GARLIC PEPPER PORK
A recipe I have been developing that borrows heavily from Recipe #142732, and is also influenced by a dish of the same name at the SALA Thai restaurant in OKC. It is surprisingly spicy, but not so much compared with some Thai foods. Do not omit or substitute any ingredients. The heat may be regulated by the amount of dried red and black pepper added, and can be adjusted at the very end of cooking, if need be. The fish sauce is very salty, so no additional salt is called for.

Steps:
- Heat oil to medium-high; stir-fry garlic, dried chile, and pork, about 3-4 minutes until pork is nearly done.
- Add onions, ginger, bell pepper, and stir-fry 3 minutes.
- Add black pepper and remaining liquids and stir-fry another 1-2 minutes. Taste and adjust seasonings.
- Serve over white rice.
GARLIC PEPPER PORK CHOPS
If you like fresh ground pepper, this is the recipe for you. These pork chops are tender and spicy. I found this recipe in our local newspaper. Cook time includes marinading.

Steps:
- Combine all ingredients in a self-sealing plastic bag large enough to hold chops.
- Marinate pork in mixture 30 minutes.
- Prepare medium-hot coals in grill bed.
- Remove pork from marinade, place 5 inches over coals and grill for 12-15 minutes, turning once and basting with marinade.
SPICY PORK SKEWERS

- Soak 8 bamboo skewers in water for at least 30 minutes (if using metal skewers, proceed to step 2). Drain and set aside.
- Meanwhile, in a medium bowl, stir together the pork, garlic, cumin, paprika, onion, salt, and pepper. Form into small meatballs, each about the size of a golf ball, then thread the meat onto the skewers.
- Lay skewers over medium coals or medium heat on a gas grill (you can hold your hand at grill level only 4 to 5 seconds); close lid on gas grill. Cook, turning once, until browned on both sides and no longer pink in the center, about 8 minutes. Serve warm.

MUSTARD-GLAZED PORK SKEWERS

- Soak twenty to twenty-four 6-inch wooden skewers in water for 30 minutes before grilling or broiling. Drain before using
- For chutney:.
- In a medium saucepan, stir together brown sugar, vinegar, ginger, garlic, and cinnamon. Stir in apple, dried apricots, onion, and 1/2 teaspoon thyme. Bring mixture to boiling over medium heat; reduce heat. Cover and boil gently for 10 minutes. Uncover and boil gently about 5 minutes more or until chutney reaches desired consistency. (A small amount of liquid should remain.) Cool slightly. Transfer to a serving bowl.
- Meanwhile, in a small bowl, stir together apple juice, Dijon mustard, and 1/2 teaspoon thyme; set aside.
- Trim fat from pork. Cut pork across the grain into thin strips about 3 inches long and 1 inch wide.
- Thread pork strips, accordion-style, onto wooden skewers.
- Lightly brush mustard mixture on both sides of pork
- Place skewers on the rack of an uncovered grill directly over medium-hot coals.
- Grill for 7 to 8 minutes or until pork is slightly pink in center, turning once. (Or place skewers on the unheated rack of a broiler pan. Broil 5 to 6 inches from the heat for 7 to 8 minutes or until pork is slightly pink in center, turning once.)
- To serve, arrange skewers on a serving platter; serve with chutney.
- Make-Ahead Tip:
- Prepare the chutney as directed; cool. Transfer to an airtight container and chill for up to 2 days. Let stand at room temperature for 30 minutes before serving.
SPICE-RUBBED PORK SKEWERS WITH TOMATOES
Have not made this yet, but it looks very tasty. After the rub, I might also marinade the pork in the soy/oil mixture for an hour or so prior to grilling. Rather than using 16 wooden skewers, I think I will use 8 metal skewers for ease of preparation. So more tomatoes on each skewer, etc...So may need more grilling time as well. - Prepare grill.
- Combine first 7 ingredients.
- Cut pork in half crosswise; cut each half into 8 lengthwise strips.
- Combine pork strips and chile paste in a shallow dish; toss to coat. Sprinkle brown sugar mixture evenly over pork; toss to coat.

- Soak 12 bamboo skewers in water for 10 minutes (this ensures skewers do not burn) then drain.
- Meanwhile, combine grated ginger in a bowl with soy sauce, sherry and sesame oil.
- Cut pork fillet into 2cm cubes. Add to the marinade tossing to coat evenly.
- Cover and refrigerate for 10 minutes.
- Thread pieces of pork on to the skewers and discard remaining marinade.

- Cut pork into 1/8-inch-thick strips; place in non reactive dish.
- Prepare marinade : Combine all remaining ingredients except green onions in a small bowl.
- Pour marinade over pork; cover and refrigerate at least 1 hour or overnight.
- Thread pork slices ribbon style onto metal skewers (or bamboo skewers that have been soaked in water for 30 minutes), alternating pork with green onions.
- At this point, skewers can be tightly covered and refrigerated until grilling time.
- Grill over medium-hot heat about 3 minutes per side until no longer pink in center. Do not overcook.
