LEMON-GARLIC KALE SALAD
Here's a snappy, fresh side dish or a light supper: a lemony green salad, rich with tang and crunch. The dressing is nothing more than lemon juice, olive oil, garlic and salt. Its simplicity makes it perfect.

Steps:
- In a toaster oven or skillet, toast almonds until golden brown and fragrant. Set aside to cool.
- In a bowl, combine lemon juice and 1 heaping teaspoon salt. Slowly whisk in olive oil. Add garlic cloves and set aside to steep.
- Working in batches, cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4-inch-thick pieces. This need not be done very precisely or neatly; the idea is to end up with a kind of slaw. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.)
- Place chopped kale in a very large bowl. Sprinkle surface with almonds and then with cheese, if using. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressing and salt and add more as needed, tossing to coat thoroughly. Serve within 1 hour.

"WHOLE FOODS" GARLICKY KALE [RECIPE]
Check out this macro friendly version of one of my fave superfood salads. The Whole Foods salad bar serves a mean garlicky kale but it's loaded with fat. This copycat recipe is totally yummy, low in fat and surprisingly high in protein.

Steps:
- Place the chopped kale in a large bowl.
- Place all the other ingredients in a blender and blend until you achieve the desired consistency for your dressing - you may need to add a little water.
- Pour the dressing over the kale and toss with salad servers. You could also place a lid over the bowl and shake until the kale is thoroughly coated.
- Place the bowl in the fridge for an hour or so to marinate. This will help the kale to wilt and also make it more palatable.

Steps:
- Place kale in a large bowl. Drizzle over oil, sprinkle with a small pinch of salt and pepper. Scrunch with hands for 30 seconds, set aside while rice cooks.
- Melt butter in a large pot over medium high heat. Add garlic and stir for 1 minute until just starting to turn golden and is incredibly fragrant.
- Add rice, stir for 10 seconds.
- Add broth, stir, then cover.
- Turn heat down to medium or medium low so the liquid is simmering very gently. Cook for 12 - 15 minutes until all liquid is absorbed (tilt pot to check).
- Quickly toss all the kale on top of the rice, put the lid back on then remove from heat.
- Rest for 10 to 15 minutes. Fluff rice with fork, stirring kale through.
- Lastly, stir through extra butter and add salt and pepper to taste.
- Serve and sprinkle over nuts (or stir nuts through rice).

Steps:
- Break or cut kale into bite size pieces and place in a large bowl.
- Puree all ingredients except kale in a blender or food processor to blend the dressing.
- Pour dressing over kale and massage into the kale with your hands until all pieces of kale are coated.
- Let the salad sit in the fridge for an hour or so to marinate. You can skip this step if you need to eat right away, but allowing some time to marinate will wilt the kale a bit and make it a little more palatable - particularly for those who are skeptical of eating raw kale.

- In a small saucepan, combine 1/3 cup of olive oil with the garlic cloves. Cook over low heat, stirring occasionally to prevent burning, until the garlic turns light golden brown and roasted, about 15 minutes.Carefully remove garlic from heat. The oil will be very hot. Once the oil has cooled to room temperature, remove and reserve the garlic cloves. Keep the garlic-infused oil, you'll need it soon.
- In a blender combine roasted garlic cloves, mayonnaise, lemon juice, water, 1 tbsp parmesan, Dijon mustard, Worcestershire sauce, salt, pepper and Tabasco. Blend until smooth and well combined.
- Turn the blender to medium and very slowly drizzle in the roasted garlic oil through the opening in the top. Do not pour it in all at once or it will not emulsify and you will have a broken dressing.
- Remove the lid and scrape down the sides with a rubber spatula. Replace the lid and blend on high once more. The finished dressing should be smooth and well combined with no streaks of oil.

- Peel apart garlic cloves but leave the skin on. Avoid using any tiny garlic cloves from the center of the head. Preheat oven to 375 degrees F (190 C).
- Add garlic cloves and seasoned chickpeas to a baking sheet. Drizzle garlic with a bit of olive or grape seed oil. Bake for 15-20 minutes (depending on the size of the garlic cloves), or until garlic is fragrant and slightly browned. Carefully remove garlic and set aside. Continue baking chickpeas for 10-15 minutes more or until slightly crispy and golden brown. Remove from oven and set aside (the chickpeas will get more crispy as they cool).
- Squeeze garlic out of skins / peel away skins and add to a mixing bowl. Add all remaining dressing ingredients and whisk vigorously to combine, smashing the garlic with the whisk. Taste and adjust seasonings as desired, adding more lemon for brightness, tahini for richness, and maple syrup for sweetness. Set aside.

- Rub off excess papery skin from garlic head without separating the cloves. Slice the tip off the head, exposing the cloves. Place the head on a piece of foil, drizzle with 1/2 tablespoon oil and wrap into a package. Place the package on the upper rack and roast until the garlic is very soft, 40 to 50 minutes. (It's OK if the garlic starts roasting as the oven preheats.)
- Meanwhile, toss onion in a bowl with 1 tablespoon oil and salt. Spread on a large baking sheet. Place on the upper rack and roast, stirring once halfway through, until golden brown, about 15 minutes. Let the garlic and onion cool for 5 minutes.
- Gently squeeze cloves from garlic head into a large bowl (discard skins). Whisk in soy sauce, lemon juice and the remaining 1 tablespoon oil until combined. Add kale and, with clean hands, firmly squeeze the ingredients together until the leaves break down and the volume has been reduced by about half. Add onion and toss to coat.

- For the kale, remove the fibrous stems, leaving you with just the greens. On your cutting board, pile all the leaves on top of each other and massage with your hands for about three to five minutes, until the leaves are no longer bitter. You use a similar motion as you would kneading bread! Move the leaves around every several kneads so you aren’t massaging some more than others. I know it sounds weird, but it really works!!
- To make the dressing, add all ingredients to a bowl and whisk together until thoroughly combined
- To assemble the salad, place the kale, almonds, and Parmesan into a large bowl. Top with dressing and toss to combine
