GARLICKY ROASTED SHRIMP WITH CILANTRO, LIME AND LEMON
Roasted shrimp in a garlicky sauce with cilantro, lime and lemon cooks in just 10 minutes. Spoon the extra sauce over rice or pasta and add a few veges for a high-protein, low calorie meal.

Steps:
- Preheat oven to 375 degrees F.
- Place shrimp a large glass baking dish.
- Mix butter, lemon/lime and garlic together and pour over shrimp.
- Toss to coat shrimp and then arrange shrimp in a single layer.
- Allow shrimp to marinate for 15 minutes, but no longer than 30 minutes.
- Bake shrimp for 10 minutes or until shrimp are pink and no longer opaque.
- Sprinkle fresh cilantro over the top of the shrimp.

GARLIC & HERB ROASTED SHRIMP
Steps:
- Preheat the oven to 400 degrees.
- Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
- Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.
GARLIC BUTTER SHRIMP WITH CILANTRO AND LIME
Garlic shrimp cooked in a creamy cilantro lime butter sauce. Serve this as an appetizer, with pasta, over rice or in tortillas for tacos. The recipe is easy to adapt. Swap lime for lemon and try other tender herbs like parsley, dill, basil or tarragon in place of cilantro.

Steps:
- Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
- Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

- Melt butter in heavy medium skillet over medium heat. Mix in next 6 ingredients. Sauté 30 seconds. Add shrimp; sauté until opaque in center, turning occasionally, about 3 minutes. Stir in parsley. Season with salt and pepper; serve.

- Heat olive oil in a skillet over medium heat; saute onion until translucent, 1 to 2 minutes. Add garlic and saute until browned, 1 to 2 minutes.
- Stir salsa, red bell pepper, white wine, red chile pepper puree, lemon juice, and lime juice into onion mixture; bring to a boil. Reduce heat and simmer, 2 to 3 minutes.
