½ cup butter, softened
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon garlic powder
1 tablespoon chopped fresh parsley
½ teaspoon salt
1 loaf French bread

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix butter, olive oil, minced garlic, garlic powder, parsley, and salt in a bowl until well combined.
  • Cut bread loaf into 1-inch slices and spread garlic mixture over each slice. Place each on a baking sheet. Wrap with additional aluminum foil.
  • Bake in the preheated oven until bread is crispy and heated through, 25 to 30 minutes.

Pasta with herbs, delicious sauteed garlic, and plenty of freshly grated Parmesan cheese. Chop the garlic so that some is minced and some is larger pieces. You can substitute 1 tablespoon Italian seasoning blend for the fresh herbs.

1 (16 ounce) package dry penne pasta
1 medium head garlic, peeled and chopped
½ cup olive oil
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
2 tablespoons chopped fresh parsley
1 tablespoon crushed red pepper
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • In a skillet, saute garlic in oil on low heat, just hot enough to make the garlic sizzle; about 10 to 15 minutes. Season with basil, oregano, parsley, and crushed red pepper, and remove from heat.
  • In a large bowl, toss cooked pasta with garlic and herb mixture, and let sit for 3 to 5 minutes. Sprinkle with Parmesan, and serve.

6 -8 cloves garlic
1/2 teaspoon salt
virgin olive oil

Steps:

  • Slice the garlic.
  • Add salt.
  • Begin to crush until salt has dissolved.
  • Now add 1/2 tps of Virgin Olive Oil and stir in until it disappears.
  • Once the garlic has absorbed the oil add another 1/2 tps and repeat.
  • If you keep doing this 3 cloves of garlic will then become a whole bowl of garlic paste.
  • It is time consuming but the results pay off.
  • Its fantastic as it keeps well and you can use it whenever required for cooking.
  • It tastes great on bbq or grilled chicken.

ROASTED GARLIC PASTA

Inspired by the classic Roman dish Cacio e Pepe this roasted garlic pasta needs only 15 minutes and five ingredients to go from pan to plate.

8 ounces spaghetti
4 tablespoons unsalted butter
1 generous tablespoon roasted garlic
Up to 1/3 cup grated Asiago cheese
Black pepper, to taste

Steps:

  • Bring a large pot of water to a boil over high heat. Add the pasta and cook according to package directions
  • While the pasta is cooking, melt the butter over low heat. Add the roasted garlic and stir it around while sort of mashing it in the butter. Turn off the heat.
  • Transfer the pasta from the boiling water to the pan with the butter using tongs. Reserve 1/2 cup or so of the cooking water.
  • Toss the pasta in the butter and garlic. Add both the starchy pasta water and the cheese a little bit at a time and continue tossing the pasta until the cheese has melted and the pasta is coated in a creamy sauce. if needed, turn the burner on low to help things along with more heat.
  • Garnish with ground black pepper, to taste.

1 whole garlic bulb
1/2 cup olive oil
1/2 cup chopped fresh parsley
1/4 cup chopped fresh oregano or 4 teaspoons dried oregano
1 teaspoon salt
1/4 teaspoon pepper
1 pound pasta, cooked and drained

Steps:

  • Separate garlic into cloves; remove papery skins. In a large skillet over low heat, saute garlic in oil for 20 minutes or until golden brown. Remove from the heat; add parsley, oregano, salt and pepper. Toss with pasta serve immediately.

whole head of garlic (outer layer removed)
olive oil
optional: sprig of thyme or rosemary

Steps:

  • If you are using a ceramic/terra cotta garlic roaster, submerge it in water for 15 minutes before placing it in the oven.
  • Cut the top 1/4" off the garlic bulb(s).
  • Place in the garlic baker or on top of a sheet of aluminum foil.
  • Drizzle with a little olive oil. Add herb sprig, if using.
  • Add the lid or wrap up with foil and place in a cold oven.
  • Bake for 50 to 60 minutes at 350F.
  • Scoop the roasted bulbs out of each shell.
  • Use immediately or store in the fridge covered in a little olive oil for up to 1 week. You can freeze it for longer storage to use in soups. But why would you freeze this goodness?

1-2 teaspoons extra-virgin olive oil

Steps:

  • Preheat oven to 400F.
  • Cut the top 1/2 inch from garlic bulb (straight across the top so you cut into just the tops of the cloves). Place garlic bulb in a ramekin, drizzle with olive oil and cover with foil.
  • Roast for 30-40 minutes or until garlic is very soft and lightly browned. Remove from oven and allow to cool.
  • Squeeze the garlic out of its skin and into a small dish. Mash with a fork and use as desired.

  • Combine the ingredients in a blender and pulse until smooth. Scrape the garlic down the sides as needed.
  • Store the garlic paste in an air-tight container in the fridge for up to 5 days, or in the freezer for up to six months. I suggest storing the garlic paste in 1 teaspoon cubes using this tiny cube silicone tray.
