Sauteed Swiss Chard and Beans image

Sauteed Swiss Chard and White Beans, an Italian-inspired side dish, comes together quickly with only 4 ingredients---Swiss chard, olive oil, garlic and cannellini beans.

2 pounds Swiss chard
3 Tablespoons olive oil
2 cloves garlic
15.5 ounces Cannellini or Great Northern beans, drained and rinsed
Salt and black pepper

Steps:

  • Wash Swiss chard to remove dirt and sand
  • Remove stems from the leaves.
  • Cut stems into 1 inch pieces and parboil JUST the stems in acidulated water (1 quart water with 2 Tablespoons lemon juice added) for 3 to 5 minutes; drain.
  • Cut the chard leaves into 1 inch strips. Cook JUST the leaves in a skillet over medium heat for 3 to 5 minutes in the water that clings to the leaves. Once leaves are wilted, remove from pan and set aside.
  • In a large skillet over medium heat; add olive oil. Saute parboiled stems until tender, approximately 5 minutes.
  • Add drained and rinsed cannellini beans and garlic; stirring constantly for 30 seconds (be careful not to burn garlic).
  • Add wilted Swiss chard leaves to the mixture. Season with salt and pepper.
  • Serve hot. An additional drizzle of olive oil and grated Parmesan cheese are optional toppings.

3 cups orecchiette
6 medium size fresh sage leaves or 1 teaspoon dried
2 cloves garlic
1/2 cup (packed) fresh parsley leaves
2 cups cooked white beans or 19 ounce can drained white beans
1/3 cup olive oil
1/4 cup dry white wine
1/2 cup small dice of mixed yellow, green and red bell pepper, for garnish
Grated Asiago cheese

Steps:

  • Bring large pot of salted water to a boil. Add pasta and cook until it is tender.
  • Cut fresh sage leaves into fine shreds; peel and mince garlic, chop parsley. Rinse and drain canned beans.
  • Heat olive oil in a medium size saucepan. Add garlic and sage and cook for 10 seconds. Add wine and cook until evaporated, about a minute. Add beans, cover and simmer until heated through: 2 minutes. Remove from heat and stir in parsley, season to taste with salt and pepper. Keep warm, covered, off heat, until pasta is done.
  • Drain pasta and return it to the pot, off heat. Stir in bean mixture, toss well and serve immediately garnished with raw peppers. Pass cheese separately.

This is awesome! I am not a pizza-lover for the most part. However, the combination of these ingredients makes it a lot healthier and more interesting, than the regular pizza. Found this originally in the Eating Well Magazine but have changed it a bit.

4 tablespoons extra virgin olive oil
1 1/2 large onions, thinly sliced lengthwise
6 -8 ounces mushrooms, sliced
1/2 teaspoon salt
20 ounces prepared whole wheat pizza dough, thawed if frozen
2 tablespoons minced fresh oregano
3/4 teaspoon freshly ground coarse black pepper
1 (15 ounce) can white beans, rinsed
3 tablespoons water
2 teaspoons white wine vinegar
2 plum tomatoes, thinly sliced
1 cup finely shredded smoked gouda cheese or 1 cup cheddar cheese
nonstick cooking spray
toasted pumpkin seeds or toasted chopped pine nuts

Steps:

  • Preheat oven to 450°F.
  • Place oven rack in the lowest positions.
  • Combine 2-1/2 tablespoons oil, onions and salt in a medium saucepan.
  • Cover and cook over medium-high heat, stirring often, until the onion is softened, about 7-9 minutes.
  • Now add 1-1/2 tablespoons more of oil, a little bit at a time, and add mushrooms and cook about 4 minutes longer.
  • Liquid needs to be absorbed.
  • Cook for another 5-7 minutes reducing heat to medium-low, uncovered and stirring occasionally, until very soft and golden.
  • Meanwhile, roll out dough on a lightly floured surface to the size of the baking sheet.
  • Bake until puffed and lightly crisped on the bottom, 8-10 minutes.
  • Stir oregano and pepper into the onion-mushroom mixture.
  • Transfer, half the onion mixture to a small bowl.
  • Add beans to the remaining onion mixture;, cook over medium heat, stirring often, until heated through, about 2-3 minutes.
  • Transfer the bean mixture to a food processor, add water and vinegar and pulse until a coarse paste forms.
  • Spread the bean paste over the pizza crust.
  • Top with the reserved onion, tomatoes,cheese and pepitas,or sunflower seeds or pine nuts, if using.
  • Bake on the bottom rack until the crust is crispy and golden and the cheese is melted, 11-13 minutes.
  • Slice and serve.

Garlicky (Or Not) Chard and White Beans With Caramelized Onions image

Caramelized onions are rich and flavourful, then stirred with white beans, letting the flavours meld. Garlic is sauteed with chard, then it is all tossed together. If you are making a few dishes, this is a great one to add because as it sits at room temperature, the flavours come together more and more, and it tastes great warm, hot, or cold.

2 tablespoons olive oil, divided
3 large yellow onions, sliced
2 (15 ounce) cans white beans, drained and rinsed (I like canellini beans and butter beans, but have also used navy beans and chickpeas)
2 bunches swiss chard, rinsed well and chopped (stalks in 1/2-inch pieces and leaves in ribbons)
4 -6 garlic cloves
salt
fresh ground pepper

Steps:

  • 1. Heat 1 tablespoon olive oil in a large saucepan, and cook onions on medium-high heat, until caramelized. This can take a couple hours if you have the time. You can sprinkle a bit of sugar or brown sugar on the onions to speed up the process.   • 2. Once onions are caramelized, or to your liking, stir in the white beans. Let cook on low for about 5 minutes, stirring to coat beans with onions. Season with salt and pepper. Set aside.
  • 3. In a large saucepan, heat remaining oil over medium heat. Add garlic (as much as you like) and stir for about 30 to 45 seconds, until fragrant. Add chard, and cook until wilted and stalks are soft, about 5 minutes.
  • 4. Add beans into chard mixture and stir to combine all ingredients together. Season with salt and pepper. Serve immediately if you choose, but I like to let it rest about 10 minutes, or cover it for a bit if I am still preparing other dishes.
