CREAMY GARLIC PRAWN PASTA



Creamy Garlic Prawn Pasta image

Recipe VIDEO above. Pasta tossed with a garlic infused creamy sauce and plump, juicy prawns! (Shrimp) This pasta version of Creamy Garlic Prawns is a quick meal you'll get on the table in 20 minutes, this is luscious but it's not too rich. The key is to emulsify the sauce (i.e. thicken it) by tossing the pasta in the sauce just before serving - this is the proper Italian way to make pasta. Serves 3 very hungry people or 4 normal servings.

8 oz / 250g fettuccine (, or other long strand pasta of choice)
30 g / 2 tbsp butter (, separated)
300 g / 10 oz small peeled prawns / shrimp, raw ((Note 1))
3 garlic cloves (, minced)
1/4 cup / 65 ml dry white wine ((Note 2 for sub))
1 cup / 250 ml heavy / thickened cream ((Note 3))
1/2 cup / 125 ml chicken broth ((or fish or vegetable broth), preferably low sodium)
3/4 cup / 50 g finely grated parmesan cheese (1.5 oz) ((freshly grated) (Note 4))
2 tbsp finely chopped parsley
Black pepper
Parmesan (, for serving)

Steps:

  • Bring to boil a large pot of water. Add pasta and cook per packet MINUS 1 minute. (Note 5).
  • Just before draining, scoop out 1 cup of pasta cooking water and set aside. Drain pasta.
  • Meanwhile, melt 1 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
  • In the same skillet, add 1 tbsp butter. Once melted, add garlic. Stir for 20 seconds until fragrant.
  • Add wine and stir. Simmer for 2 minutes until wine mostly reduces (see video).
  • Add cream, broth and parmesan. Stir until the parmesan is melted, then leave to simmer for 1 1/2 minutes until it thickens slightly (will thicken more in next step).
  • Add prawns, stir, then add pasta plus about 1/4 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
  • Take it off the stove before the sauce is as thick as you want - it will thicken more.
  • Sprinkle with most of the parsley and black pepper, check salt (I don't need more). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too gluggy.
  • Serve immediately, garnished with remaining parsley and parmesan if desired.

This take on a classic Italian-American recipe is super easy to make. Slightly reducing the cream and adding a hefty dose of cheese means you don't have to use flour to thicken the sauce.

12 ounces fettuccine
Olive oil, for tossing
3/4 pound large shrimp (about 16), peeled and deveined, tails removed
Freshly ground black pepper
1 stick (8 tablespoons) unsalted butter
2 cups heavy cream
2 pinches freshly grated nutmeg
1 1/2 cups freshly grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of water to a boil, and salt generously. Add the pasta, and boil according to package directions until al dente, tender but still slightly firm. Strain, and toss with a splash of oil.
  • Meanwhile, arrange the shrimp in a single layer on a large pie pan or paper plate, and pat them with a paper towel until completely dry. Season with salt and pepper.
  • Heat a large skillet over medium heat, and add 2 tablespoons of the butter. When the butter melts, raise the heat to medium-high, and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, until the underside is pink, 1 to 2 minutes. Flip the shrimp, and cook until fully pink and cooked through, about 2 minutes more. Transfer the shrimp to a bowl.
  • Reduce the heat to medium, and add the remaining 6 tablespoons butter. Scrape the bottom of the skillet with a wooden spoon to release any browned bits. When the butter has mostly melted, whisk in the cream and nutmeg and bring to a simmer, then cook for 2 minutes. Lower the heat to keep the sauce warm.
  • Whisk the Parmigiano-Reggiano into the sauce. Add the shrimp and cooked pasta, and toss well. Season with salt and pepper. Serve hot in heated bowls.

I'd enjoyed it enough times that I was confident I reproduce it to share with friends and family. Think I hit it spot on! When I have fresh basil from the garden I use that instead of parsley.

2 tablespoons olive oil
1 tablespoon butter
1 pound uncooked shrimp (26-30 per pound), peeled and deveined

1 tablespoon grated lemon zest
1 tablespoon lemon juice
1 teaspoon lemon-pepper seasoning
2 tablespoons minced fresh parsley

Steps:

  • Cook linguine according to package directions for al dente. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add shrimp; cook and stir 3 minutes. Add lemon zest, juice, garlic and lemon pepper; cook and stir until shrimp turn pink, 2-3 minutes longer. Stir in parsley., Drain linguine, reserving 1/3 cup pasta water. Add enough reserved pasta water to shrimp mixture to achieve desired consistency. Serve with linguine.

1 lb shrimp, peeled and deveined
1/2 cup butter
8 -10 garlic cloves, chopped
1/2 cup white wine
1/2 lemon
1/4 teaspoon lemon pepper
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon red chili pepper flakes
1 tablespoon cornstarch
1 cup half-and-half
1 (9 ounce) package fettuccine pasta, prepared as directed

Steps:

  • In small saucepan, whisk together white wine with juice of 1/2 lemon, lemon pepper, oregano, basil, and thyme. Reduce over medium-low heat down to about 1/2 cup.
  • In skillet, sauté garlic in 1/2 stick butter for about 4 minutes.
  • Add red chili pepper flakes to garlic/butter mixture and sauté for about 1 minute.
  • Add shrimp to skillet, cook until pink, about 5 minutes.
  • Remove shrimp from pan, reserving leftover liquid.
  • Add liquid from skillet to saucepan, whisking thoroughly, and raise heat to medium.
  • Add 1/2 stick butter, sliced, to saucepan, continuing to whisk until melted.
  • In separate ramekin or very small bowl, whisk together corn starch with small amount of half and half until smooth. Add to saucepan, continuing to whisk until entire mixture is smooth and begins to thicken.
  • Add half and half to saucepan, continuing to whisk until thickened to desired consistency.
  • Add to fettuccine, tossing until coated.
  • Serve fettuccine on a plate, topped with sautéed shrimp.

1 lb peeled deviened shrimp
1/2 cup cream or 1/2 cup milk
1/2 cup ranch dip
1/4 cup white wine
1 shallot, coarsely chopped
4 minced garlic cloves
1/4 cup grated parmesan cheese
1/2 cup sliced mushrooms
1 teaspoon paprika
1 teaspoon chopped fresh oregano
2 teaspoons chopped fresh basil
3 teaspoons chopped fresh parsley
cooked fettuccine pasta

Steps:

  • Heat 2or 3 tblsp good extra vigin olive oil in a large non stick pan.
  • Saute shallot and garlic till slightly golden. Add mushrooms and saute till they start to wilt. Add shrimp and cook till nice and pink.
  • Deglaze pan with wine and let reduce.
  • Add oregano, basil and cream, reduce heat and let simmer about 10 min or till it starts to thicken.
  • Stir in veggie dip, parmesan cheese and paprika and let heat through.
  • Remove from heat and stir in parsley.
  • Serve over noodles with some good garlic bread and fresh ground black pepper.
