4 heads garlic
8 sprigs fresh oregano
2 whole roaster chicken breasts (3 1/2 pounds each), rinsed and patted dry
2 tablespoons olive oil
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees. Slice tops from garlic heads, reserving the bottoms; arrange tops, cut sides down, in the center of an 11-by-17-inch roasting pan. Place 1 sprig of oregano over each garlic top, and arrange chicken breasts over garlic.
  • Place reserved garlic bottoms, cut sides up, next to chicken in the pan. Drizzle chicken and garlic bottoms with the olive oil. Season chicken with salt and pepper; place remaining 4 sprigs of oregano on top.
  • Roast chicken for 30 minutes; turn garlic bottoms cut sides down, and rotate the pan. Continue roasting chicken until skin is browned, juices run clear, and an instant-read thermometer inserted into thickest part of the meat registers 165 degrees, about 30 minutes more.
  • Pour pan juices into a measuring cup; skim fat from the top. Serve juices with chicken and roasted garlic.

¼ cup extra-virgin olive oil
1 medium shallot, diced
1 tablespoon lemon zest
1 lemon, juiced
2 teaspoons dried oregano

2 pounds skinless, boneless chicken breast halves
freshly ground black pepper to taste
3 cloves garlic, thinly sliced
8 lemon slices
1 bunch thyme sprigs, tied together

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine white wine, oil, shallot, lemon zest, lemon juice, oregano, thyme leaves, and 1 teaspoon kosher salt in a bowl. Pour 1/2 the sauce into a 9x12-inch baking dish.
  • Pat chicken breasts dry and place over sauce in the baking dish. Cover chicken with remaining sauce. Sprinkle with remaining 1 teaspoon salt and pepper to taste. Place garlic slices over chicken; tuck lemon slices and thyme bundle between pieces of chicken.
  • Roast in the preheated oven for 20 minutes. Turn chicken and cook until no longer pink in the centers and an instant-read thermometer inserted into the meat reads at least 165 degrees F (74 degrees C), 20 to 25 minutes more.
  • Remove chicken from the oven; cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Serve with pan juices poured over chicken and roasted lemon slices, squeezing lemon juice from slices over chicken.

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)

1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

4 pound (2kg) whole chicken, at room temperature giblets and neck removed from cavity*
1/4 cup unsalted butter, (melted)
3 tablespoons olive oil
1/4 cup white wine, ((OPTIONAL) -- use a dry wine like a Sauv blanc or Chardonnay)
1 lemon, (halved)
Salt and freshly ground pepper, (to taste)
2 tablespoons fresh chopped parsley
4 garlic cloves, (minced)
1 head of garlic roughly peeled and cut in half horizontally (through the middle crosswise)
3 fresh whole rosemary sprigs

Steps:

  • Preheat oven to 430°F | 220°C (400°F or 200°C fan forced). Line a baking tray with foil, or lightly grease a roasting pan.
  • Discard neck from inside the cavity and remove any excess fat and leftover feathers. Pat dry with paper towels.
  • Pour the olive oil, melted butter, wine (if using) and the juice of half a lemon over the chicken, under the skin and inside the cavity. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley.
  • Rub the minced garlic over the chicken, mixing all ingredients together over the chicken and under the skin.
  • Stuff the garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halve. Tie legs together with kitchen string.

1 (3-4 pound) whole chicken (giblets removed and discarded, if included)
6 cloves garlic, minced (about 2 Tbsp.)
2 Tbsp. butter, melted
salt and freshly ground black pepper

Steps:

  • Thoroughly rinse the outside and inside of the chicken. Gently pat try with paper towels.
  • Using your fingers, carefully lift up the skin on top of the chicken (near the neck) and pull up gently. With your other hand, gently separate the skin from the breast and thigh meat. Then take half of the garlic and stuff it in between the skin and meat, so that it is fairly evenly spread out. Take the remainder of the garlic and spread it all over the cavity inside the chicken.
  • Then take the butter and baste the entire outside of the chicken. Sprinkle generously with freshly ground pepper and salt.
  • (Optional: Cover and refrigerate for 12-24 hours.)
  • Adjust oven rack to lowest position and preheat to 450 degrees. Place foil loosely in large roasting pan. Flip chicken so breast side faces down, tucking the wings under (as pictured below), and set V-rack in roasting pan on top of foil. Roast chicken 25 minutes.
  • Remove roasting pan from oven. Using 2 large wads of paper towels, rotate chicken breast-side up. Baste briefly with pan juices or additional melted butter. Return to oven and continue to roast until instant-read thermometer inserted in thickest part of breast registers 135 degrees, 15 to 25 minutes.
  • Increase oven temperature to 500 degrees. Continue to roast until skin is golden brown, crisp, and instant-read thermometer inserted in thickest part of breast registers 160 degrees and 175 degrees in thickest part of thigh, 10 to 20 minutes.
  • Transfer chicken to cutting board and let rest, uncovered, for 20 minutes. Carve and serve immediately.

2-3 large boneless and skinless chicken breasts (halved horizontally to make 4)
4 tablespoons flour ((all purpose or plain))
4 tablespoons finely grated fresh Parmesan cheese
2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon Black cracked pepper
5 tablespoons olive oil
2 tablespoons butter
1 small onion (finely chopped)
1 whole head of garlic (peeled and divided into 10-12 cloves)
1 1/4 cup chicken broth ((stock))
1 1/4 cup half and half or heavy cream ((or evaporated milk))
1/2 cup finely grated fresh Parmesan cheese
2 tablespoons fresh parsley, (to serve)

Steps:

  • Season the chicken with salt, garlic powder and pepper.
  • In a shallow bowl, combine the flour, parmesan cheese. Dredge chicken in the flour mixture; shake off excess.
  • Heat 2 tablespoons of oil and 1 tablespoon butter in a large skillet over medium-high heat. Swirl pan to coat evenly.
  • Fry 2-3 chicken breasts until golden on each side, cooked through and no longer pink (about 4-5 minutes each side, depending on the thickness of your chicken). Transfer to a warm plate. Set aside.
  • Wipe pan over with a sheet of paper towel. Repeat with remaining oil, butter and chicken breasts. When cooked, transfer the chicken onto the same plate.
  • Reduce heat to medium. Sauté the onion in the remaining oil/juices in the pan until softened.
  • Smash 6 whole cloves of garlic with the blunt edge of the back of a knife
  • Add the remaining oil to the pan and heat through, mixing it through the onions. Sauté smashed garlic cloves and whole garlic cloves until fragrant, about 2-3 minutes. Add the broth to deglaze the pan. Scrape up any browned bits and let simmer and reduce to half, about 5 minutes.
  • Reduce heat to medium-low. Pour in the cream. Bring the sauce to a gentle simmer for about 2-3 minutes, combining all of the flavours together.
  • Mix in the parmesan cheese. Continue cooking gently for about 2-3 minutes until cheese melts, while stirring occasionally. Season with salt and pepper to your taste.
  • Add the chicken back into the pan and let simmer for a further 2-3 minutes to thicken the sauce to your liking. The chicken breast will soak up all of the delicious flavours.
  • Garnish with parsley and a little black cracked pepper. Serve over pasta, cauliflower mash, zucchini noodles, rice or mashed potatoes.

1 Whole Chicken (4-5lbs)
3 small whole Garlic, sliced in half
1 Tablespoon Bacon Grease, melted
2 Tablespoons Butter, melted
1 teaspoon Lemon Juice
1 Vidalia Onion, sliced
4 small Potatoes
1/2 teaspoon Salt
1/2 teaspoon Black Pepper

Steps:

  • Prepare the vegetables if using them.
  • Slice the garlic bulbs in half.
  • Place bacon grease and butter in a small bowl.
  • Microwave the butter and bacon grease, in 10 second intervals, until melted. Stir to combine.
  • Line a roasting pan with aluminum foil.
  • Separate onion slices into rings and cover the bottom of the pan with the rings.
  • Place chicken in center of pan. Pat dry with paper towels.
  • Remove any giblets that might be inside the cavity or neck of the chicken. Save for later.
  • Place the garlic halves inside the chicken.
  • Gently lift skin from meat of chicken.
  • Spoon some of the butter mixture under the skin of the chicken.
  • Tie the legs of the chicken together.
  • Tuck the wings under the body of the chicken.
  • Brush the remaining butter over the outside of the chicken.
  • Add salt.
  • Add black pepper.
  • Spread vegetables around outer edges of pan.
  • Place in pre-heated oven at 375F degrees.
  • After 45 minutes, baste the chicken with pan juices about every 15 minutes until done.
  • Roast chicken for about 90 minutes total, or until internal temp reaches 165F degrees.
  • Insert digital thermometer into thickest part of chicken thigh and breast to test for doneness.
  • Remove chicken from oven when done.
  • Let rest 15-20 minutes before carving.

4 slices sourdough bread, grilled or toasted
2 tablespoons white wine vinegar

Steps:

  • Preheat the oven to 425 degrees F. Heat the olive oil in a large ovenproof skillet over medium-high heat. Season the chicken with salt and pepper and cook, skin-side down, until browned, about 5 minutes.
  • Separate the heads of garlic into cloves but do not peel. Flip the chicken; add the garlic and rosemary to the skillet and transfer to the oven. Roast until the chicken is cooked through but still moist, 15 to 20 more minutes.
  • Place the bread on a platter and top each slice with a chicken breast. Add the vinegar to the skillet and scrape up any browned bits with a wooden spoon. Add 3 tablespoons water and simmer until the sauce thickens slightly, about 2 minutes. Pour the sauce and garlic over the chicken and bread.
  • Tip: You can squeeze the garlic out of its skin and spread on the chicken or bread.
