2 bell peppers (1 red, 1 yellow), cut into thick strips
1 small bulb fennel, trimmed, halved, cored and thinly sliced, plus 1/4 cup chopped fronds
1 red onion, sliced into 1/4-inch-thick rings
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 9-ounce package spinach or cheese tortellini
One 5-ounce package baby spinach (about 8 cups)
2 ounces thinly sliced salami, cut into thin strips
1/2 cup Food Network Kitchen™ Inspirations Italian Herb & Garlic Dressing
1/2 cup torn basil or flat-leaf parsley leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss together the peppers, fennel, onions, oil, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet. Bake, stirring occasionally, until the vegetables are tender and lightly browned, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs; drain. Combine in a large bowl with the roasted vegetables and cool slightly.
  • Add the spinach, salami and Italian Herb & Garlic Dressing to the bowl and toss. Season with salt and pepper. Sprinkle with the basil and fennel fronds.

1 large bunch broccoli, cut into florets, stems peeled and thinly sliced
10 ounces fusilli pasta
1 tablespoon extra-virgin olive oil
4 cloves garlic, chopped
1 cup crumbled ricotta salata cheese (about 4 ounces)
2 tablespoons chopped fresh dill, mint, basil, parsley and/or chives
2 tablespoons chopped scallions
2 ounces deli-sliced capicola or coppa ham, cut into strips

Steps:

  • Bring a large pot of salted water to a boil. Add the broccoli florets and stems and cook until tender but still bright green, about 3 minutes. Remove to a bowl using a slotted spoon; set aside. Return the water to a boil, then add the pasta and cook as the label directs. Reserve 2 cups cooking water, then drain the pasta and set aside.
  • Heat the olive oil in the empty pot over medium heat. Add the garlic and cook until slightly softened, about 1 minute. Add the broccoli stems, half of the florets and 1 cup of the reserved cooking water. Cover and cook until very soft, about 12 minutes.
  • Return the pasta to the pot along with another 1/2 cup of the reserved cooking water. Add the remaining broccoli florets, half of the ricotta salata, and the herbs and scallions; stir to combine, adding more cooking water to loosen, if needed. Top each serving with the capicola and the remaining ricotta salata.

8 ounces thinly sliced hard salami
1 cup freshly grated Parmesan cheese

Steps:

1 (16 ounce) package uncooked rotini pasta
½ cup olive oil

1 pinch crushed red pepper flakes
1 cup chicken broth
½ cup lemon juice

¼ cup freshly grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the broccoli, and cook, uncovered, for 3 minutes. Remove the broccoli with a slotted spoon; set aside. Stir the rotini into the same pot, and return to a boil. Cook uncovered, stirring occasionally, until the pasta is cooked through, but still firm to the bite, about 8 minutes. Drain.

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

1/4 cup dry white wine
3/4 lb spicy salami, cut into 3/4-inch cubes
1 pint halved grape tomatoes
1 lb vegetable rotini pasta
1 tablespoon salt
1/4 cup drained chopped black olives (optional)
1/2 cup parmesan vinaigrette (like Lemon Parmesan Vinaigrette)

Steps:

  • Heat oil in a skillet over medium high heat.
  • Add onion, garlic and garlic powder; sauté until translucent, about 5 minutes.
  • Add broccoli, red pepper, zucchini and wine; sauté until vegetables are just tender, about 4 minutes.
  • Add salami and tomatoes; toss until heated through, about 2 minutes. Transfer to large bowl.
  • Cook pasta in a large pot of water with the 1 tbsp salt. Drain and immediately add to the vegetables.
