CRISPY BAKED GARLIC MATCHSTICK FRIES
Steps:
- Preheat oven to 450 degrees (232 C).
- Chop potatoes into matchsticks by halving, halving once more, then cutting into wedges and then strips.
- Line two baking sheets with foil or parchment paper (ensure the type you're using is safe up to 450 F / 232 C) and generously spray with nonstick spray.
- Add fries plus a generous drizzle of oil and sea salt, pepper, and garlic powder. Toss to coat.
- Arrange fries a single layer making sure they aren't touching too much. This will help them crisp up and cook evenly.
- Bake for 25-35 minutes, tossing/flipping at least once to ensure even baking.
- In the last 10 minutes of cooking, heat a small saucepan over medium heat and add 1-2 Tbsp olive oil (amount as original recipe is written // adjust if altering batch size) and the minced garlic. Sauté, stirring frequently, until just slightly brown to wake up the flavor.
- Remove from heat and set aside.
- When the fries are finished, remove from oven, sprinkle again with sea salt, and spoon the warm garlic on top. Toss to coat and serve immediately as is or with Whiskey BBQ Ketchup.
- You can also add more flavor by tossing the fries once more with the rosemary.

- Prepare the fries according to the package’s directions using either an air fryer or the oven until very crisp. That may require cooking them longer than indicated.
- Meanwhile, combine the garlic and oil in a small pan. Sprinkle with salt, then turn the stove to medium heat. Cook, stirring occasionally, until the garlic is translucent and tender and the oil is foaming all around and over it, 5 to 7 minutes. Remove from the heat.
- When the fries are done, transfer them to a large bowl. Use a spoon to scoop the garlic out of the pan and onto the fries. Leave behind most of the oil; whatever ends up in the spoon naturally is fine. Sprinkle with salt and toss well until the fries are evenly coated. Top with the parsley and eat hot.

- Fill a large bowl halfway with water. Cut potatoes into long slices about 1/4 in. thick, then cut in 1/4-in.-thick sticks, dropping them into water as cut. Chill at least 2 hours or overnight. Drain and pat very dry.
- Pour about 3 in. of oil into an 8- to 10-qt. pot; bring to 325° over medium-high heat. With a slotted spoon, carefully lower a heaping spoonful of potatoes into oil. Cook, stirring occasionally to keep fries from sticking, until potatoes are tender to the bite and ends begin to turn golden, 3 to 5 minutes. Adjust heat as needed to maintain temperature. With a slotted spoon, transfer fries to a baking pan lined with paper towels. Allow oil to return to 325° and repeat with remaining potatoes, arranging them in a single layer (you'll need a second baking pan). Let cool completely, about 15 minutes. (At this point, you can wrap fries airtight and chill up to 1 day.)
- In a large bowl, combine garlic, parsley, and butter. Reheat oil in pot to 375°. Remove paper towels from underneath fries. With a slotted spoon, lower 2 spoonfuls of fries into oil and cook, stirring occasionally, until crisp and deep golden, 2 to 3 minutes. With a slotted spoon, transfer fries to rack in oven and keep warm. Allow oil to return to 375°, and repeat with remaining potatoes.
