Garlic Salad image

This is an awesome tasting salad!!! It definetly has a strong garlic taste but I love garlic and if you do you must try this salad. It goes great with grilled steaks or any barbecue. The recipe is from Doc's Steakhouse in Wichita, KS. I got the recipe out of the Monkey Island (Okla) Volunteer Fire Department Cookbook. This recipe was submitted by Claudine Nugen.

1 head cabbage
1 head lettuce
2 carrots (optional)
1/2 tablespoon garlic salt
1/2 tablespoon garlic juice (in your grocer's spice section)
1 (8 ounce) jar hellman mayonnaise
1/2 tablespoon garlic powder

Steps:

  • Chop cabbage, lettuce and carrots (if including) to a very fine consistency; add garlics and mayonnaise and mix thoroughly.
  • Chill thoroughly several hours or overnight.

2 teaspoons garlic powder
1 tablespoon water, or as needed
1 small head cabbage, chopped
1 small green bell pepper, chopped
1 carrot, shredded
1 cucumber, thinly sliced
2 small tomatoes, cut into wedges
¼ cup vinegar
½ cup canola oil
2 teaspoons salt

Steps:

  • Place garlic powder into a bowl. Stir in enough water to make a runny paste. Toss in the cabbage, bell pepper, carrot, cucumber, and tomatoes until well coated. Let stand for 10 minutes.
  • Whisk together the vinegar, canola oil, and salt in a bowl. Pour dressing over the prepared vegetables. Mix thoroughly, then cover and refrigerate overnight.

Juice of 1 lemon
1 large clove garlic (chopped very fine)
1 to 2 tablespoons extra virgin olive oil
Sea salt to taste

Steps:

  • Gather the ingredients.
  • Remove the center rib from the kale. Cut the kale into 1/2-inch-wide crosswise ribbons.
  • In a large bowl, whisk together the lemon, garlic, and olive oil. Add the kale and gently toss to combine. Season to taste with salt. Make sure the kale is well coated.
  • Let the kale marinate refrigerated for at least 3 hours or up to overnight to tenderize before serving.

⅓ cup red wine vinegar

1 Lemon (substitute with bottled lemon juice if you don't have fresh lemons)
2 cloves garlic (use 1 clove if you want a milder garlic flavor)
2 tablespoon Olive oil (you can experiment with different oils)
½ teaspoon Salt (to taste)
¼ teaspoon Pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Squeeze the lemon to extract the juice. Collect about 1 tablespoon of lemon juice. This gives you a 2:1 ratio of oil to acid. If you like your salad dressings more acidic, squeeze 2 tablespoons of lemon juice from the lemon for a 1:1 ratio of oil to acid. Add the lemon juice to your glass jar.
  • Peel your garlic cloves. Squeeze the cloves of garlic through the garlic press. Add the garlic pulp to the lemon juice.
  • Add salt and pepper to your lemon juice and garlic mixture. Add enough salt and pepper to taste. You can add more later if it's underseasoned.
  • Add the olive oil to your salad dressing.
  • Lock the glass container's lid in place. Shake the container to mix the salad dressing until the ingredients are evenly combined. The garlic salad dressing is ready to serve.
  • Enjoy your salad and veggies with the garlic salad dressing.

1 large head or 2 small heads garlic
4 tablespoons extra-virgin olive oil, divided
2 tablespoons balsamic or red-wine vinegar
1 tablespoon lime juice
⅛ teaspoon salt
Freshly ground pepper, to taste

Steps:

  • Preheat oven to 400 degrees F.
  • Rub off the excess papery skin from garlic without separating the cloves. Slice the tips
  • off the head (or heads), exposing the ends of the cloves. Place the garlic on a piece of foil, drizzle with 1 tablespoon oil and wrap into a package. Put in a baking dish and bake until the garlic is very soft, 40 minutes to 1 hour. Unwrap and let cool slightly.
  • Squeeze the garlic pulp into a blender or food processor (discard the skins). Add the remaining 3 tablespoons oil, vinegar, lime juice, salt and pepper and blend or process until smooth.

Steps:

  • Gather the ingredients.
  • Peel and mince the garlic (you can use a garlic press if you like; presses tend to bring out the bitterness in garlic, but some people don't seem to notice it).
  • If you're making a salad in the next few hours, put the garlic in a large salad bowl. (If you're making the dressing ahead of time, put the garlic in a sealable jar.)
  • Add the lemon juice, lemon zest, salt, pepper, and mustard. Whisk to combine everything (or seal and shake the jar).
  • Whisk in the olive oil (or, again, seal the jar and shake it vigorously).
  • Taste and adjust salt and pepper to taste. If the dressing is too zingy for you, feel free to add more olive oil to soften the flavor. A bit more salt will help temper​ the acid kick, too.
