FERMENTED GARLIC HONEY RECIPE

- To make fermented garlic honey, you will need a clean 1-quart heatproof glass jar. Use one with a wide mouth to have easier access to the garlic cloves.
- The garlic cloves can be prepped in the manner you prefer. You can choose to peel it fully or keep the thin papery layer on. Also, you can either use the whole garlic clove, or crush it lightly, or mince it.
- Place the garlic in the jar. Pour the honey on the garlic. You can stir it to make sure all the garlic cloves are coated with honey. Close the lid of the jar and let it sit for 3 days.
- Remove the lid of the jar and let the gases out. You may see tiny bubbles at this stage. Let it sit for a week. You should open the lid every other day and stir it a bit.
- Fermented garlic honey is ready to use. You can store it at room temperature for a month.

- Combine chicken broth, brown sugar, honey, soy sauce, garlic, and ginger in a saucepan over medium heat; bring to a gentle boil. Reduce heat and simmer sauce, stirring often, until flavors combine, about 5 minutes.
- Whisk water and cornstarch together in a small bowl. Pour into the saucepan; simmer until sauce thickens, about 5 minutes.

- Fill a glass jar with garlic cloves and then pour the honey over the garlic. Allow mixture to infuse for several days before using, then store in the refrigerator where it will keep for a year or more.
- At the first sign of illness, start eating a clove every hour or two. Aim for about 6 cloves per day. The honey can be taken on its own by the spoonful as a cough syrup. You could also mix a teaspoon of the honey with some raw apple cider vinegar and hot water and drink this as a tonic when you're sick; feel free to add a dash of cayenne pepper, too-this is excellent for your sinuses.

- Combine garlic cloves and just enough liquid raw honey to cover the garlic in a glass jar. The glass jar should be large enough to roughly double the capacity of your ingredients to leave room for expansion. Close the jar with a lid.
- Stir the mixture or flip the closed jar upside down daily to ensure all garlic cloves are coated with honey.
- Within a few days, air bubbles should be forming. This is a sign of active fermentation. Open the jar daily to release excess carbon dioxide. If fermentation doesn't begin, then add a spoon or 2 of water into the mixture. Repeat step 2.
- Continue the process until fermentation slows down, the honey thins out, the bubbling stops, and the garlic cloves sink to the bottom of the jar. It may take over a month. At this point, you can store the honey fermented garlic in a sealed jar, unrefrigerated, to let it age.
