This flavorful lemon garlic marinade recipe is easy to whip up and only takes a few simple ingredients. It can be used on chicken, shrimp, veggies, & more!

Number Of Ingredients 6

1 cup canola oil
3 cloves fresh garlic (minced)
1 whole lemon (juice and zest)
1 tbsp Dried Oregano
1 tbsp salt
1/2 tsp pepper

Steps:

  • Mix marinade ingredients in food processor, blender, or with immersion blender for roughly 30 seconds.
  • Add water to marinade until the consistency is about that of maple syrup, about 1/4 cup.
  • Place chicken or other ingredient in glass dish or ziplock bag and pour marinade over.
  • Marinate chicken over night. Fish and shrimp should marinate for no more than 30 minutes. Pork should marinate for at least 1 hour but 3 is better.
  • Cook with your preferred method.

Easy Baked Fish with Garlic and Basil image

Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

2 lb fish fillet like halibut
Salt and pepper
1 1/2 tsp dry oregano
1 tsp ground coriander
1 tsp sweet paprika
10 garlic cloves, minced
15 basil leaves, sliced into ribbons
6 tbsp extra virgin olive oil (I used Private Reserve Greek EVOO)
Juice of 1 lemon
2 bell peppers any color, sliced (I used 1 red and 1 green bell pepper)
2 shallots, peeled and sliced

Steps:

  • Pat fish fillet dry and season with salt and pepper on both sides.
  • Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
  • Heat oven to 425 degrees F.
  • Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
  • Bake in heated oven for 15 minutes or until fish is done and flakes easily.

Remove as much air from the bag as possible, seal closed and lay on work surface. Smash garlic with the smooth side of a meat mallet until completely pulverized.   • Rinse the parsley and remove as much water as possible by shaking into the sink (hold onto the stems). Pull the leaves from the stems and place them in the food chopper or processor. Cut the lemon in half and add the juice and zest from one half into the food chopper. Save the other half of the lemon for garnish. Also add the garlic, olive oil, salt and pepper. Turn the chopper on until the parsley and garlic are finely minced and the mixture is well combined.
  • Place the fish fillets (thawed) to a bowl or shallow dish and pour the lemon-garlic-parsley mix over top. Make sure both sides are covered. Some may run off but that is okay. Spray the grill surface with non-stick spray and preheat for 5 minutes.
  • Place the fish fillets in the hot grill, close the lid and set the timer for 2 minutes. Check the fish after two minutes. If you want the fish more browned, cook for one additional minute. Carefully remove the fish from the grill (it will be delicate). Serve with additional slices of lemon if desired.
