Steps:
- In a large glass jar with a tight-fitting lid, combine the first 6 ingredients. Add the mushrooms, onion and garlic. Cover and shake gently to coat. Refrigerate for 8 hours or overnight. Drain before serving.

GARLIC MUSHROOMS PRESERVED IN OIL
Garlic mushrooms in oil are handy for salads, as an anti pasti oradding to cooking, use the oil for salads or dipping.

Steps:
- Wipe the mushrooms clean and cut any large ones into smaller pieces
- Bring the wine, vinegar, garlic, 1 sprig of thyme and salt and pepper to the boil
- Lower heat and simmer for 10 minutes
- Blanch the mushrooms in the brine in batches for approximately 1 minute then dry on kitchen paper
- Pack the mushrooms into sterilised jars and add sprig of thyme, bay leaf and the strip of dried orange peel to each jar
- Pour in the oil
- Pop on the lids and let them mature for 1-2 weeks prior to using them

STORING GARLIC IN OIL
To keep fresh garlic on hand, you can store it submerged in olive (or vegetable) oil. Another perk for storing garlic this way is that you can also use the garlic flavored oil for cooking. Just remember to replenish the oil to keep your cloves submerged.

Steps:
- Separate heads into individual cloves of garlic.
- Peel the garlic cloves.
- Cloves may be left whole, chopped or minced, whatever your preference may be.
- Place garlic cloves in a small jar with a tight fitting lid.
- Add oil to completely cover the garlic, place cover on jar and close tightly.
- Store in refrigerator for up to 3 months.
- Replenish oil as needed to keep garlic covered.

Steps:
- Heat the butter in a skillet over medium heat. Add the mushrooms and garlic; cook and stir until the mushrooms are a light golden brown, about 10 minutes. Stir in the basil.
- Reduce heat to low, and pour the wine into the skillet. Simmer until most of the wine has evaporated. Serve immediately.

- Cut the mushrooms into reasonable pieces. With small mushrooms, like a button mushroom, you need only cut them in half, and you can leave the smaller ones whole. With large chanterelles and porcini, cut them into 1/2 inch thick slices. They will shrink a lot in this process, and they will be pliable, so they can be a little larger than you'd think they ought to be.
- Salt them well. Lay down a layer of salt on a sheet tray and place the mushrooms on it. If the mushroom has a flat side, i.e., a button mushroom sliced in half, lay the flat side down against the salt. Sprinkle a heavy layer of salt over the tops of all the mushrooms.
- Let this stand at room temperature for 1 to 2 hours. You will notice a lot of water coming out of the mushrooms. This is good. Note that I have left the "sponge" on the porcini in the pictures. I no longer do this because the sponge gets really slimy and icky in this process, and tends to stick to everything. Better to remove the sponge and dry it. It makes great porcini powder.
- Put the mushrooms between paper towels and gently squeeze them a bit to remove a little more water.
