LEMON-GARLIC KALE SALAD

Lemon-Garlic Kale Salad image

Here's a snappy, fresh side dish or a light supper: a lemony green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, garlic and salt. Its simplicity makes it perfect.

Provided by Julia Moskin

Categories     dinner, lunch, quick, salads and dressings

Time 25m

Yield 8 to 12 servings

Number Of Ingredients 7

2 cups sliced almonds
1/3 cup freshly squeezed lemon juice (from 2 to 4 lemons)
Kosher salt
1 1/2 cups extra-virgin olive oil
4 cloves garlic, crushed with the flat side of a knife, peeled and left whole
10 to 12 ounces washed and dried kale leaves, thick stems removed (weight after trimming)
1 1/2 cups freshly grated Parmesan (optional)

Steps:

  • In a toaster oven or skillet, toast almonds until golden brown and fragrant. Set aside to cool.
  • In a bowl, combine lemon juice and 1 heaping teaspoon salt. Slowly whisk in olive oil. Add garlic cloves and set aside to steep.
  • Working in batches, cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4-inch-thick pieces. This need not be done very precisely or neatly; the idea is to end up with a kind of slaw. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.)
  • Place chopped kale in a very large bowl. Sprinkle surface with almonds and then with cheese, if using. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressing and salt and add more as needed, tossing to coat thoroughly. Serve within 1 hour.

"WHOLE FOODS" GARLICKY KALE [RECIPE]

Check out this macro friendly version of one of my fave superfood salads. The Whole Foods salad bar serves a mean garlicky kale but it's loaded with fat. This copycat recipe is totally yummy, low in fat and surprisingly high in protein.

Provided by Roz

Categories     Salad     Side Dish     Snack

Time 15m

Number Of Ingredients 7

4 cups chopped raw kale
2 tbsp apple cider vinegar
2 tbsp lemon juice
2 tsp minced raw garlic
2 tbsp PB Fit powder
2 tbsp liquid aminos (or tamarin or soy sauce)
4 tbsp nutritional yeast

Steps:

  • Place the chopped kale in a large bowl.
  • Place all the other ingredients in a blender and blend until you achieve the desired consistency for your dressing - you may need to add a little water.
  • Pour the dressing over the kale and toss with salad servers. You could also place a lid over the bowl and shake until the kale is thoroughly coated.
  • Place the bowl in the fridge for an hour or so to marinate. This will help the kale to wilt and also make it more palatable.

Time 35m

Number Of Ingredients 9

7 cups kale sliced leaves (, tightly packed (1cm / 2/5" slices) (Note 1))
2 tsp extra virgin olive oil
Salt and pepper
2 tbsp (30g) unsalted butter
3 - 4 large garlic cloves (, minced)
1 1/2 cups uncooked white rice ((Note 2))
2 1/4 cups chicken broth ((or vegetable))
1 - 2 tbsp (15 - 30g) butter
1/3 cup chopped almonds ((or other nuts / seeds of choice))

Steps:

  • Place kale in a large bowl. Drizzle over oil, sprinkle with a small pinch of salt and pepper. Scrunch with hands for 30 seconds, set aside while rice cooks.

  • Add rice, stir for 10 seconds.

  • Quickly toss all the kale on top of the rice, put the lid back on then remove from heat.
  • Rest for 10 to 15 minutes. Fluff rice with fork, stirring kale through.
  • Lastly, stir through extra butter and add salt and pepper to taste.
  • Serve and sprinkle over nuts (or stir nuts through rice).

GARLICKY KALE SALAD

Garlicky Kale Salad image

This garlicky kale salad is the best kale salad ever and so easy to whip up. The zesty tahini dressing is absolutely delicious and makes this recipe taste JUST like the Whole Foods garlicky kale.

Provided by Brittany Mullins

Categories     Salad

Time 15m

Number Of Ingredients 7

1 bunch raw kale (washed, de-stemmed and dried)
2 Tablespoons tahini
2 Tablespoons apple cider vinegar (or water)
2 Tablespoons lemon juice
2 Tablespoons Bragg's liquid aminos (tamari or soy sauce will work)
4 Tablespoons nutritional yeast
2 teaspoons 1-2 cloves minced garlic

Steps:

  • Break or cut kale into bite size pieces and place in a large bowl.
  • Puree all ingredients except kale in a blender or food processor to blend the dressing.
  • Pour dressing over kale and massage into the kale with your hands until all pieces of kale are coated.
  • Let the salad sit in the fridge for an hour or so to marinate. You can skip this step if you need to eat right away, but allowing some time to marinate will wilt the kale a bit and make it a little more palatable - particularly for those who are skeptical of eating raw kale.

MASSAGED KALE SALAD

Massaged Kale Salad image

Here a pungent garlicky dressing is infused into kale by massaging the greens and the dressing together with your hands. Any type of kale will work in this kale salad recipe, just remember to remove the tough stems before you start.

Provided by EatingWell Test Kitchen

Categories     Gluten-Free Thanksgiving Side Dish Recipes

Time 30m

Number Of Ingredients 9

2 bunches kale
½ cup freshly grated Parmesan cheese
⅓ cup extra-virgin olive oil
¼ cup lemon juice
3 large cloves garlic, minced
1 tablespoon reduced-sodium soy sauce
1 minced anchovy fillet or 1/2 teaspoon anchovy paste (optional)
½ teaspoon freshly ground pepper
¼ teaspoon salt

Steps:

  • Strip leaves from the stems (discard stems). Wash and dry the leaves. Tear the leaves into small pieces and place in a large bowl. Add Parmesan, oil, lemon juice, garlic, soy sauce, anchovy (if using), pepper and salt. With clean hands, firmly massage and crush the greens to work in the flavoring. Stop when the volume of greens is reduced by about half. The greens should look a little darker and somewhat shiny. Taste and adjust seasoning with more Parmesan, lemon juice, garlic, soy sauce and/or pepper, if desired.

  • In a small saucepan, combine 1/3 cup of olive oil with the garlic cloves. Cook over low heat, stirring occasionally to prevent burning, until the garlic turns light golden brown and roasted, about 15 minutes.Carefully remove garlic from heat. The oil will be very hot. Once the oil has cooled to room temperature, remove and reserve the garlic cloves. Keep the garlic-infused oil, you'll need it soon.
  • In a blender combine roasted garlic cloves, mayonnaise, lemon juice, water, 1 tbsp parmesan, Dijon mustard, Worcestershire sauce, salt, pepper and Tabasco. Blend until smooth and well combined.
  • Turn the blender to medium and very slowly drizzle in the roasted garlic oil through the opening in the top. Do not pour it in all at once or it will not emulsify and you will have a broken dressing.
  • Remove the lid and scrape down the sides with a rubber spatula. Replace the lid and blend on high once more. The finished dressing should be smooth and well combined with no streaks of oil.

  • Rub off excess papery skin from garlic head without separating the cloves. Slice the tip off the head, exposing the cloves. Place the head on a piece of foil, drizzle with 1/2 tablespoon oil and wrap into a package. Place the package on the upper rack and roast until the garlic is very soft, 40 to 50 minutes. (It's OK if the garlic starts roasting as the oven preheats.)
  • Meanwhile, toss onion in a bowl with 1 tablespoon oil and salt. Spread on a large baking sheet. Place on the upper rack and roast, stirring once halfway through, until golden brown, about 15 minutes. Let the garlic and onion cool for 5 minutes.
  • Gently squeeze cloves from garlic head into a large bowl (discard skins). Whisk in soy sauce, lemon juice and the remaining 1 tablespoon oil until combined. Add kale and, with clean hands, firmly squeeze the ingredients together until the leaves break down and the volume has been reduced by about half. Add onion and toss to coat.
