1 3/4 cups swanson chicken stock
2 tablespoons cornstarch
2 garlic cloves, minced
1 tablespoon packed brown sugar
1 tablespoon ketchup
2 teaspoons vinegar
1 boneless pork loin, cut into 1-inch cubes (about 1 pound)
12 medium mushrooms
1 large red onion, cut into 12 wedges
4 cherry tomatoes
4 cups hot cooked long-grain white rice

Steps:

  • Stir the stock, cornstarch, garlic, brown sugar, ketchup and vinegar in a 2-quart saucepan. Cook and stir over medium-high heat until the mixture boils and thickens. Remove the saucepan from the heat.
  • Thread alternately the pork, mushrooms and onion onto 4 skewers.
  • Lightly oil the grill rack and heat the grill to medium. Grill the kabobs for 20 minutes or until the pork is cooked through, turning and brushing often with the stock mixture. Place 1 tomato onto the end of each skewer.
  • Heat the remaining stock mixture over medium heat to a boil. Serve the stock mixture with the kabobs and rice.
  • Note: Swanson® Seasoned Chicken Broth with Roasted Garlic is no longer available. Campbell's Kitchen has modified this recipe with chicken stoc k to deliver the same great dish you enjoyed.
  • Serving Suggestion: Serve with grilled corn-on-the-cob and a tossed green salad. For dessert serve sliced watermelon.

2 cloves garlic, minced
1 tablespoon packed brown sugar
1 tablespoon ketchup
2 teaspoons vinegar
4 long bamboo skewers
1 pound boneless pork loin, cut into 1-inch cubes
12 medium mushrooms
1 large red onion, cut into 12 wedges
4 cherry tomatoes
4 cups hot, cooked rice, cooked without salt

Steps:

  • 1. In small saucepan mix cornstarch, broth, garlic, sugar, ketchup, and vinegar until smooth. Over medium heat, cook until mixture boils and thickens, stirring constantly.2. On 4 long skewers, thread pork, mushrooms, and onion alternately.3. Place kabobs on lightly oiled grill rack over medium-hot coals. Grill uncovered 20 minutes or until pork is no longer pink, turning and brushing often with broth mixture. Place one tomato on end of each skewer.4. Heat remaining broth mixture to a boil. 1/2 cup vegetable oil
1/4 cup chopped onion
3 tablespoons lemon juice
1 tablespoon minced fresh parsley
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1/8 teaspoon pepper
2 pounds boneless pork, cut into 1-inch cubes
CUCUMBER YOGURT SAUCE:
1 cup plain yogurt
1/2 cup chopped cucumber
1 tablespoon chopped onion
1 tablespoon minced fresh parsley
1 teaspoon lemon juice
1/8 teaspoon garlic salt
Pita bread

Steps:

  • In a resealable plastic bag or shallow glass container, combine the first 8 ingredients; add pork and toss to coat. Seal or cover and refrigerate overnight. , Meanwhile, combine sauce ingredients; cover and refrigerate for several hours. Drain pork and discard marinade; thread pork on skewers, leaving a small space between pieces. , Grill, uncovered, over medium heat for 8-10 minutes or until the meat is no longer pink, turning frequently. Serve in pita bread with sauce.
