to mixture to prevent a skin from forming. Refrigerate 8 hours to overnight.
  • Pour cold custard into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until hardened, about 1 hour.

MY ELEVEN FAVORITE GELATO RECIPES FOR YOUR DESSERT TABLE
2016-11-14 If you’ve never tried making gelato before it’s really quite simple, especially using my base recipe. The big difference between gelato and ice cream is that gelato uses milk which makes the fruit flavors stand out more, while ice cream uses cream to boost the flavors with a rich creaminess. The other difference has to do with the makers. A ...

THE SECRETS OF AN ITALIAN GELATO MASTER | THE ...
2016-06-06 Gelato and ice cream are close cousins, but they are not twins; the main difference is their amount of fat, sugar and air (strange as it may seem, your exquisitely creamy cup of gelato has less of all three). Gelato is also softer and even slightly warmer than ice cream. But the biggest difference may be their emotional payload. In America, ice cream somehow carries a vague atmosphere of sin ...
