3 cups canned Cannelloni white beans
1/4 cup plus 2 tablespoons extra-virgin olive oil
16 large shrimp, peeled (tail left on) and deveined
4 cloves garlic, sliced
1 small serrano chile, thinly sliced or 1/2 teaspoon chili flakes
1 cup peeled, seeded and diced fresh tomato, canned or fresh
1 cup whole basil leaves
1 tablespoon lemon juice
Salt and freshly ground black pepper
2 tablespoons Italian flat-leaf parsley, chopped
Best-quality extra-virgin olive oil, for drizzling

Steps:

  • Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp.
  • Heat 1/4 cup oil in a large skillet over high heat. Add the shrimp, season with salt and cook for about 1 minute, tossing frequently. Remove the shrimp with tongs to a bowl. Add the garlic to the pan and saute until the garlic browns. Add the serrano chile or chili flakes and cook for 1 minute. Add the tomato and basil and stir briefly, then add the lemon juice. Season with salt and pepper. Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp. Remove the shrimp mixture to a plate and sprinkle with parsley.
  • Spoon the white beans on a platter or individual plates. Drizzle them with the best olive oil you have, and then top with the shrimp. Serve warm.

1 cup quartered cherry or grape tomatoes (about 12)
5 large fresh basil leaves, chopped, plus extra for garnish
Kosher salt and freshly ground black pepper
1 1/2 pounds medium-large shrimp, shelled and deveined
Extra-virgin olive oil
1 large clove garlic, minced

Steps:

  • In a medium bowl, toss the tomatoes with the basil and season with salt and pepper, to taste. Set aside while you prepare the shrimp.
  • Divide the shrimp between 2 (8 or 9-inch) pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
  • Heat 2 large skillets over medium heat, or do this in 2 batches if you only have 1 pan. Season 1 side of the shrimp with salt and pepper. Add enough oil to lightly film the bottom of the pan and turn the heat up to high. Invert the pan of shrimp so they all fall into the skillet(s) at once. Saute the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a bit more oil and 1/2 the garlic to each pan. Turn the heat off and turn the shrimp over with tongs. Cook the shrimp for 1 minute in the residual heat of the pans. Transfer the shrimp to the bowl with the tomato mixture and toss to combine. Divide the shrimp among 4 plates or a serving platter and serve hot or at room temperature.

Steps:

  • Heat 2 Tbsp. oil in a large skillet over medium; cook shallot until just softened and golden, about 2 minutes. Add tomatoes with their juices, 1/4 tsp. salt, 1/4 tsp. pepper, and 1/4 cup water. Increase heat to high, bring to a boil, and cook until sauce thickens slightly, about 5 minutes. Reduce heat to low, add beans and 1/4 cup Roasted Garlic Herb Sauce, and cook, stirring, until warmed through, 1-2 minutes. Taste and adjust salt if needed, then divide bean mixture between 2 large, shallow bowls.
  • Wipe out skillet. Heat remaining 1 Tbsp. oil in skillet over medium-high. Add shrimp and remaining 1/4 tsp. salt and 1/4 tsp. pepper. Cook, stirring often, until shrimp is cooked through and starting to take on a little color on both sides, about 3 minutes. Divide shrimp between bowls with beans; drizzle with additional sauce. 1 cup dried white beans, such as Great Northern (to yield about 3 cups cooked) or 1 29-oz. can white beans
1-1/2 tsp. kosher salt
1/4 small onion
1 3-inch sprig fresh rosemary
1/4 cup extra-virgin olive oil
3 cloves garlic, peeled and smashed
1 3-inch sprig fresh rosemary
3 anchovy fillets, rinsed and roughly chopped (optional, but great)
1/4 cup finely grated fresh Parmigiano Reggiano (about 1/2 oz.)
3/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1 tsp. finely grated lemon zest
1/4 cup fresh lemon juice
1 pint cherry or grape tomatoes, halved
1/3 cup coarsely chopped fresh flat-leaf parsley

Steps:

  • Spread the beans on a baking sheet. Rinse the beans well, put them in a large pot, cover by 3 to 4 inches of water, add the salt, onion, and rosemary, and bring to a boil. Reduce the heat to a simmer, cover and cook until the beans are very tender but not falling apart, 45 minutes to 1-1/2 hours, longer if necessary. Start checking early because beans cook at different rates; if the water level gets low, add more. When the beans are cooked, let them cool in their liquid for about 15 min. and then drain. Transfer them to a large bowl and keep them warm. (If using canned beans, rinse and drain them well.)
  • Meanwhile, in a small saucepan or skillet, combine the olive oil, garlic, and rosemary. Heat gently until the rosemary starts to sizzle lightly, remove the pan from the heat, and leave to steep for about 20 min. Discard the rosemary.
  • Take the garlic cloves from the oil (reserve the oil) and put them in a food processor, along with the anchovies, grated cheese, salt, pepper, zest, and lemon juice. Process to a fairly smooth mixture. Taste for seasoning; the dressing should be highly seasoned.
  • Toss the dressing with the warm beans, using a rubber spatula to gently fold so the beans get well coated but not smashed. Let the beans sit for a few minutes and then toss a few more times. It may seem like too much liquid at first, but the beans will gradually absorb it all. Fold in the reserved infused oil, the tomatoes, and the parsley. Taste for seasoning and serve.

2 cups grape tomatoes (12 ounces)
1 can (19 ounces) white beans, drained and rinsed
2 tablespoons brine-packed capers, rinsed
1 tablespoon minced garlic (from 4 cloves)
2 tablespoons extra-virgin olive oil, plus more for drizzling
Coarse salt
1 pound shelled large shrimp (about 15), tails left intact
3/4 cup chicken stock

Steps:

  • Heat broiler. Preheat a large, heavy ovenproof skillet (preferably cast iron) on top rack for 15 minutes. Meanwhile, toss together tomatoes, beans, capers, garlic, 1 tablespoon oil, and 1/2 teaspoon salt in a bowl. Toss shrimp with remaining tablespoon oil and 1/4 teaspoon salt in another bowl.
  • Remove skillet from oven, and add tomato mixture. Broil until tomatoes are charred and beginning to collapse, about 5 minutes. Remove from oven, and stir in stock, then shrimp. Broil, stirring halfway through, until shrimp are opaque, about 3 minutes more. Drizzle with oil.

3 (16 ounce) cans cannellini beans or 3 (16 ounce) cans great northern beans, drained and rinsed
1/2 cup chopped onion
2 -3 tablespoons red wine vinegar
2 garlic cloves, chopped
1/2 teaspoon oregano
1/4 teaspoon pepper
1/4 cup olive oil
1 lb large shrimp (tail left on)
4 garlic cloves, chopped
1/2 teaspoon red pepper flakes
1 cup tomatoes, peeled, seeded and diced
1/2 cup basil, coarsely chopped
1 1/2 tablespoons lemon juice
salt & freshly ground black pepper
2 tablespoons Italian parsley, chopped

Steps:

  • Combine all bean ingredients and heat on medium low.
  • While the beans are simmering, heat 1/4 cup oil in a large skillet over high heat.
  • Add the shrimp, season with salt and cook for about 1-3 minutes, tossing frequently until shrimp turns pink and begins to curl. Don't overcook! If you using pre-cooked shrimp, you basically are just browning them a bit.
  • Remove the shrimp to a bowl.
  • Add the garlic to the pan and saute until the garlic browns.
  • Add the pepper flakes and cook for 1 minute.
  • Add the tomato and basil and stir briefly, then add the lemon juice.
  • Season with salt and pepper.
  • Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp.
  • Spoon the white beans on a platter or individual plates.
  • Drizzle with the best olive oil you have.
  • Top with shrimp mixture.
  • Sprinkle with parsley.

¼ cup chopped fresh sage leaves
4 garlic cloves (sliced thin)
1 28-ounce can diced tomatoes, drained
1 teaspoon kosher salt
½ teaspoon fresh ground black pepper
1 teaspoon granulated sugar
1 cup low-sodium chicken broth
2 16 ounce - 32 ounces total cans cannellini beans, drained and rinsed
2 tablespoons minced fresh parsley leaves
Garnish: crispy bacon (optional)

Steps:

  • Heat olive oil in a medium skillet over medium heat.
  • Add the sage and sliced garlic. Shake the pan so the garlic doesn't stick, but don't stir it because the garlic might clump.
  • Reduce the heat to medium-low and cook 3-4 minutes or until the garlic turns very light gold and the sage darkens a bit.
  • Add the tomatoes and salt. Simmer, stirring often, until the tomatoes are shiny and their juices have evaporated; 8-10 minutes.
  • Add the pepper, sugar and chicken broth, stirring often, and bring the broth to a boil.
  • Reduce heat to low, add the beans, simmer (stirring often) until the liquid has evaporated, 18-20 minutes.
