GARLIC SPAGHETTI SAUCE
I adopted this recipe from Zaar some time ago and finally got round to trying it myself. It's quick and simple and full of fresh flavours. I prefer using basil but the original recipe stated parsley so I left it here for you to choose. Try adding some sliced black olives, fried or marinated mushrooms or sun blush tomatoes at the end.

Steps:
- To make spaghetti sauce, cook garlic in butter and olive oil over medium low heat just until the garlic is soft but not browned.
- Stir in the parsley or basil and cook for 2 minutes (stirring constantly) until the herbs are limp but still green.
- Pour sauce hot over cooked spaghetti, toss lightly to coat and top with parmesan cheese.
- Serve with french bread and extra Parmasan cheese at the table.
- This garlic sauce will cover 3/4-1 pound of spaghetti or other pasta.

- In a large saucepan combine crushed tomatoes, diced tomatoes, tomato sauce, minced garlic, sugar, parsley, garlic powder, salt, oregano, basil, and ground black pepper. Add capers and crushed red pepper if desired. Cover. Bring to a boil.
- Lower heat and simmer, with cover, for 45 to 60 minutes.
- As simmering time nears, in a large pot with boiling salted water cook spaghetti until al dente.
- Toss spaghetti with cooked sauce. Serve warm.

HOMEMADE GARLIC MARINARA SAUCE
Steps:
- In a large pan, melt Garlic Butter on medium high heat. Add onion and saute until translucent, about 5 minutes.
- Add crushed tomatoes, red pepper flakes, salt, oregano, pepper, and fresh basil and cook until the sauce reaches a simmer.
- Reduce heat to medium low and simmer 20 minutes.
- Discard the sprig of basil, and season with additional salt and pepper, if needed.
- Serve with pasta, bread sticks, or on pizza.

- Cut the garlic into small pieces then sautè it in a large pan with the extra virgin olive oil.
- If you have chosen peeled tomatoes (fresh or canned), crush them coarsely with a fork. In this case you will get a more rustic sauce with chunks of tomato.
- Add the tomatoes to the garlic soffritto, stir well and let it cook for about 15 minutes. Finally, add a pinch of fine salt.

- Place a stockpot over medium heat and add oil to it. Add onions to the pot Cook onions for about 10-12 minutes until they're soft and translucent.
- Now, toss thinly sliced garlic into the pot, season with salt and pepper. and cook for around 3 minutes. Make sure you do not burn the garlic. Add some basil leaves and let them wilt for about 2 minutes.
- Now, add diced San Marazano tomatoes to the pot and cook it for about 3-5 minutes. Now add the tomato paste and cook it for another 5 minutes.
- Turn the heat to medium and flambe the pot using red wine. Stir the mixture for about 5 minutes until the mixture reduces by half. Cook for another 5 minutes to mix all the flavors.

- Preheat your oven to 400°.
- Peel cloves away from the head of garlic with the skin intact. Place in the center of a a piece of heavy duty aluminum foil and drizzle with a little olive oil and fold edges to create a purse. Roast for 35-45 minutes. Once garlic cloves are cool to handle, remove skins and mash with a fork.
- Heat a large skillet over medium heat. Once hot add oil and shallots and cook until tender. About 4 to 5 minutes.
- Add in mashed roasted garlic and Italian seasoning. Cook for 1 minute before adding in the wine, pureed tomatoes, salt, pepper, sugar and pepper flakes (if using).
- Simmer for 15 to 20 minutes if using it as a pasta sauce. If using in a baked pasta dish, I only simmer for 10 minutes.
- If making in advance; allow the sauce to cool before storing in an airtight container for up to a week.
