These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

8 potatoes, peeled and quartered
½ cup milk
¼ cup butter
2 cloves garlic, minced
salt to taste
1 pinch ground white pepper
2 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
  • Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.

8 medium russet potatoes (about 4 pounds)
1 head peeled garlic cloves (about 15)
Coarse salt
1 1/2 cups milk
1/2 cup butter (1 stick), cut into small pieces

Steps:

  • Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
  • Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
  • Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
  • In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.

For roasted-garlic and vegetable stock:
1 large head garlic
2 tablespoons olive oil plus additional for drizzling
1 leek, quartered and washed
1 onion, left unpeeled, quartered
2 carrots, quartered
1 parsnip, quartered
2 celery ribs, quartered
1 Turkish or 1/2 California bay leaf
1/2 teaspoon black peppercorns
1 1/2 cups dry white wine
1/3 cup soy sauce
6 cups cold water
For potatoes:
4 pounds boiling potatoes
3 tablespoons unsalted butter, cut into pieces
3 tablespoons extra-virgin olive oil
For gravy:
5 tablespoons unsalted butter
1/3 cup all-purpose flour

Steps:

  • Roast garlic and make stock:
  • Preheat oven to 400°F.
  • Separate 6 cloves from garlic (do not peel), drizzle with a little olive oil, and double-wrap tightly in foil. Roast until garlic is very soft, about 45 minutes.
  • While garlic roasts, heat oil (2 tablespoons) in a 4-to 5-quart heavy pot over medium heat until it shimmers, then cook vegetables, remaining garlic cloves (separated but not peeled), bay leaf, and peppercorns, stirring occasionally, until browned, about 8 minutes. Stir in wine and boil until most has evaporated. Add soy sauce and water and simmer, uncovered, 30 minutes.
  • Strain stock through a fine-mesh sieve into a large measuring cup. If you have more than 4 cups, boil to reduce; if less, add water.
  • Boil potatoes:
  • Unless they are very small, cut potatoes (peeled if desired) into 2-inch pieces. Generously cover with cold water in a 5-quart saucepan and add 2 teaspoons salt. Simmer, uncovered, until just tender, 12 to 15 minutes. Reserve 1/3 cup cooking liquid and stir butter and oil into it. Drain potatoes, then return to pan along with reserved liquid and coarsely mash. Season with salt and pepper and keep warm, covered.
  • Make Gravy while potatoes cook:
  • Mash roasted garlic to a purée.
  • Melt butter in a heavy medium saucepan over medium heat. Stir in flour and garlic purée and cook, stirring, 2 minutes. Slowly add stock, whisking, then simmer 3 minutes. Season with salt and pepper.

This all-in-one savory and deeply satisfying bowl is layered with a mélange of seasonal vegetables and hearty plant-based protein. Best of all, each component can be prepped separately in advance and thrown together in short order.

1½ pounds Yukon gold potatoes, peeled and diced
4 cloves garlic, minced
1 cup plain dairy-free creamer (I used So Delicious Coconut Creamer)*
1 tablespoon dairy-free buttery spread or coconut oil
½ teaspoon salt
½ pound green beans, trimmed
½ pound (about 2 - 3 medium) carrots, peeled and cut into batons
⅓ pound (about 2 medium) Portobello mushroom caps, sliced
1 medium red onion, sliced into 8 wedges
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
⅓ cup raw cashew butter
¼ cup raw coconut flakes or shreds**
1 tablespoon soy sauce or wheat-free tamari (for gluten-free)
1 tablespoon nutritional yeast
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon dried thyme
¼ teaspoon dried oregano
¼ teaspoon dried rosemary
1 cup plain dairy-free creamer (I used So Delicious Coconut Creamer)*
6 ounces baked savory tofu, sliced
½ cup frozen peas, thawed

Steps:

  • To prepare the mashed potatoes, combine all the ingredients in a medium pot and set on the stove over medium heat. The liquid should just about, but not quite, cover all the potatoes. Bring up to a simmer and stir periodically, to ensure all the potato pieces are evenly cooked. Continue cooking until fork-tender; about 15 to 20 minutes, depending on the size of your dice.
  • Roughly mash the potatoes to your desired degree of smoothness, cover to keep warm.
  • To prepare the roasted vegetables, preheat your oven to 400ºF and line a baking sheet with parchment paper or a silicone baking mat.
  • Place the vegetables on the prepared baking sheet and drizzle with the olive oil. Sprinkle with salt and pepper, and toss to coat. Arrange the vegetables in a single layer.
  • Roast the vegetables for 30 to 35 minutes, until blistered and golden brown all over.
  • To prepare the gravy, toss all of the ingredients into your blender and thoroughly puree.
  • Transfer the smooth mixture to a small saucepan and heat over medium heat until thickened. It should come just to the brink of a boil without bubbling over. Be sure to stir frequently to prevent it from scorching on the bottom. The gravy will continue to thicken as it cools, so adjust the consistency by adding water or vegetable stock if necessary.
  • To assemble the bowls, smooth a large dollop of mashed potatoes into the bottom of each bowl and arrange all the vegetables on top as desired.
  • Warm the peas and tofu either in a dry skillet or in the microwave and divide them between the bowls.
  • Drizzle the gravy all over or serve on the side.

CASHEW GRAVY (VEGETARIAN/VEGAN)

I make this to go with the Lentil and Wild Rice loaf for Thanksgiving. It goes wonderfully on mashed potatoes, yorkshire puddings, vegetables and just about anything else. The cashew and onion flavors mix beautifully together when you blend it at the end. The water amounts are estimates, but I have added descriptions of what it should look like. Also, definitely taste as you go along and add whatever suits your taste and complements the rest of your meal. This last time, I added about 1/3 c. white wine in addition to about 1 T of soy and threw in some (1 tsp fresh?) rosemary and it was amazing. Sometimes I add a whole lot of additional soy sauce and that is great too. It makes quite a bit, so you could cut in half. I freeze the left overs in small containers to use later.

1 tablespoon oil
1 onion, chopped
2 cups cashews (raw or roasted unsalted)
3 garlic cloves, crushed (or more)
2 tablespoons flour
2 tablespoons soy sauce
salt and pepper

Steps:

  • Saute onion in oil until soft and slightly brown. (you can also let onions cook longer and get browner for an even richer flavor).
  • (If you are using raw cashews, add them at this step and let them cook for several minutes to "toast" them).
  • Add garlic and cook another minute longer to slightly brown the garlic.
  • Add flour and stir it around over the heat for a minute.
  • Add 1-2 cups of water a half cup at a time and stir to blend in the flour and thicken. Add more water as it becomes thick.
  • (if you are using roasted cashews add them here).
  • Add more water (another 1-2 cups) so that the broth is soup like and the cashews are completely in the water.
  • Add soy sauce, pepper and salt (if desired) or any additional desired flavorings.
  • Cook until cashews are soft and flavors have melded. I always let this simmer away for about 30 minutes and add more water and soy or spices as needed, but remember that the flavor will change when cashews are blended. When done cooking, you'll want it to be a thin gravy consistency. The cashews will thicken it up when you blend it.
  • Turn off the heat and let it sit for a few minutes to cool down.
  • Puree in a blender or food processor in batches. You may need to add more water while blending to get the right consistency. Taste and adjust any seasoning.
  • Can be refridgerated for several days. Freeze any leftovers in small batches to enjoy at a later date.

Steps:

  • Bring the chicken broth to a boil in a large pot over high heat.
  • Meanwhile, cut the unpeeled potatoes into 1 inch cubes or chunks. Place the potatoes chunks and garlic cloves into the boiling chicken broth and boil until potatoes are tender, about 15 minutes.
  • Strain the potatoes from the broth and put the cooked potatoes into a large mixing bowl.
  • Add in the butter, cream cheese, buttermilk, and salt. Use a masher to mash the potatoes and other ingredients until everything is melted, combined, and completely mashed.

6 large baking potatoes
2 teaspoons vegetable oil
10 cloves garlic, minced
1 1/2 cups soymilk
6 tablespoons soy margarine
1/2 cup nutritional yeast (optional)
6 tablespoons margarine
1 medium onion
6 tablespoons flour (whole wheat pastry flour is good)
1 1/4 cups finely ground cashews
4 cups vegetarian chicken broth
5 tablespoons tamari (I use Braggs Liquid Aminos) or 5 tablespoons soy sauce (I use Braggs Liquid Aminos)
3 cloves crushed garlic
pepper

Steps:

  • Peel and dice the potatoes and then boil until they are soft.
  • Heat oil over medium heat in small pan.
  • Saute the garlic for about 30 seconds.
  • Add the soy milk and reduce to a simmer.
  • Keep this mixture warm until the potatoes are cooked.
  • Mash the potatoes in a large bowl.
  • Add the margarine, and then add the soy milk mixture and nutritional yeast and mix until creamy.
  • For the gravy, saute the onions in margarine until golden.
  • Stir in the flour and cashews and cook for another 3 minutes, stirring constantly.
  • Add the broth gradually, whisking constantly to form a smooth mix.
  • Add the soy sauce, garlic and pepper.
  • Bring to a boil, and then turn down heat and simmer until thick.
  • Puree in the blender until smooth.
