GARLICKY GREEN BEANS WITH SHALLOTS
A wonderfully, garlicky green bean side dish that works for nearly any main course!

Steps:
- Place the oil and the green beans in a skillet that has a lid. Begin cooking with the lid on.
- While the green beans cook, chop the garlic and shallots.
- Add the shallots to the pan and cook until they are browned. Then toss in the garlic and continue to cook until they just start to turn a very light brown. (Do not burn your garlic!!)
- Cook with lid on, but stir frequently. Cook until the beans reach the level of doneness you like.
- At the very end, just before you turn off the heat, stir in the parsley.
- Note: The garlic and shallots should become very brown. Not burnt, but very brown. Keep the heat more at the medium level to avoid burning and add oil if necessary.

- Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

- Place the beans in a steamer in a pot filled with 2 inches of boiling water. Cover and steam until the beans are bright green and still slightly firm to the bite, about 10 minutes.
- Meanwhile, whisk together the vinegar, mustard, shallot, some salt and pepper, and the oil. Pour the dressing over the beans and toss to coat. Cover and let marinate in the refrigerator for at least 1 hour or up to overnight. Bring to room temperature and serve.

- Wash and cut end of green beans. Bring to boil a pot of water and salt it as this is the only time to really flavor the green beans -- Boil them for about 8-10 minutes then drain water.
- In a separate pan -- put olive oil and butter -- medium heat as not to burn. Pour green beans, shallot- sliced thinly, pre-sliced mushrooms and garlic and sautee for about 5 minutes! You can add more garlic if you want!
- Make sure green beans are still firm.not to mushy. Add some more seasonings to taste after you are finishing the sautee as this will bring out the water from the mushrooms and the sweetness of the shallot !
- Enjoy!
GARLIC ROASTED GREEN BEANS WITH SHALLOTS AND HAZELNUTS
Steps:
- Preheat oven to 425 degrees F.
- Toss together green beans, shallots, garlic, oil and salt and pepper in a medium roasting pan. Roast in the oven until the beans are cooked through and light golden brown. Remove from the oven and stir in the lemon zest and hazelnuts. Transfer to a platter and serve.

- In a medium pot over high heat, bring about 4 cups water and 1 Tbsp. plus 2 tsp. Diamond Crystal or 1 Tbsp. Morton kosher salt to a rolling boil. Add 1 lb. green beans, trimmed, and cook, uncovered, until bright green, about 3 minutes. Drain the green beans in a colander and rinse with cold water for 10 seconds.
- In a large sauté pan over medium-high, add 2 Tbsp. extra-virgin olive oil and heat for about 10 seconds.
