1 (10 ounce) package frozen spinach, thawed and drained
1 yellow onion, roughly chopped
2 garlic cloves
1 teaspoon red chili pepper flakes
1 cup milk (alt milk works too!)
1 tablespoon flour
salt
1/4 cup parmesan cheese, shredded
1/4 cup flour
1 cup sesame round cracker
1/2 cup garlic world peas
1/2 cup butter

Steps:

  • Preheat oven to 350.
  • Saute garlic and onion in a hot skillet until translucent.
  • Add flour and mix until a paste begins to form, then slowly add the milk.
  • Add spinach, red pepper and salt.
  • Cook a few minutes more, until thickened.
  • Allow to cool a moment while making the crust.
  • For the Crust- Combine crackers, peas and butter in a food processor until a rough crust appears.
  • Press crust into tart from and fill with spinach mixture.
  • Bake at 350 for about 15 minutes.
  • Remove from oven and top with parmesan cheese.
  • Return to oven and allow the cheese to melt and bubble.
  • Remove after abour 5 minutes.
  • Serve immediately.

  • Cook two 10-ounce bags fresh spinach (not baby) in a large pot of boiling salted water just until wilted, 1-2 minutes. Drain, then transfer to a bowl of ice water; let cool. Drain and squeeze out excess water.

½ tsp toasted sesame seeds , crushed
½ tsp rice vinegar
½ tsp golden caster sugar
1 garlic clove , grated
225g spinach , stem ends trimmed

Steps:

  • Bring a large pot of water to the boil and fill a large bowl with cold water and a handful of ice. Meanwhile, in a medium bowl, stir together the sesame oil, soy sauce, sesame seeds, vinegar, sugar, garlic and pepper to taste, until the sugar has dissolved. Set the dressing aside.
  • Blanch the spinach in the boiling water until just wilted, then scoop straight into the cold water. Drain well and squeeze out any excess water. Gently loosen the clumps of spinach with your fingers, transfer to the bowl of sesame dressing and toss together. Cover and chill for about 1 hr to let the flavours mingle.
