Steps:
- Whisk together 2 tablespoons of olive oil, 3 cloves minced garlic, parsley, thyme, red wine, 1/2 teaspoon mustard powder, salt, and pepper until combined. Pour into a resealable plastic bag over the flat iron steaks. Squeeze out excess air, seal, and marinate for 1 hour at room temperature, or 4 hours in the refrigerator.
- Preheat an outdoor grill for medium-high heat and lightly oil grate. Stir together 2 cloves minced garlic, 1/2 teaspoon mustard powder, and 1/2 teaspoon olive oil in a small bowl and set aside.
- Remove steaks from the marinade, shake off excess, and discard remaining marinade. Cook on preheated grill to desired degree of doneness, about 4 minutes per side for medium-rare. Brush with reserved garlic mixture before serving.

Steps:
- In a large cast iron skillet over medium high heat, add olive oil and butter, potatoes, garlic, thyme, rosemary and oregano. Cook for about 3 minutes, stir and cook and additional 3 minutes or until fork tender. Remove and set on a plate.
- Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium high. Cook the steaks to desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
- Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the potatoes back to the pan and heat through and let the butter melt into the steaks.

SKILLET SEARED STEAK WITH GARLIC BUTTER
An easy, straight forward method that uses basic ingredients to cook an excellent steak! A recipe everyone in the whole family will love. Works great with Ribeye or New York strip steak, use what you prefer or what's on sale. If you don't have the thyme try rosemary or just omit it altogether you'll still have a delicious steak.

Steps:
- Let steaks rest at room temperature 30 minutes.
- Heat vegetable oil in a 12-inch cast iron skillet over medium-high heat (you want to let it get hot oil should be shimmering near smoking, preheating should take about 3 minutes if using a gas stove, longer for electric).
- Dab both sides of steak dry with paper towels then season both sides with salt and pepper.
- Place steaks in skillet and using metal tongs press down over top surface of steaks to ensure the entire bottom surface is making direct contact with skillet.
- Let cook until browned on bottom, about 3 minutes.
- Flip and continue to cook until steak is about 10 degrees away from desired doneness, approximately 3 minutes longer.
- Reduce heat to medium-low, add butter, garlic and thyme.
- Using an oven mitt grasp pan and tilt pan so butter pools to one side, spoon butter over steaks and continue to cook until steaks registers desired doneness (see notes below for temps, keep in mind they'll rise about 5 more degrees of heat), about 1 minute longer.
- Transfer to plates. Let rest 5 minutes before slicing.

Steps:
- Mix olive oil, Cabernet, mustard powder, garlic, chives, parsley, salt, and pepper in a small bowl. Put the steak inside of a large, resealable bag and pour the marinade mixture over the bag. Before sealing, press on the bag to remove as much air as possible. Place bag in the refrigerator to marinate for 2-3 hours.
- Heat a nonstick skillet on medium-high heat. Add the steak and cook for 3-4 minutes on each side. (Medium-rare is recommended for the best taste.) If you desire a higher level of doneness, leave slightly longer and check frequently. Move steaks to a plate and throw out the marinade. Allow steaks to sit for about five minutes before serving.

Steps:
- Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Preheat oven to 400 degrees. Prepare a baking sheet with foil. Set butter out to soften. Thoroughly rinse produce and pat dry. Trim ends of fennel bulb, quarter lengthwise. Use the tip of your knife to cut along the line where the tough core meets the rest of the fennel bulb on each section. Cut into 1/4" slices. Stem kale and coarsely chop. Halve tomatoes. Combine parmesan cheese and panko in small bowl and stir together. Rinse steak, pat dry, and season with a large pinch of salt and pepper. 2 Roast the Garlic Place garlic on a piece of foil, at least 6" by 6". Pour 1/4 tsp. olive oil over garlic and season with a small pinch of salt. Bring foil corners together and scrunch to form a pouch. Place pouch on prepared baking sheet and bake in oven until garlic is soft, about 12-15 minutes. Remove from oven and allow to cool down. Reserve baking sheet for future step. Smash roasted garlic with the side of a knife or just mince it. In a small bowl, stir together smashed garlic, softened butter, and a pinch of salt and pepper. Set aside. 3 Make the Fennel Gratin Place a medium oven-safe pan over medium heat and melt 1 Tbsp. butter. Add fennel and 1/4 tsp. salt and stir together. Cover and cook 3-5 minutes, until fennel begins to get tender and caramelizes slightly. Remove cover, add evaporated milk and increase heat to high. Bring to a boil then remove from heat. If your pan isn't oven-safe, transfer fennel and cream to a casserole dish prepared with cooking spray. Sprinkle top with parmesan-panko mixture and place pan on top rack of oven. Bake 7-10 minutes, until the top is golden brown. Set aside. 4 Cook the Steaks Place a medium pan over medium-high heat and add 2 tsp. olive oil. Add steaks to pan and sear until browned, about 3 minutes. Flip and repeat process. Remove steaks from pan and place on previously used baking sheet. Reserve pan for next step: no need to wipe clean. Roast steaks in oven until they reach a minimum internal temperature of 145 degrees, about 5 minutes, then remove from oven. Rest steaks at least 5 minutes. 5 Cook the Kale and Tomatoes Return pan from previous step to medium-high heat. Add kale to pan, stir, and cook 2-3 minutes. Kale will crowd the pan at first but will wilt quickly. Add tomatoes, season with a pinch of salt and pepper, and cook for an additional 3 minutes, until kale is wilted and tomatoes are slightly softened. Remove from heat. 6 Plate the Dish Place half of fennel gratin on each plate. Divide kale and tomatoes between both plates. Lean steak against kale and place half of the butter on each steak.

- Heat a cast iron pan to medium high heat and then add the oil. Put the steaks in the pan and cook for 3-4 minutes.
- After 3-4 minutes, turn the steaks and add the butter, garlic, rosemary and thyme. Mix all together with a heat resistant spatula, flip the steaks to coat both sides then return the steaks to the uncooked side and continue for another 3-4 minutes depending on desired doneness. Baste the steaks a couple of times. Medium rare is about 135° but it will continue to cook while resting. Don’t cook beyond medium or you will be disappointed.
