This garlic-infused olive oil adds a kick to marinades and dressings and is perfect as a simple dip for warm bread.

1 head garlic
1 cup extra-virgin olive oil

Steps:

  • Smash and peel cloves of garlic. Transfer to a medium pot, add olive oil, and heat over medium-low until bubbles form around garlic, 3 minutes. Let cook 10 minutes, reducing heat to low if garlic begins to brown. Remove from heat and let cool to room temperature, 45 minutes.

1 cup extra-virgin olive oil
2 cloves garlic, minced
¼ teaspoon dried oregano
1 pinch salt, or to taste
1 pinch dried rosemary, or to taste
1 pinch dried basil, or to taste
ground black pepper to taste

Steps:

  • Combine the olive oil, garlic, oregano, salt, rosemary, basil, and pepper in a skillet over medium heat; cook until the garlic begins to sizzle, about 5 minutes. Remove immediately from heat.

6 garlic cloves, peeled
1 cup extra-virgin olive oil

Steps:

  • In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low, and cook for 5 minutes, until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook.
  • Remove the garlic cloves from the oil and slice them. Place them in a bowl and pour the oil over them.

HERB GARLIC OIL

This is a basic garlic oil that can be used as a dipping sauce for bread, the oil half of an Italian vinaigrette, or as the base for Mediterranean-style cooking. If you use it for the latter, though, you may want to omit the herbs and add the extra-virgin olive oil unless your pan is non-stick or you do not mind burned little flecks of oregano and parsley.

1 clove garlic, roughly chopped
¼ cup extra-virgin olive oil
½ teaspoon basil
½ teaspoon oregano

Steps:

  • Heat a skillet over medium-low heat. Pour olive oil into skillet gradually, sliding skillet away from burner if oil begins to splatter. Add garlic; cook until sizzling but not brown, about 1 minute. Turn off heat, leaving skillet on burner. Stir in extra-virgin olive oil, basil, and oregano. Transfer to container and store in refrigerator until flavors blend, 8 hours to overnight.

1/2 cup good olive oil
4 cloves garlic, sliced thin
5 fresh thyme sprigs
1/4 teaspoon crushed red pepper flakes

Steps:

  • Place the oil, garlic and thyme sprigs in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 minutes, until the garlic is browned and tender. Turn off the heat. Carefully remove the thyme sprigs and discard. Add the red pepper flakes. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.

1/2 cup extra virgin olive oil
4 garlic cloves, thinly sliced
balsamic vinegar
1 pinch red pepper flakes
1 pinch salt
fresh ground black pepper
finely grated parmesan cheese or romano cheese

Steps:

  • To make the garlic oil, in a small saucepan, gently heat the oil over medium heat.
  • Add the garlic and cook until it is fragrant but not colored, 3 to 5 minutes.
  • Remove from the heat and let cool.
  • Cover and let steep for 1 hour.
  • Strain into a sterilized bottle or jar and discard the garlic.
  • Use within 24 hours. (Or store in a sterilized container in the refrigerator for up to 1 week.)
  • To make the dipping sauce, place the oil at room temperature in a shallow bowl or decorative plate.
  • Swirl a drizzle of balsamic decoratively into the center.
  • Sprinkle with the pepper flakes, salt, and ground black pepper, and top with a light coating of cheese.
  • ***Cook time does not include letting the oil steep for 1 hour.
