HERB GARLIC BAKED BRIE
You won't believe how easy it is to make a wheel of garlic baked brie! We make thin slivers in the brie, load them with garlic and then drizzle on a thyme honey butter sauce that makes this wheel of brie totally unforgettable!

- Preheat the oven to 350F.
- Place the brie in a small, ovenproof baking dish that is just slightly bigger than the wheel of brie. Using a paring knife, make 4 slivers out of two of the garlic cloves. Pierce the brie with the same paring knife and make slivers in the brie to fit the slivers of garlic in. Tuck the garlic slivers all the way into the brie. You could do this up to one day in advance if you are prepping for a get together; it flavors the brie even more!
- When ready to bake, mince or press the remaining clove of garlic into a microwave-safe bowl, along with the thyme, olive oil, butter, honey, and cayenne. Zap in the microwave just long enough for the butter to melt, roughly 20-40 seconds. Stir to combine and pour the prepared honey butter over the brie wheel. Cover the baking dish with a piece of foil and place in the oven for the brie to melt, about 15-18 minutes for an 8-ounce wheel and 20-25 minutes for a 16-ounce wheel. Remove from the oven around press gently (without piercing the brie) using a butter knife to check if the brie has melted on the inside. If it has not softened place back in the oven for 2-3 additional minutes. When done, serve immediately with crackers or crostini.
GARLIC BAKED BRIE SPIDER
A creepy, crawly, cheesy arachnid appetizer. This spider is sure to weave webs of deliciousness with brie, garlic, herbs, prosciutto and crispy puff pastry.

Steps:
- Slice a grid on top of a brie wheel; approximately 4 slits horizontally and vertically.
- Insert thinly sliced garlic in the slots.
- To make the spider legs: roll out a sheet of puff pastry dough; then a layer of prosciutto on top; cut 1-2" strips.
- To make the spider's head: take a puff pastry dough and make it into a small ball (the size of a large meatball); slice black olives and insert them into the ball to make the eyes and fangs.
- Position the head and brie wheel on a baking sheet lined with parchment paper.
- Twist each strip of pastry dough/prosciutto and place them around the spider's body to form the legs.
- In a bowl, mix olive oil, rosemary, thyme, basil, salt and black pepper; spoon the mixture over the brie cheese wheel.
- Brush egg wash over the head and legs.
- Bake at 400°F for 15 minutes.
BAKED BRIE PASTRIES WITH ARTICHOKE AND PROSCIUTTO

- Preheat oven to 350 degrees F.
- If you have frozen puff pastry, allow it to thaw.
- Cut the sheet into 9 squares.
- Push the squares into 9 of the spaces a lightly sprayed muffin tin.
- In the food processor, whir enough artichoke hearts to make 1 cup of them when they are very finely chopped.
- In a bowl, combine the artichoke, basil, vinegar, salt, and pepper.
- Place about 3/4 to 1 teaspoon brie in the bottom of each puff pastry in the muffin tin (note: brie is much easier to cut when it is very cold).
- Add about 1 1/2 teaspoon of the artichoke mixture on top of the brie (use up all of the mixture).
- Top each with the chopped prosciutto and sprinkle with Parmesan.
- Bake at 350 degrees F for about 15 minutes, or until the puff pastry is golden.
- Let sit for about 5 minutes before serving (the brie will be *very* hot).
- Makes 9 appetizers, about 6 servings since some people will have two.

- In a small bowl, combine pecans, sugar, and salt, using your fingertips to thoroughly mix; set aside. Line a baking sheet with a nonstick baking mat or parchment paper; set aside.
- Lightly dust work surface with flour. Place puff pastry on the work surface and roll until it is about 1/8 inch thick. Using a pastry wheel or a sharp knife, cut the puff pastry into a 20-inch square.
- Transfer to prepared baking sheet and place Brie in the center of the puff pastry. Top the Brie with pecan mixture, spreading to within 1/2 inch of the edge of the cheese. Be sure to remove any sugar or nuts from the puff pastry, as they may cause holes to form during baking. Bring the corners of puff pastry up and over the cheese and tie with kitchen twine to secure.
- Transfer to refrigerator and chill for at least 30 minutes and up to overnight.
- Preheat oven to 400 degrees. In a small bowl, combine egg yolk and cream to make an egg wash. Brush the wrapped Brie evenly with the egg wash and bake until golden brown and puffed, about 20 minutes. Reduce oven temperature to 350 degrees and bake until dark golden brown, about 40 minutes more. Let cool at least 45 minutes before serving along with fruits and bread.
