Quiche With Red Peppers and Spinach image

The real spring vegetable here is the spinach, lush and beautiful at this time of year. You can always get red peppers in a supermarket, and when you cook them for a while, as you do here, even the dullest will taste sweet. I make the pepper mixture first, then wilt the spinach in the same pan and line the tart shell with the savory mix. If you can, make the pepper and spinach filling a day ahead. It dries out a little if it sits overnight in the refrigerator and is less likely to dilute the custard.

2 tablespoons extra-virgin olive oil
1 medium-size onion (yellow or spring onion), chopped
2 large garlic cloves, or 1 small bulb green garlic, peeled and minced
Salt to taste
2 large red bell peppers (about 3/4 pound), seeded and cut in thin 1-inch strips
1 teaspoon chopped fresh thyme leaves
1 generous bunch spinach, stemmed, washed in 2 changes of water, and coarsely chopped
Freshly ground pepper to taste
2 egg yolks
2 whole eggs
1 (9-inch) whole wheat pâte brisée pie crust, fully baked and cooled
Freshly ground pepper
2/3 cup milk
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil over medium heat in a large, heavy skillet and add onion. Cook, stirring, until tender, about 5 minutes, and add a generous pinch of salt, the garlic, peppers and thyme. Cook, stirring often, for 5 minutes, then turn the heat to medium low and continue to cook for 5 to 10 minutes more, until peppers are very tender and sweet.
  • Turn up heat to medium-high and, a handful at a time, add spinach and stir until each handful wilts. If there is liquid remaining in the pan turn up the heat and stir while you let it cook off. Remove from heat and transfer to a bowl. If you are making filling a day ahead, refrigerate uncovered.
  • Beat together egg yolks and eggs in a medium bowl. Set tart pan on a baking sheet for easy handling. Using a pastry brush, lightly brush bottom of the crust with some of the beaten egg and place in oven for 5 minutes.
  • Add salt (I use 1/2 teaspoon), pepper, and milk to the remaining eggs and whisk together.
  • Spread pepper and spinach mixture in an even layer in the crust. Stir together cheeses and sprinkle in an even layer on top. Very slowly pour in the egg custard over the filling. If your tart pan has low edges, you may not need all of it to fill the shell, and you want to avoid the custard spilling over. Place quiche, on baking sheet, in the oven and bake for 30 to 35 minutes, until set and just beginning to color on the top. Remove from oven and allow to sit for at least 10 minutes before serving. Serve hot, warm or room temperature.

3 tablespoons olive oil
2 large red bell peppers, seeded and cut into 1/2-inch strips
2 large yellow bell peppers, seeded and cut into 1/2-inch strips
2 cloves garlic, finely minced
Salt to taste
Ground black pepper to taste
1 tablespoon ​ red wine vinegar
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
Optional: toasted​ Italian bread

Steps:

  • Gather the ingredients.
  • In a large skillet, heat the olive oil over high heat.
  • Add the pepper strips, and sauté for 4 to 5 minutes or until the peppers begin to soften.
  • Turn down the heat to low and add the garlic , salt, and pepper. Sauté for 2 more minutes, being careful the garlic doesn't brown as it will turn bitter.
  • Turn off the heat and add the vinegar, basil, and parsley. Toss to combine.
  • Transfer to a bowl and allow to cool to room temperature.
  • Toss again before serving. Taste and adjust the seasoning if needed. Serve with toasted bread if desired.

Spinach and Ricotta Stuffed Peppers image

These stuffed peppers are sweet and tender on the outside with a cheesy and creamy filling on the inside; every bite is nothing less than mouthwatering!

4 red bell peppers
2 yellow onions (diced)
4 garlic cloves (minced)
4 cups fresh baby spinach (about 14 ounces)
12 ounces ricotta cheese
2 ½ cups whole milk mozzarella (divided)
⅛ teaspoon ground nutmeg
½ teaspoon ground black pepper
½ teaspoon kosher salt

Steps:

  • Chop red bell peppers in halves and remove their seeds. Place them upside down in an oven-safe tray and bake them for 10 minutes at 375°F. Then turn them and bake them for another 5-10 minutes or until peppers are fork tender.
  • In the meantime, chop onion and garlic into small pieces. Heat olive oil in a large skillet over medium heat. Add chopped onion, salt and garlic and sauté until onion is translucent. Then add ground black pepper and freshly ground nutmeg.
  • Add fresh spinach and stir for 1 to 2 minutes until spinach is evenly cooked.
  • Remove the skillet from the stove and add the ricotta cheese and 1 ½ cups of shredded mozzarella cheese.
  • Once the red bell peppers are fork tender (they should be tender but still keeping their shape), remove them from the oven. Fill red bell peppers with the spinach and ricotta mixture and top them with the remaining shredded mozzarella cheese.
  • Place them in the oven for 8-10 minutes for the cheese to melt.
  • Serve hot.

2 cups cold water
2 teaspoons salt
3 orange bell peppers
2 teaspoons chopped fresh thyme
1/2 pound baby spinach
10 ounces campanelli (bellflower) pasta or penne
1 tablespoon extra-virgin olive oil
1 (19-oz) can white beans, rinsed and drained
1 tablespoon balsamic vinegar
1/4 cup finely grated Parmigiano-Reggiano (2/3 oz)

Steps:

  • Reserve 6 large garlic cloves. Put remaining cloves in 2 cups cold water, then simmer in a small saucepan, covered, until garlic is very soft, about 30 minutes. Reserve 1/2 cup garlic cooking liquid, then drain garlic in a sieve.
  • Purée cooked garlic with reserved cooking liquid and 1 teaspoon salt in a blender until smooth.
  • While garlic simmers, roast peppers on racks of gas burners over high heat, turning with tongs, until skins are blackened, 10 to 12 minutes (or broil peppers on a broiler pan about 5 inches from heat, turning occasionally, about 15 minutes). Transfer to a bowl and cover tightly with plastic wrap, then let stand 20 minutes. Peel peppers, discarding stems and seeds, and cut into 3/4-inch pieces.
  • Mince 2 reserved garlic cloves with thyme and remaining teaspoon salt using a large knife. Transfer along with spinach to a large serving bowl.
  • Cook pasta in a large pot of boiling salted water until al dente.
  • Make sauce while pasta is cooking:
  • Finely chop remaining 4 garlic cloves and cook in oil in a 12-inch nonstick skillet over moderate heat, stirring, until pale golden, 3 to 5 minutes. Add peppers and cook, stirring, 3 minutes. Add beans and garlic purée to skillet and bring to a simmer over moderately low heat, stirring occasionally. Season with salt and pepper.
  • Reserve 1 cup cooking water, then drain pasta. Add pasta, sauce, vinegar, and cheese to spinach and garlic in serving bowl and toss to combine. (Add some of reserved cooking water if mixture is dry.) Serve immediately.
