BRILLIANT POTATOES WITH PAPRIKA AND CARAMELIZED ONIONS
I love potatoes in all forms, but this is my all time favorite. I have been making it since I was a teenager, and everyone in the family always requests it when I make dinner. I have shortened the prep time using canned, whole, white potatoes, instead of boiling my own. The results are just as delicious. If you are opposed to canned potatoes, use fresh, boiled potatoes. These potatoes make fantastic leftovers too! This is the first time I have ever given out the recipe. I hope you all enjoy it as much as we do!

I love this recipe! It came from Southern Living magazine and is one of my family's favorite. It takes a little bit of time to prepare and cook but is well worth the effort. Very unique taste with the gorgonzola and the sweetness of the onions. Enjoy!

- Peel the outermost layer of papery skin from the garlic bulb and slice off the top. Brush the exposed part with 1 teaspoon of oil. Wrap the whole bulb in aluminum foil and bake until tender and sweetly caramelized, 30 to 45 minutes, depending on the size of the cloves.

- Heat 1 tablespoon of oil in a large skillet over medium-low heat. (If you can avoid using a nonstick pan here, please do. Add the onions and cook for 10 to 15 minutes, stirring occasionally.

- Into a cast iron skillet add a dash of olive oil and cook your onions, garlic and thyme on low-medium heat till caramelized, fragrant and tender. This may take as long as it takes to cook the potatoes. Stir often to avoid burning. The slower you cook these the better. Be patient.
- Into a high-speed blender add your strained potatoes, onion + garlic mixture and the rest of your ingredients. Using a blender tamper push the ingredients down and blend for around 1 minute or until perfectly smooth. Add more milk, 1 tbsp. at a time if your blender is finding it hard to reach that consistency.
